  • I've been sick again and just struggling with pain and discomfort. Thus why I have been so quiet around here. I do have a fun weekend planned because C2E2 starts tomorrow for 3 days. It is the Chicago Comic and Entertainment Expo. Should be a lot of fun. Had a great time last year when I went. Lots of cool celebs, but I am…
  • Been doing good with bunnies this week. I have had salads for lunches. My favorite so far is romaine, arugula, a mix of sprouts/shoots, sweet potato, crispy onions, chicken, pickled beets, and goat feta. Lots of strong flavors keep it interesting. Then last night I had hibachi bowls which had zucchini, onion, and mushrooms…
  • I made chicken hibachi bowls last night (and will eat leftovers tonight). So rice, teriyaki chicken and mushrooms, and stir fried zucchini and onions. Topped with a bit of yum yum sauce (that pink sauce you get at the hibachi restaurant). A little too much sauce. I went to add a bit more and the cat hit my arm and... yea.…
  • As long as I measure everything out, I can keep it within my dinner range calorie wise. But I have to be careful because I WILL over do it on sour cream and cheese. Adding the broccoli helps because it's low calorie and filling. Plus, a baked potato is SO filling to me that I don't want to snack at night.
  • I don't like Tapioca... it's a texture things.
  • So while we are still very early in the season at the Farmer's Market, I am already loving what I can find. Spinach and Arugula. Sprouts and Shoots. Mushrooms. Potatoes and Sweet Potatoes. Beets. And so much more. It just makes me want to eat better!
  • Dinner is loaded baked potatoes (sour cream, cheese, bacon, and steamed broccoli). Other meals this week are Hibach bowls (chicken, mushroom, zucchini, onions, and rice) and Asian noodles with shrimp and veggies. Lunches will be salads.
  • The pasta came out REALLY good even though I reduced the amount of cheese in it. I was even able to have a piece of garlic toast! I just cooked it for a bit less time so the crust did not get too hard/crispy. But it was still hot, buttery, and garlicy so it hit the spot! I will be eating that for a few days for my dinners.…
  • I ended up making cheeseburgers this weekend instead of meatloaf because that is what I was craving. Plus, I had meatloaf the week before my surgery but had not done burgers in awhile. Tonight I am FINALLY going to make the pasta bake. That will cover the next few days. Then will make the fish florentine which I will serve…
  • Ugh. Nic, I am so so sorry you are dealing with that again! My mouth is still healing. I would say I am at about 80%. Still have holes in my jaw and have to be careful with what I eat. As of right now I am staying away from rice, stuff with small seeds, stuff that is crunchy or "sharp", and anything more chewy (so no steak…
  • Yes it was! Strawberry glazed. Yum!
  • Ended up pushing the baked pasta to tonight because I was mentally drained last night. Work this week has been CRAZY! So the next weeks meals include the leftover pasta, meatloaf, and fish florentine.
  • I had a donut this morning... because I could CHEW IT. I could, so I did.
  • Donut and iced red tea latte. Look... I have been on a soft food diet for 2 weeks due to having my wisdom teeth out. I can finally have more chewable foods. Thus the donut lol.
  • Made a piece of salmon along with a baked sweet potato and a side of avocado last night. Came out pretty good. Happy I am finally able to start eating some "normal" meals. Tonight I am making some baked pasta.
  • The large local Farmer's Market is opening up for the season on Saturday! I find I eat so much better during the weeks I go to the Farmer's Market. So I am super excited for the season to start!
  • If I can get up soonish, I will be making some chicken burgers (no bun). The patties will be ground chicken, feta, and spinach served with tzatziki and sliced tomatoes. Then a box of pasta roni on the side.
  • Happy belated birthday Laurie! Update on me. I have at least 1 dry socket on the lower right. This means that the blood clot that covers the wound has gone missing, so the bone and nerves are exposed. Which hurts a lot. Luckily I was able to get in yesterday and they put a medicated covering on it to help with the pain. I…
  • PAV! No tooth problems. This is not fun to deal with! Starting to chew again seems to have caused some soreness in the jaw muscles. So yay... new pain. Luckily it is more of a dull achy soreness then PAIN, but still so annoying. Gonna back up and do softer food again. Most chewing will be like scrambled eggs.
  • Day 3 from surgery. Doing pretty good. Lower jaw is still sore. Upper left teeth are still pressure and cold sensitive. That is the worst pain I currently have. Gonna try some really soft pasta a bit later. I was able to chew a little bit yesterday. Getting bored with food, but this may break my soda and fast food cravings.
  • I am doing well so far Yooly! I am just over 24 hours from removal. Surgeon said that it went about as well as he would expect. Yesterday was tough. Was woken up about 10:30 with horrible pain so took my next dose of pain meds (which was due about then anyway) and iced it before trying to fall back to sleep. Could not…
  • Local. Laughing gas and the numbing shots. I have to be able to get myself back and forth so I can't have anything stronger (no one can take me). The downside to moving to an area where I don't have a ton of family or friends. Especially since it is during the week and no way would I ask anyone to miss work for it.
  • Ugh. So sorry you are dealing with that. I actually just got a diagnosis of Post Viral Chronic Fatigue with Migraines. Based off of my assessment, it is connected to when I had Covid back in 2022 (when the symptoms started). I just kept putting off getting assessed until now because it was having SUCH an impact in my life…
  • Scheduled for the wisdom teeth removal next Thursday. I am taking off Thursday (half day), Friday, and the following Monday to make sure I have time to heal. If I am feeling good the Monday, then I may log on to clean out emails and do some small stuff, but will keep my away message up and only do as much as I feel good to…
  • Well, I have an official diagnosis from my neuro appointment yesterday... post viral chronic fatigue and migraines. Sadly, not too much can be done. I am already taking B12 for the fatigue and the migraines are not bad enough or often enough for the doc to feel like we need to add meds there. The only other therapeutic…
  • Vanilla greek yogurt, blueberries, strawberries, and honey oat granola. I know this will be even better once FRESH berries are in season. Though the ones I got from Aldi this week are not all that bad. And I know I could reduce my sugar by using plain yogurt, but I HATE plain greek yogurt.
  • Trying to come up with a meal plan for next week and failing. Nothing really sounds good. I have breakfast and lunch planned, but no dinners. Gonna read through some of this thread and see if I get inspiration. I would like 1 meat free meal and 2-3 meals in total. Making chicken spaghetti tonight and will eat that the next…
  • Bella, I am so sorry to hear about hubby's health problems. I know that has to be scary. Please keep us updated and we are here for you. I have been doing okay. Super anxious about my appointments next week and still freaking out about having the wisdom teeth taken out. I think a lot of it is because I live alone and have…
  • Ugh. So I have to get my wisdom teeth taken out asap. One is starting to cause issues for the tooth next to it and the rest are looking like they may end up doing the same before too long. NOT looking forward to this. I have my consultation next Tuesday.
