This protein fluff tastes almost like frosting

creating recipes with erythritol and fiber, counting them properly?
I have been making some chocolate chip cookie cake bars, and have Truvia and Lilly's Dark Chocolate Chips in them. I don't believe the Carb count is correct, because it doesn't take into account Erythritol. How do most of you handle this?
