Does frying really kill the nutritional value in food?
If I were to scramble eggs or saute some vegetables - not using butters or fats, or make a vegetable stir-fry, would it basically be the same as steaming where nutrition is concerned?

How to count calories in recipes..?
For example: If I were making baked eggplant, and wanted to know the calories in my recipe, would I count the egg whites that I am using to get the breadcrumbs to stick to it -- just as well as I'd count the calorie content of the breadcrumbs?
