There isn't a little icon in the editor that looks like a page with the corner turned? It's a poor choice for the option, but it's supposed to be an 'attachment' not just for images.0 -
Damn. Everyones looks so good! Mine looks awful. But it tastes good! That's all that matters, right? Well, that and it's low-carb lol...it's in the oven rn, I'll snap a pic when it's out and let everyone know what it is0

They're not true madeleines, but they're close enough!
I don't remember where I found this recipe originally, but I did modify it, so poooooo it's mine.
Almond Flour Cookies
Ingredients
1.5 Cups Almond Flour
0.5 cup truvia baking blend
0.5 cup butter, softened
2 Extra Large Eggs
1 tsp vanilla extract
0.25 tsp salt
Instructions
For Fork-Print Cookies
Preheat oven to 350º F.
In an electric mixer, process all ingredients into a soft dough.
Form dough into 1" smooth balls.
Please on a cookie sheet. Flatten with a fork and then bake for 13 minutes or until browned on the bottom.
Do not try to brown the tops.
Allow the cookies to cool before moving them.
For Thumbprint Cookies
Roll dough into 1" smooth balls and place on cookie sheet.
Press your thumb into the center of each cookie.
Bake as directed. When cook, fill depression with the filling of your choice. Ideas: SF preserves/jams, cacao ganache.
For Madeleines
Press dough into Madeleine pan. Cook as directed above.
When I made these, they weren't 'pressable' at all, so I'm not sure if I forgot half the flour or something. :P I know my oven is cooler than the digital temp but I did have to cook them a lot longer than it says here.
I used a silicone madeleine pan for the shape. Then I made a dipping chocolate with 85% dark chocolate and cacao butter double-boiled to melt, dipped, then cooled on parchment.
