Here is just a few, stuffed peppers (stuffed with spinach cheese and egg) Baked avocado eggs, poached eggs on a bed of spinach with some cheese, Chicken cacciatore on top of zucchini zoodles, Fish with grilled veggies and avocado salsa. I eat a lot of eggs, zucchini, avocado and tuna

This is dinner tonight.
Fried up Black Forest ham with a Colby jack and kerrygold sweet cheese omelette (can't remember the name right now) and a Coke Zero followed by some mint tea and tons of water!
For a snack later I have almonds and black olives.1 -

Tuna with some cheese on top of zucchini zoodles

Mmm, I want stuffed peppers now. I used the roast meatloaf recipe from genaw.com and omitted the glaze. Instead I slapped on some mayo and swiss, under the broiler to melt, and topped with sauted zucchini, mushrooms, and a bit of onion. My portion was a little big, but I was starving!!

Freshly ground chicken with sausage seasonings wrapped around farm eggs. Chicken and the egg! Scotch eggs. I sliced this hot, but I prefer them sliced cold the next day and spread with mayo.

Bacon cheeseburger salad. Bed of romaine, roma tomato, red onion, dill pickle spear diced up, 2 hamburger patties,crumbled, shredded cheddar and bacon bits topped with mayo and mustard. Loved it!5 -

I made radish "potato chips" over the weekend. Fried in lard & sprinkled with sea salt. I served these w/ leftover ribeye I sliced thin & warmed with sauted mushrooms & provolone.
