    I know I wrote them one time telling them they need to add a like button to the message boards because sometimes I agree with people's comments but don't feel like responding lol. Would be so much easier!!!

    I kinda throw my recipes together. Shirred eggs are just baked eggs, usually in cream/butter or a sauce like the creamed peas...just bake until eggs are set. I reduce heavy cream on the stove until it thickens to my liking, (reduce by half) & season w/ fresh nutmeg, white pepper, thyme (fresh & ground), salt. That's the base for my creamed peas, spinach or even better, kale. Just stir in leaves that have been wilted & drained. I also saute shallots & add to that as well. I cook for two of us & only make enough for each meal, I don't really have measurements.

    Yeah, gruyere is a type of hard swiss, awesome melted on ham too!

    I need this meal in my life, so I have a couple of quick questions! So you make your creamed peas put in the bottom of the ramekin, then just crack an egg on top and bake in the oven? Then you top with the cheese and bacon?

    Is the yolk runny? Because I love a runny yolk!

    Tonight for me: bratwurst (vegetarian) and sauerkraut, keto aligot (cheesy mash) and a great brown gravy to go with it. Will post photos later and the recipe.

    I made baked cod loin with a side of broccoli for supper last night and didn't take a picture until I was half done...not that it looked all that special...I was just proud of myself because its the very first time I've ever cooked fish. I'm not really a fish-person but it was on sale and I thought, why not? I was super impressed it turned out as yummy as it did. I put some butter in the pan and then squeezed some lemon juice (from the plastic lemon that I had in my fridge), shook some dill weed and lemon/pepper seasoning on it. It was still frozen so it took a little longer to cook than I expected, but it was so yummy nummy!! Melted a couple of teaspoons of butter to dip it in. I think I'll be making that again...will need to watch the sales.

    That's exactly what I do, but top with the bacon & cheese before baking. I make the creamed peas fresh, the sauce tends to separate when reheated. 400f for 12-14 min. Yeah, I like a runny yolk too (12 min or less)...you can also stick these under the broiler & keep an eye on them for doneness. I use jumbo eggs, so I'd say less time for smaller eggs.

    It didn't taste fishy at all and was nice and flaky. I can't do fishy tasting fish....like tuba.

    Cheeseburger with bacon, tomato, red onion and pickle on a bed of lettuce. Roasted Parmesan Broccoli with Red Pepper Flakes. (I also may or may not have carmelized the onion and cooked my burger in the bacon grease....)

    That's awesome @camtosh! I expect, one day, way down the road, to be there, and be able to, maybe, eat some higher carb foods again (I truly don't know if I will though!).

    Haven't taken photos in a while because meals have been eaten too quickly. Tonight will be steamed asparagus, Hollandaise, and then my mom and I are having grilled bacon-wrapped shrimp and my husband is having eggs Benedict.

    (Proof that, if you have picky eaters, you can adjust their meal pretty easily and still include the same basic ingredients.)

    OMG your meal sounds so yummy! I am getting so many good ideas here!
