One of my BIG weaknesses is PIZZA! I found a healthier lower calorie version
Pound out a chicken breast...cover with a couple tablespoons of pizza sauce...top with some mozzarella cheese and bake in the oven @350...usually about 1/2 hr-40 min.
You could add some other toppings if you like...

The best cheesy cauliflower "tator tots" recipe ever! They are ridiculous good.

Another absolute favorite of mine is stuffed spaghetti squash...
Oven roast a spaghetti squash...I cut the spaghetti squash in half, scrape the seeds out drizzle with olive oil...sprinkle Mrs Dash and bake...while that's cooking I brown some ground turkey when the turkey is cooked I add a cup of fresh baby spinach...and set aside... once the squash is done I scrape the squash leaving the strands in the shell of the squash...add the turkey/spinach and top with fresh diced plum tomatoes and some mozzarella...put back in the oven until the cheese melts.
YUM!!!

Easy Tilapia
1 frozen2 oz tilapia filet
2 TBSP of flour
1 TBSP olive oil
Heat olive oil in pan, coat frozen filet with flour, fry it on each side 3-4 minutes.
It comes out flaky and juicy. I use spelt flour and it comes out to 290 calories. It is a quick and easy way to cook fish.0 -
CHEESY CAULIFLOWER BREADSTICKS
Serves: 8
INGREDIENTS
4 cups of riced cauliflower (about 1 large head of cauliflower)
4 eggs
2 cups of mozzarella cheese (I used a Tex Mex blend because that's all I had)
3 tsp oregano
4 cloves garlic, minced
salt and pepper to taste
1 to 2 cups mozzarella cheese (for topping)
INSTRUCTIONS
Preheat oven to 425 F degrees. Prepare 2 pizza dishes or a large baking sheet with parchment paper.
Make sure your cauliflower is roughly chopped in florets. Add the florets to your food processor and pulse until cauliflower resembles rice.
Place the cauliflower in a microwavable container and cover with lid. Microwave for 10 minutes. Place the microwaved cauliflower in a large bowl and add the 4 eggs, 2 cups of mozzarella, oregano, garlic and salt and pepper. Mix everything together.
Separate the mixture in half and place each half onto the prepared baking sheets and shape into either a pizza crust, or a rectangular shape for the breadsticks.
Bake the crust (no topping yet) for about 25 minutes or until nice and golden. Don't be afraid the crust is not soggy at all. Once golden, sprinkle with remaining mozzarella cheese and put back in the oven for another 5 minutes or until cheese has melted.
Slice and serve.
NOTES
If you do not have a microwave, I’d recommend cooking the cauliflower first either in your oven or on the stovetop and then ricing it. Easiest would be to steam it and then ricing it.0 -
That sounds amazing Cindy!0

Ms. S - That looks really good.0

Yummy Ms_smartypants. But I can't eat shrimp or prawns anymore because of allergies
We have ostrich farms here Karen so it makes for a very cheap substitute for lamb as well and yes, it is very high in protein and tasty too because it is a game bird. My main meats are ostrich, lamb and chicken. I don't like pork much and find beef quite bland unless it steak cuts i.e. fillet, sirloin or medallions.0 -
That's great I should look into Ostrich farms here. I never gave it much thought. Is it cheaper then your chicken?0
-
Megan~ That sounds DELICIOUS!!! I LOVE shrimp!!
Karen~ I don't know if you have a place on the west coast but we have a place here called the HEALTHY BUFFALO...it's a butcher shop and they have all kinds of exotic meats...grass fed as opposed to the steroid/antibiotic stuff we get from the regular grocer. We have tried ostrich, buffalo, elk and alligator from them.0 -
I'm going to have to check that out Cindy. I'm looking to save some money too as meat is very expensive.0
-
Going to our local butcher here in town is not much more expensive than the grocery store. Buffalo is about as exotic as they get. But their meat tastes so much better. It is the only place I will buy meat.0
-
Liz my buffalo meat that I saw was too expensive for me. Just found it today. Oh well. Chicken is good.0
-
Karen~ I don't buy it all the time but it's a nice change sometimes. We can actually buy buffalo at our regular neighborhood grocery store...it's comparable to good beef prices here. But my favorite is still chicken because you can eat it every day of the week and not have it taste like you are eating the same thing! There are so many different ways to cook it!0
-
Karen it's cheaper than almost all of trh other meats but initially it was a lot more expensive.
Cindy your butchery sounds awesome.
Liz I agree that meat is so much tastier from the0 -
Alice; 2 lbs of it here in California were about 20 bucks.0
-
Yikes! That is expensive Karen.0
-
Megan, can't wait to try that shrimp recipe!0

Vegan Southwest Skillet
Prep Time: 10 Minutes Cook Time: 45 Minutes
Ingredients:
1 Cup Orzo Pasta
1 Cup Frozen Corn
1- 15 oz. Can of Black Beans (Drained and Rinsed)
2 & 1/2 Cups of Water
1/2 cup Container of Salsa (ALWAYS buy the freshest salsa you can… Usually found near the deli section or the produce aisle. The brand I use is called “Garden Fresh Gourmet” and is generally available at Kroger, Meijer, or Jewel).
1/4 Cup Cilantro (Washed & Minced)
1 Box of Morning Star Spicy Black Bean Vegetarian Burgers (use all 4 patties) (Cut into Cubes)
Directions:
Add all ingredients, except for the Cilantro and Morning Star Burgers, into a pot and bring to a boil, stirring frequently. Once ingredients come to a rapid boil, cover and reduce heat to a simmer. Allow contents to simmer about 30 minutes (This is a really great time to prepare the cilantro and the Morning Star Burgers to cut down on prep-time!). Make sure to stir the pot occasionally to prevent scorching. Once the Orzo is tender, add Cilantro and Morning Star Burgers (there should still be a little liquid visible in the pot, this is what is going to help cook the Morning Star). Cover and allow contents to cook 5 minutes more. Once the time is up, remove the lid, turn the heat off, and let stand for 5 minutes.
This is a meal my younger son made for us while he was home. It is now a family favorite.
