    Present the problem to them and ask them to help you find an answer. Let them know you will all work toward that goal until you are in that happy space. Kids have more buy in when they have helped with the solution.

    I need some recipes in which to use up leftover chicken. I keep cutting it up and freezing it for chicken salad which isn't bad but I need something else too.

    We're gluten free so many recipes are out .....

    I have a large package of chicken breasts, 2 cans of chickpeas and one of tomato puree, a bunch of kale, and a ton of spices in the cabinet (smoky paprika? ginger? cumin?). Oh, and onions and garlic. It might not turn out to be a masterpiece, but it should be good for me. Wish me luck!

    I've used this type of recipe with both raw and cooked chicken. Rice is gluten-free and makes a great side.

    Try the Betty Crocker website. You can enter ingredients you still have on hand from the refrigerator or pantry and the recipe builder will help you put together new meals.

    Also, chicken can be put in the food processor with your favorite mayo or substitute and use it to make sandwiches or salad. As a salad, add celery, raisin, and apple.

    @UncleMac do you have a food processor? Food processors can cut all those veggies down to size. Also, I was on the web site for Vitamix and Cuisinart and there are some amazing recipes. YouTube has good videos too.

    I know you have been trying to figure out how to get the boys more involved and I thought of a quesadilla maker. You don't really need the maker. A small frying pan will do. Spray the pan with your preferred non-stick spray. Then place a small tortilla in the pan, followed by Swiss cheese or Mexican Queso (cheese), a couple of tablespoons of Pico de Gallo and shrimp meat or chicken or beef and put a tortilla on top. Flip it, so it melts the cheese and lightly browns the tortilla. It can be dipped in salsa and sour cream. From start to finish, it takes about 5 minutes.

    You can make bean dip in a blender or food processor. Hummus is really easy to make in a food processor. Even if you don't own any of these machines, look at the web sites for recipe ideas.

    @E_Brault , I have a blender but I don't have a food processor. I've made hummus and quite enjoy it. I've never made quesadillas. For some reason, I thought they were baked? Anything that can be made in 5 minutes is a score!!

    I bought a Vitamix s55 for Christmas. Don't get a food processor if you don't already have one get a Vitamix. I hear the reconditioned ones are still really good and much cheaper. If you have a few extra bucks get the Vitamix 780. You can make hot soup, cold sorbet and ice cream, sauces, mousse, grind cheese, make salsa, kneed dough, make batter. YouTube it. You will be impressed and I bet the boys will chop the veggies, if all they have to do is drop them in the Vitamix. Oh, and it will make nut butter and nut milk.

    I bought the smaller one bc it is just me, but with family around - you will get your $$$ worth. And it comes with a 7 year warranty.

    I will have to look up Vitamix as I'm unfamiliar with their products.

    I used to have a cheapo food processor but I saw no significant difference between it and a blender. Most of the attachments didn't work well and it was a nuisance to clean.

    I'm reasonably terrible at accepting compliments as I fight the impulse to lapse into self-deprecating humour so I will simply blush o:) and say thank you.

    Mayhap I shall try making quesadillas tonight. My daughter and her beau are out & about. My boarder is gone for the holidays so it's just me and the son... a fine small group to experiment on... bwahahahaha!!!

    Are we still discussing Batch Cooking?

    I broke my ankle last week and I'm supposed to take it easy. We still have to eat dinner, though, so I made a big pan of chicken, which we prefer fresh, and defrosted some meat sauce. Rice went in the steamer and I made a couple of salads earlier in the week, and then again last night.

    It's not so much Batch Cooking as sort of big cooking. No one is hungry or complaining, thankfully!

    It can't be fun time in the kitchen with your foot in a cast.

    I'm still batch cooking and will likely continue to do so for the years to come. It seems like an easier way to have nutritious meals ready to go at a moment's notice.

    The boarder headed to Toronto to celebrate Christmas with his family. Speaking of family, my daughter returned from Europe along with her boyfriend (first time I've met him). They spent a week with me. The boyfriend launched today toward Edmonton to spend Christmas with his parents. My daughter will be with me until Boxing Day and then she's headed to Edmonton to meet his parents.
