    I baked potatoes in the air fryer...had a bag of shredded cabbage...so I laid down a layer of cabbage, chopped the potatoes and had some Well Your World SOS free balsamic vinegar...used that...did put a bit of Myokos vegan butter on my potato...and pretty delish.

    Lulu had some plain potato mashed...would not eat from the dish...made me feed it to her. Yay, good going Lulu.

    Might have the orange popsicle for dessert...we'll see.

    Thinking I am going to hold myself to eating from the fridge, freezer and pantry. I would like a salad but that's probably cuz I have no salad fixings in the house. Crazy, eh.

    UP, having coffee...sticking to my no shopping rule...well, at the moment I am...and if I stall long enough, for sure I will not go, because I would be there at opening if I were to go. It's 8 minutes until doors open...so I am NOT going for sure today.

    Plan today:

    coffee
    oatmeal
    fresh veggies and hummus
    tostadas
    potatoes and spinach
    1 oz dark chocolate

    PINEapple and lots of tea

    This is the plan, it may change. The coffee and oatmeal are done deals for sure.

    Good morning. peeps!

    This is a quick check-in, as I am headed to the grocery store this morning. The list of veggies I am out of has hit critical mass.

    I have my mask and gloves ready, and am about to go set things up so I am ready to change and throw the dirty clothes in the dryer as soon as I return, and then head to the shower. Grocery stores take a bit more planning than they used to!

    For now, I have just had my coffee.

    Meal plan for the day may adjust, based on what I find at the store:
    B-green smoothie, peanut butter, goji berries, grapefruit if I find some
    L-turnips greens, black beans, steamed carrots, mushroom & squash
    D-big ole salad (need to roast my beets today)

    Other fun food thing. I may bake an angel food cake today. It was my grandmother's one sweet dish, and I have been thinking of her. Her other specialties included frog legs (my grandad caught the frogs!) and hush puppies (wicked good). Yes, I have family from the South!

    Hi all, I slept way in today. There was an earth shaking thunderstorm last night which terrifies the pup and even I couldn't sleep through it so I didn't get back to sleep until the wee hours of the morning. Now I'm up, have had some ezekiel toast and an apple and going to head up to my desk. Figuring salad for lunch and a steamer bag of veggies with some "cheesy" chickpeas for dinner.

    I think I can avoid the grocery entirely this week since my salad prepping friend is still coming through for me.

    Did not make the tortillas...make a bowl of cabbage, black bean, corn, onions, corn salsa and green hatch salsa...and a side of potatoes.

    Sounds like you two have today under control...enjoy and be safe.

    Went to Sprouts...was there when it opened. Everything was fully stocked...even tofu.

    Bought
    shredded cabbage (really a cole slaw mix without dressing in a bag)...it lasts a long time.
    tub of spinach
    tub of salad greens
    cucumbers
    broccoli
    celery
    carrots
    cilantro
    lemons and limes
    apples
    ezekiel tortillas
    hummus cuz I am lazy to make it
    russet and sweet potatoes
    avocados
    bananas
    frozen hash browns...only ingredient, hash browns...saw Jane and Anne Esselstyn make these a long time ago on youtube...had to get the exact panini press as theirs. Yum.

    should last awhile...I hope.

    We are closed Easter Sunday, so I will be able to enjoy all this fresh produce for six days for sure...maybe even 7.

    I forgot tomatoes. Making burrito bowl...oh well.

    I might cancel my insta cart for next Tuesday...I liked shopping for myself...I was first one in there. Everyone was polite and respectful of staying away from each other.

    Carts were all ready wiped down. In one door out the other. Very organized.

    Today:

    avocado toast with cukes and cilantro (shared cucumber with Lulu)
    fresh veggies and hummus
    burrito bowl corn salsa dressing
    green salad and baked potatoes balsamic vinegar dressing
    apple for dessert

    Feeling normal now. My routine has always been to go to Sprouts, early morning, on my day off...this was a good thing to do...and I feel safe.

    Hi all, I admit I am getting a bit grumpy. I don't like being out of my routine AT ALL. I'm somewhat OCD, so routine is very important.

    I think after this week I'm going to go back to the office every day and when my boss needs to be there we will just stay away from each other. I will be leaving earlier and working from home more, but I need to get back to more normal days. Get to bed on time, get up early and get going like real life. I think my days in the office on weekends are going to end though. I have everything much more organized now to work from home and there's no reason not to take advantage of that and spend more time home with pup.

    Still sticking pretty much to oatmeal, salads, soup, fruit. I don't seem to have much enthusiasm for cooking.

    Glad to hear you had a successful Sprouts trip, Magic, and your meals sound yummy!

    Good morning all...just having my coffee and getting myself in a good frame of mind...slept pretty well...grateful that there is a fridge full of produce...today's menu:

    oatmeal
    veggies and hummus
    not sure...thinking a big salad
    burrito bowl...I think getting in those beans, daily, is pretty important...so very Dr. F and all!
    something...maybe nice cream

    I had an order set for Tuesday with insta cart, but because of my big haul yesterday, I cancelled. Not sure how much of anything I will have left and going really early on my days off is working out. But then again, everything is so fluid ... I guess time will tell what exactly I do.

    I understand you wanting to go in to your job to provide you with some normalcy and a routine, Mihani! Yesterday's trip to Sprouts did a world of good for my mental health.

    Hope all is well in your corner of the world, Austin.

    Good afternoon, peeps!

    Magic - Your menu looks yummy!
    I so get being happy about a fridge full of produce. My shopping trip day before yesterday was successful, so I am set for a bit. Feeding a teenager, I wish we had a second fridge or freezer, but oh, well.

    Yesterday was a good cooking day for the family - I made a dish that is mostly rice and veggies, plus some chicken for the non-vegan crowd. It is already 3/4 gone, so yay for feeding the starving horde!

    Mihani - It sounds like you are working out a way to stay safe and have some of your usual routine, which is great.

    Rest of my day to include:
    - The usual Austin menu
    - A bit of gardening (I am about to go out and pull weeds)
    - Volunteer work (Scouts)
    - Study
    - Bake the angel food cake that my son is wanting! Our chickens are laying, so it's nice to use the eggs.
    - And, hmm, maybe the boys will get a frittata and roast veggies for dinner.

    Popping in to tell you guys I just had the best snack...you probably already eat it...but it is

    toasted Ezekiel raisin toast with...Myokos butter. OH GOLLY GEE...super and you don't feel bad afterwards....I used the tiniest amount of butter...I might have to have it for dessert, later. Totally indulgent...but whatever.

    What is amazing is that I found it so delicious...and that's cuz we eat so simply. Good for us.

    Hey Magic, your dessert sounds yummy! My current indulgence is peanut butter and goji berries. Same idea in some ways -- some indulgent buttery goodness with some delicious berry sweetness! Mmmm! 😋

    Staying home this morning and may or may not run into the office this afternoon. Have a good day planned. I ran out of ezekiel bread and won't buy any more because I have been on a crazy toast kick lately and eating too much bread.

    B - oats with blueberries and a couple walnut halves
    L - big ol' salad and a clementine
    D - cheezy chickpeas and sauteed kale, an apple

    Having my most delicious cuppa coffee...lordy bee, I do enjoy that in the morning...now that it is quality stuff...all those years with a keurig...convenient but can't compare to the taste now from my French press. And truly, it is a snap to clean. I get my coffee from the Black Rifle Coffee Company...Veteran Owned and operated. Excellent.

    I chose them back in July when a Starbucks employee would not serve a police officer...I was on Facebook at the time...and BRCC was all over that story. I decided it was a great company to support. And have been with them ever since.

    Hey Mihani, I can so get the need to keep the bread out of the house. It can get addictive for me. Your menu looks delicious! Seeing the clementine listed made me smile. I almost never have those because the teenager eats them all! Truly. He'll eat an entire bag in a matter of days. "One" is not a serving for him.

    Hey Magic! I will check out the Black Rifle Coffee Company. Their website's certainly very polished and appealing! It's fun seeing a company and reading about the people behind it!

    Stopping to think about it, my coffee choice has a personal connection for me, too.

    My plain, black cup of coffee is an H-E-B brand (H-E-B Cafe Ole, has a set of Texas blends). H-E-B is our local grocery chain, and people love it. They employ people full-time on disaster planning, and they started to prep for SARS-CoV-2 / COVID in January. Texas Monthly (which is actually an excellent magazine for long, investigative articles) ran a great article on them: Inside the Story of How H-E-B Planned for the Pandemic. It may be too obnoxiously Texan, but here's a meme I loved that got posted after H-E-B inspired us all by being on the ground in Houston after Harvey. They plan for this stuff, and they had disaster relief ready and on the way before the storm hit. Amazing corporate citizens. Family-owned. Here's a great video they did. My husband pointed me at it. He loved it partly for all the images of their massive warehouses and planning. They wanted people to understand that they don't need to panic, that the food is there and will keep coming.

    Oh, I almost forgot -- my other favorite coffee is Cafe Bustelo. It's a wonderful dark coffee flavor, and I have drunk it for years. It's a budget brand at the grocery store, which is what had me try it. Cafe Bustelo has its own cool story.

    I have read some articles about H-E-B, Austin. That's wonderful. Hope your gardening and other chores were therapeutic.

    Magic, your "treat" sounds awesome to me! I don't really eat sweets so things like that or fruit are my sweet treats.

    I went to the office for a few hours and my boss and I talked about what we're going to do going forward. We're both freaking out a bit about the workflow, but he is more paranoid about COVID than I am. Guess I feel like I'm doing best I can and the fact I live alone and don't run around much outside work and home makes me feel like I should just get back to the office. I would like to go to the grocery and not come home feeling like I'm contaminated though. :p

    Got up reasonably early for an Easter Sunday. I really miss visiting friends and family now. I'm getting tired of all this. I am not a terribly social person but this is getting old. Lots of work to do today, but working from home.

    Plan for today:

    L - big ol' salad with a big variety of veggies and some chickpeas
    D - sauteed greens and baked japanese sweet potatoes

    Hang in there, Mihani...the thing that keeps me going is waking up healthy and symptom free each day. Lately, at night, when I get home from work, I feel like I did something careless and go to bed frightened I messed up. So, for me focusing on being grateful is what is getting me through.

    You guys...especially, Mihani...I have been having fun watching Bon Appetit on you tube...they are all in their own kitchens, or parent's kitchens...and making up stuff or showing kitchen utensils...it's just nice because they are all in the same boat...they are fun and their good spirits help to lift mine, actually. I don't feel so all alone.

    Lulu is great support, don't get me wrong...but seeing these peeps, especially in their kitchen...and they way it is filmed...is truly helpful in helping to keep me positive. I hope you give them a try.

    Jim Gaffigan is good...funny and truly will lift your spirits...this is an interview 7 years ago...he has 5 standups on Netflix and his newest is on Amazon Prime.

    He has been doing Dinner with the Gaffigans during the pandemic and being quarantined...I like it, but the sound is not great ... but I just really like this guy...so sharing.

    I have work to do today, too. But I think I will start with gardening for a bit.
    Your menu looks great. Japanese sweet potatoes sound delicious!

    I sympathize about the feeling contaminated! Hang in there! We are pretty used to the cleaning protocol at my house, but it still takes time and attention.

    I have nothing special on today's menu for myself:
    B - green smoothie (blueberries, spinach, broccoli, lemon juice, spices), goji berries, teaspoonful of peanut butter
    L - turnips greens; white beans; zucchini, tomato & onion; steamed turnips & butternut squash
    S - apple slices & smidge of peanut butter
    D - big salad (may roast some beets to include); spaghetti squash

    But I may go bake something here in a bit, as a treat for the teenager. I haven't told him yet, but I found bread flour in the store for the first time in weeks, so I can make him ciabatta again. Not a traditional Easter dish, but he's gone crazy for homemade ciabatta. I have made it twice. It makes 4 smallish loaves, and each time I have made it, my husband has gotten one small dainty piece. The teenager has consumed the entire rest of the batch in under 24 hours each time! Each time, husband has come back the next day looking to eat another small piece, only to find it's gone! :lol:

    Hey Magic! I hope you are staying calm and safe at work, and that Lulu is giving you lots of sweet puppy cuddles!

    UPDATE: We were posting at the same time! I just saw your note about Bon Appetit, and am enjoying the coffee video as I type this. I am a classic drip over coffee maker. I love my coffee enough to have bought a package of filters at Costco some weeks ago. Only 1 package, but it's large. I really did not want to run out! My husband does cold brew, with a French press as a backup.

    Hey Magic - I remembered this YouTube channel in my subscriptions, and wondered if you would like it, since you like the Gaffigans? Maybe not. But anyway, check out Pizza Flix if you feel like some retro film and TV fun. They post orphaned film and TV episodes that have not been picked up[ by the big outliets like Netflix and Hulu.

    Hope everyone was able to make the best of it yesterday...I was just happy to be home with my girl...and did some decluttering in the living room...gave me a push to get going on my weekend, which begins at 2 pm today. Yes!

    Going for very light eating at work today OATMEAL...and an Amy's breakfast burrito for lunch..will salad and potatoes it for after work...was tired this morning when I had to get up...but I always just push through it...once up, I'm up.

    No shopping til maybe Thursday...and then only some salad stuff. MIght need some broccoli by then. Lulu is a big fan of steamed broccoli...so always sharing. My pantry is so stocked up ...it's crazy. And it's just me. Yowzeerrs!

    Wishing everyone continued safe days...if I do go to the store, I am wearing a scarf. Always take along my wipes. Use them when picking up anything ... then toss on my way out.

    Working from home one more day. I have a lot left in my office upstairs to deal with so I'll do that and then get back into the office starting tomorrow.

    Austin, I don't think I could bake bread and not eat any of it. Bread is my kryptonite as far as portion control so it's best not to have it around. How is your garden coming along? Do you have vegetables or flowers or both?
