    Hi Magic, I shared the un-honey mustard a while back. If you can't find it I'll re-post. The ginger miso dressing is so simple and good... you don't even need a blender just a whisk.

    For about 1/2 cup...
    2 T white miso
    2 T peeled and grated fresh ginger
    2 T pure maple syrup
    1 T rice vinegar
    3 T water
    1 tsp sesame seeds

    I usually use about 1/4 tsp dried ginger rather than fresh because I'm lazy like that. I also use less water because I like it thicker. I always have a jar of toasted sesame seeds and use those. If I am planning a whole week of dressing then I make a double batch and leave the sesame seeds out just add a sprinkle to the salad when I serve it up. If you wanted it ETL compliant you could use date sugar rather than maple syrup and use the full amount of water.

    The ginger miso dressing is from the Engine 2 Seven Day Rescue Diet. I love that book. Text by Rip and recipes mostly from Jane and Ann. I recommend Rip's books to people who think vegan isn't masculine. LOL

    Spent a fair amount of time in the office today. Picked up my salad goodies and stopped at a little hardware store for a couple things. Was tempted to go to the grocery but I didn't really NEED anything so I talked myself out of it. I am not the type of person who likes running around and shopping, but even I am getting a bit tired of this. I am cautious and following guidelines, but geeze... I just want to run a few errands and not come home feeling contaminated.

    I do wonder when things will get back to "normal" and what "normal" will look like.

    So, this has probably happened to you guys...last night I thought I was feeling a sore throat. Totally scared myself. Woke up this morning, feeling fine...no sore throat. But for goodness sakes, every little thing freaks me out these days.

    I do my best at work, but some of my co workers are getting a bit too close. I am going to implement my STAND UP AND MOVE BACK protocol from now on. I try and roll my chair back...but lately, that seems to still get them to move closer. What a bunch of chumps!

    I am not eating bad...but I am eating too much. I need to clean this house. I thought, first lose the weight and then clean...but I have it backwards. This clutter really is making me fat...and stressed out.

    My weekend coming up marks the last few days of the month. I really need to get on the ball and do something constructive in here. I got my credit cards in order...soon each one will be at zero balance (I have three...Costco, Amazon, B of A). That is a great feeling ...now to move on to phase 2...dump the clutter and clean up this joint!

    Speaking of Costco...I have not been in since, oh gosh...early March I guess. Now, I am just using my card for gas. Amazon, money back and it keeps track of purchases easily. ONLY essentials now...so that one is low.

    My worst card is B of A...it's the everything else card. Since implementing the ONLY ESSENTIAL purchases rule...this purchasing cycle which began on 4/24, that card will be really low.

    I guess my point is, I have been able to rope in my spending...now it's time to do the same with my home...after all, I am so grateful I have it...now, time to make it sparkle and be proud of it...even though it looks like something out of the 80's. LOL

    It needs remodeling (I bought it in 2017)...well, I say about two years of saving, moving forward, and I will be able to remodel. That is a great goal. Let's get cooking! B)

    Today, even though I have been craving a Jimmy John's Veggie Sammy, I am going to stick with my own food and NOT spend. Keeping to my goal.

    Taking Juice, Oatmeal, Cuties, something Amy's.

    Magic, sounds like you and I have been on similar journeys. I spent several years paying off all my debt and wow did I learn what I could do without. Now I have a budget and I stick to it and even put money in savings every month! Then last year I spent weeks clearing out every drawer, cabinet and closet in my house to get rid of all the junk and clutter. Plus I got rid of a lot of furniture and knick knacks, dishes and etc. Now I've refinanced my house and have embarked on home improvements.

    I need to get out and mow this morning, then I'm going to work all weekend. I plan to go back to the office 4 days a week next week so I need to get as many projects as I can done this weekend where I'm home working without interruptions. I'll also get some laundry and cleaning done throughout the weekend.

    Plan for today...
    B - was a totally decadent 2 slices of ezekiel toast with avocado, sliced tomato, arugula, sprinkled with pepper and no salt seasoning (obviously my "no more bread" pledge lasted just about a week LOL)
    L - big ol' salad, clementine
    D - going to make a big batch of lentil soup with lots of greens thrown in

    Thanks for the inspiration, Mihani...your plan certainly is working out for you...YOU made it happen.

    I really do not understand refinancing that much...I need to look at my mortgage papers, I guess. But I know the interest rate is much lower now than what I am paying.

    HOWEVER, when I looked up what refinancing entails, it seems that it's like buying a home all over again...well, kinda with all the fees and charges. It's not free to refinance, that's for sure.

    But, even without refinancing, I am going to go forward with my plan of clearing out the clutter...get a professional cleaning company to come in and clean once that is done. I have a guy that can clean for me twice a month...but right now, it is so bad, I think I need a crew and just pay that higher price to get it really move out clean, so to speak. Hope that makes sense.

    Having a cuppa Twinings Green Tea with pomegranate, rasp and straw. YUM. Two coffees, well 16 ounces in the morning...then I have been switching to tea...with caffeine before noon...then caffeine free after noon. Seems to be working.

    I hope you guys have a good day...enjoy that toast, Mihani...I have two loaves...the sesame and the cinnamon raisin. I mean really, if that is our biggest treat then come on...that's pretty darn good.

    Late start at work (10 to 6)...going to work on the kitchen before I go in.

    I need to break down my mess into chunks...when I look at the whole, I get overwhelmed. I think when looking at a room, it's best to look at sections of the room...that just might be the ticket. Put blinders on and only work in one area at at time.

    Not sure of menu today...may use some help from Amy. Will try and get my oatmeal in at least...need to make another batch of almond milk.

    Magic, I will send you a PM with some info about refis. Mine had very little way in the costs but I don't want to post a bunch off topic. :)

    I got my salads set up and ended up making the punchy mustard dressing. Yesterday I did more housework than working, so I need to switch that around today. I do have one more load of laundry to do. Tonight I'll make a stir-fry with some of my reserved salad veggies and greens.

    Today's plan...
    B - oats with blueberries, finely chopped greens, chia seeds, a couple walnut halves, turmeric/black pepper/cinnamon (when I add a little boiling water it cooks the oats a bit and wilts the greens... I like my oats just softened some and not much liquid)
    L - big ol' salad with some chickpeas
    D - big ol' stir-fry with tempeh, brown rice

    Didn't sleep well last night... hope I have enough oomph to get through a lot of work today plus I want to get in a good session on the treadmill.

    Thanks for all the help and info, Mihani. I will definitely take the time to look at it. I loved my Realtor and know she is honest and cares about me. I will also go to her for advice.

    I made my almond milk...YAY...so oatmeal today for sure. Oatmeal and blueberries

    Big vegetable something or other when I get home from work. Lunch, hmmmmmm...something Amy's...and if I have time, will cut up veggies and take some hummus to enjoy as snacks.

    Worked from home today as our secretary was going in and I had a couple more projects I wanted to clear off my desk here.

    B - oatmeal same as yesterday
    L - big ol' salad with lots of veggies, 1/2 cup chickpeas, punchy mustard dressing, an apple
    D - not sure... had a very late lunch so probably just a little leftover stir-fry if I'm hungry later

    Back to work!

    Morning...home for my weekend. No juicing nor marketing today...just cleaning the kitchen...I have the entire day...if I pace myself, I can do it, eh?

    coffee
    oatmeal and berries
    salad and potatoes
    might try and make up a pasta sauce with loads of veggies...if I can keep my pasta portions on the low side, this would be a great way to go for me...cheap and a way to clean out the fridge.

    I miss some dark chocolate for dessert. Next shopping trip, I will pick some up. For now, I have the Orange Cream Good Pops.

    Off to finish coffee and get into that kitchen. Later, dollies.

    Break time...another load in the dishwasher...I no longer use the dry cycle...huge amount of energy...now I can put my Lock and Lock in there and not worry. Everything is washed with hot water...I put a mug full of vinegar in the top shelf to help with the rinsing...and if I have to hand dry a few things, no biggie. Everything gets a good washing.

    I cleared off a few counters in the kitchen. Let me go take another look and make a list of what still has to be done...and then I will check it off with updated posts. Hope that is not annoying...but it goes to making healthy food. I NEED THE SPACE TO COOK...a lot less help from Amy's if I have a better functioning kitchen.

    Well, I can no longer stand...I iced for awhile, but still in pain when I stand. Will try and lay low for the next three hours and see if I can finish tonight...otherwise, I will finish the kitchen tomorrow.

    I was hoping to do the dining room on Wed and then living room on Thurs. Poop!

    But I have overdone in the past and I ended up at the ER. So I had better just take it slowly.

    I do have a nice area to prep food now, however.

    Hi Magic, you made great progress! Please don't overdo it. So easy to do when you get on a roll.

    Had a long and busy day at the office. Going back in daily the rest of the week. I didn't get out as early as I hoped and had to make a grocery run after, but I'll make more effort to get out earlier the remainder of the week.

    Austin, how you doing out there?

    I was struggling a bit with some junky stuff last week like pretzels and crackers. Always my downfall. Have really turned it around the past few days.

    B - oats with the usual goodies
    L - Dr. McD hot and spicy soup
    D - big ol' salad, a few Mary's Gone Crackers, a banana

    I did not overdo, Mihani...but I did not finish. I did work on the kitchen table! Tonight, I will be able to eat dinner there. Finally!

    I will finish the kitchen today. Tomorrow, the dining room!

    Today's Plan...

    oatmeal and berries
    bean tostadas for lunch

    GF Tinkyada* pasta with load of greens wilted in (Recipe #99 Trader Joes sauce and I will add sauted celery, mushrooms, onions and carrots).

    snacks: veggies and hummus, cuties
    dessert: chocolate nice cream

    No insta cart today. Tomorrow, Sprouts Insta cart and big batch of green juice.

    Scouts has been taking up a LOT of time. πŸ‘πŸ½ Good news: boys in our troop want to work on things and stay in action. πŸ†˜ Challenging news is that it is taking more time for me to review work -- more work, and doing it via email takes more time. The teenager just came by, looked over my shoulder at the list of scouts to whom, I owe work today and said "Wow, Mom. How many are there?" I have about ten reviews to do today. Phew! Oh, and I have a parent meeting to run tonight. Hoping people do come. No word so far...

    I am about to take a break (?) from that and go to the grocery store. But I really wanted to take time to get chat wiht you guys!

    🌱 #2 Kitchen Floor - nice one! I am stealing that thought (I was just looking at my kitchen floor this morning, and saying "HMMMMM"!)
    🌱 #3 One hour house blessing/quick clean. That practice has fallen off my radar, and it really helps.
    🌱 #4 (BONUS) Counters - You remind me that it's time to clear everything off and clean under the things that are there all the time. Not sure I'll get to this today.

    By the way, I am not sure how you feel about chemical cleaners, but Fume Free Oven Cleaner (I still open the windows) works well for the top our gas range when serious intervention is needed. I try to minimize chemical cleaners, but this is a big gun I get out occasionally.

    Okay, off to work on grocery shopping!

    Hi!!! Glad to hear everyone doing so well. Seems like we're all adjusting to life under COVID. So many small businesses in trouble though, and I sure hope they are able to keep going. I work with and know a lot of small business owners and they are so stressed and anxious right now.

    Busy day at the office but I did get out a little earlier than usual as planned. Came home and made a big stir-fry veggies with loads of greens wilted in at the end (beet, bok choy and arugula), and made cous cous rather than rice because it's so easy, and kind of cute and fluffy. Breakfast and lunch were same as yesterday. By the time I ate a big bowl of the stir-fry I wasn't hungry for salad so I'll have leftover stir-fry for lunch tomorrow then salad for dinner.

    Going to go work in the home office for a couple hours then treadmill, then bed.

    Love the graphics, Austin. I think I need another Schnauzer...and I remember, I can only afford one...at least until I win the lottery.

    Well, Mihani, you got me into the mood...just my knees won't let me do so much. I just only need to steam mop the floor and then I will be done.

    Now, closets and drawers need major overhauling...but first all the visible clutter needs to be removed.

    I made a good pasta sauce...mushrooms, carrots, celery, onions, garlic...and then TJ's pasta sauce...added fresh tomatoes and then some fresh lemon juice. Pretty good. NO sugar.

    I have a Sprouts/Insta Cart order coming in the AM. Will make more green juice. Next week, orange/carrot.

    We are locked down until mid May, with some things opening up...didn't read all the details...but whatever it is, does not affect me yet. No salons opening yet. I am wondering how that is going to work. I don't mind my curls at all...it's just too long for my liking...and zero shape.

    But my saving grace and thing I am most grateful for is I am fine, knock wood. I do everything they are asking...and do my best at work. My heart goes out to all who did not make it...to those on the front lines and see so much suffering. And the assisted living places...goodness, such tragedy.

    But then I take out my ipad and play Gin Rummy...or The Twilight Zone on Netflix...and just forget all this.

    So grateful for our little group and for living WFPB. I do think more people will come to see this is the way of not the future but the NOW!

    Waiting for a delivery from Sprouts/Insta cart...making another batch of green juice (Joe's Mean Green: Kale (I am using a mix of kale, chard and spinach), cukes, celery, granny smith apples, ginger and lemon). I am using a zen-likelotussmiley.gif approach...(as opposed to thinking how much work it is to clean, chop up ...especially have to chop celery when using a masticating juicer) juice, and then clean up.

    I had been watching my juice guy, John from Discount Juicers...(best juice guy on YouTube...IMHO) and he actually just mentioned that in passing...but it hit a chord. Truly everything we do that benefits us in a good way, that may take some time, should be honored. I mean especially now...flooding my cells with all those phyto-nutrients ...heck yeah! Truly, healthy care is self care!

    I'm also approaching my cleaning (and decluttering) in the same way...everything I do in that vain is a way to maximize my Whole Food Plant Based (WFPB) lifestyle.

    Continued prayers to those on the front lines, fighting this extraordinary resilient enemy...and prayers to those who are waging their own battle against this foreign invader!

    ETA: My Sprouts order arrived at 7:17am...it's all put away. I love this...saves so much "knee standing time". Now, I will be good to go to make juice.

    Mihani - Hurray for that healthy eating and that time on the treadmill.

    I had a good ETL day yesterday, though I went over on calories. Paying more attention today. On the plus side, I got in a decent workout. Looking to do more of that.

    I am having a good ETL day so far, and plan for a good rest of the day.
    B-green smoothie, small helping of almond butter & goji berries
    L-turnip greens & garbanzo beans; steamed mushrooms & carrots; zucchini & tomato; fruit & squash dessert
    S-apple slices & Brazil nuts
    D-big salad, spaghetti squash, mango (check on calorie count before I make the salad!)

    🌱 Rest of WFPB Life Yesterday - grocery shopping done; kitchen floor (swept & a little spot cleaning, still need to mop). Some Scouts work done; more to do today!

    Today:
    🌱 #1 Finish cleaning all veggies & packages from yesterday's shopping trip
    🌱 #2 Kitchen Floor - scrub
    🌱 #3 Scouts Work (can I catch up?)
    🌱 BONUS One hour house blessing/quick clean

    Busy but quiet day at the office. Getting through some things. Next week we are going to go back to somewhat normal at the office and get everyone working more consistently.

    Lawn really needs to be mowed but it has been so wet and rained more today. Hopefully it will be good on Saturday to get that done.

    The usual ETL kind of day...

    L - leftover cous cous and stir-fry, cantaloupe, a few pistachios
