    Office today. Our administrative assistant came in too and the two of us cranked out a TON of work and got it out the door. Working separately the flow of work just isn't there, so even though we're getting stuff done separately it wasn't moving. It felt so good to see all that stuff going out in the mail and off our desks. This has really reinforced how important it is to have a team!

    Magic, tostada sounds great. Have you seen the baked ones with no oil? I buy those and use them for tostadas and also break up for tortilla chips. Not much flavor to them but with some salsa or hummus who cares? It's the crunch that matters.

    I am working from home tomorrow then back to office on Thursday and Friday.

    L - totally forgot!
    D - big ol' salad, an apple

    Oh, and I mowed the lawn so I got in lots of steps when I got home.

    Glad you had a productive day at work, Mihani!

    Ezekiel Corn Tortillas...no oil...heated in the air fryer. Perfect for tostadas or cut into triangles and use for chips...also great for taco salad.

    One of these days I will make my own corn tortillas...simple, no fat...Masa Harina and water...maybe add some lime...I just have to do it.

    Good food day...loved my salad with baked potato added in...stayed home all day...working on budget to get to zero credit card debt. Very exciting.

    Nothing else going on...have a peaceful evening all.

    Hey Mihani! I forgot to say that the gardening right no is lawn stuff - we have a slection of native plants and had let things get overgrown. Once I catch up with that, I want to plant veggies.

    Oh, and your menu reminds me that I need more clmentines the next time I shop!

    Magic, I have made corn tortillas once. I did not get them thin enough, so that's a thing to pay attention to.
    You might also like pupusas -- some ingredients. These I have made successfully. I skipped the cheese, but you could maybe do a substitute.

    UP...having coffee...debating whether to order from insta cart or go to the store. Better make up my mind soon.

    I put an order in for insta cart...mostly everything will come bagged...except the cilantro. Arriving today, within five hours, from Sprouts.

    Austin, I have a tortilla press...so I am hoping it will make my tortillas thin enough. It's one of those metal ones that overlap and squish down a ball of masa.

    G'day, mates! Already had my two cups (really...16oz) of coffee...now on to TEA...green tea with pomegranate and raspberry, I think it is...yum!


    Insta Cart Lady is shopping for me at Sprouts...you get to see her as she shops...well, not pictures, but your list and what she is actually finding...so far, no substitutes...yes!

    I had ten items and so far she has NINE of exactly what I ordered. This has never happened before. Wow. Impressed. Just checked again...ten out of ten! Score! Ordered earlier today and got a today delivery...any time which is soon, I guess. Super Duper Wonderful!


    Menu today is practically like yesterday...oatmeal and berries for breakfast...salad (with chick peas) and baked potato for lunch (my potato loves my dressing of seasoned rice vinegar)....veggies and hummus for snack...and dinner of refried bean tostadas...cuties for dessert. So excited. Probably will have it again tomorrow.

    Busy watching my fellow plant based youtubers...they really keep me connected...putting out lots of extra content which is so appreciated. Everyone is in the same boat...and they are coming up with creative pantry recipes.

    Lulu is totally the best medicine for keeping sane...her food and treats are totally stocked up...in fact, it was her orders that I place first. Gotta take care of my girl.

    Alrighty then, time to get up and get busy. Have yourselves a great day...stay safe, stay home and stay connected!

    Had a positive day...did not do much in the way of cleaning around here...just focused on food and my budget...with the uncertainty of everything these days, I am going to truly watch my spending and make "saving" a priority.

    Time to crawl into bed, turn on the TV and play gin rummy on my ipad. Kinda fun.

    Coffee is so good this morning...thinking I am going to make some kind of pasta dish for dinner that I can take to work for the next two days.

    Penne pasta with sauce, spinach, broccoli, carrots...really the pasta and sauce is just another vehicle to get in more veggies.

    Hi all, office today. Went okay but I have a massive headache. Still a few things to wrap up tonight from the home office. I am going back in just for a couple hours tomorrow because I have to take care of some things, but then coming home to work. My boss really likes being there, and I really like being home, so I'm letting him take more office days now. Main thing is to maintain my schedule even when I'm home so I don't get all floopy.

    Work on the house has resumed. I am a little nervous having my contractor in here with the risk of Covid, but it felt good to get a few more things done and hopefully he'll finish the upstairs next week so at least I have one area of the house completely done.

    B - oats with all the usual goodies
    L - totally forgot
    D - big ol' salad

    I better get back to work.

    Glad the logistics of who goes in and who stays home is working out, Mihani.

    good luck with the renovation...stay vigilant with different people in your home...I'm sure you will.

    Really this weekend was getting my finances in order...so close to zero credit card debt...will be there May 5th for sure. This has been a great lift for my spirits, actually. Like I said, with so much uncertainty in the world, I am now being so careful with my money and making sure I do not spend recklessly.

    Food is not perfectly WFPB...some processed stuff...but that's ok...not stressing...still vegan, just a couple of processed items showing up.

    My vitamix died. NOT buying another one. Out of warranty. I do have a back up blender...I think it will be able to make almond milk...did not try once the vitamix began to smoke. I dumped it all out...was making a quart of almond milk. I wasn't sure if any bits of metal had leaked in.

    Anyway, had avocado toast for breakfast...small salad and one tostada for lunch...Amy's chili and Sprouts organic french fries for dinner. There is my processed selections. Oh well.

    Sleep well everyone. Just grateful that I am healthy. I will be so careful tomorrow at work...not blowing it now.

    Alexa had to wake me up...DO YOU BELIEVE IN MAGIC...I think it was the Loving Spoonful...you are way to young to know. But she has a different song for my wake up calls for my early report time work days.

    Not at all in the mood to make stuff...using frozen Amy's to get me through today for sure.

    I do have some clementines for freshness...yay. Have a good one everybuddy!

    On a related note (haha!), did you come across the new sonmgs that the Monkees released a couple of years back? Your Lovin' Spoonful song made me think of them. I particularly liked You Bring the Summer, and it's in the same kind of mood. (The song was written by a guy named Andy Partridge (here's a link to another song he did that i lovelovelove -- Senses Working Overtime; it's another joyful song, so sharing in case it fits your mood). And oh, here's one more -- you might like a band my teenager introduced me to -- Peach Pit (try their song Seventeen). Okay, sorry, I will stop now. I love music. :blush:

    Yay for those clementines and some extra vitamin C. I picked up a bag of them on my grocery store trip, and the teenager has eaten a bunch already.

    Okay, taking a listen to the Tortilla Chips video now. Maybe I will try tortillas again. :smile: I'll have to sell the teenager on willingess to try them.
    I have made my own baked tortilla chips for years. It's just the leap to making my own tortillas...

    Last night's family dinner (for the guys) was a frittata (from our backyard chicken eggs) and baked russet potatoes (using an America's Test Kitchen method for fluffy baked potatoes -- not a Fuhrman dish, but a nice and reasonably healthy thing for the guys).

    I am not sure what you are doing for movement these days, if anything works, but Gold's Gym has a bunch of nice stuff posted, currently all available for free. Magic, some of these look knee-friendly (see the
    Fit Over 50 category).

    I am continuing to eat my usually Fuhrman-friendly diet. I have been going a little heavier on the fruit of late but not wildly so, so I guess that's an acceptable level of comfort fooding.

    Hello... was in the office far longer than I wanted to be, but got through some stuff and I am not going back until Tuesday so yay! I plan to spend the next 3 days putting the last two bedrooms back together from painting so my contractor can get back in there and finish the rest of the work. This will include digging out the treadmill from stuff piled up during painting and I can finally get back on it. Plus lots of laundry to catch up. And of course work work.

    Magic, that is awesome you are nearly out of debt! I paid all my debt off (other than the mortgage) a little over a year ago. It feels SO GOOD!!! It took a long time to get there, and required a lot of discipline, so I get it. Oh, and Lovin' Spoonful is very familiar to me. I'm a little younger than you, but I have always listened to a variety of music. I like everything from classic rock to alternative rock to opera, jazz, blues, the big band era. Sorry about the dearly departed vitamix.

    Love your positive and energetic attitude, Austin! I will have to check out the Gold's Gym thing. I have Beachbody on Demand... signed up on a whim when they had an introductory offer last fall, then promptly forgot about it after a couple weeks. LOL I will have to check into it again. They do have some yoga type things and workouts geared for an older gal with joint problems like me. The introductory offer included one month of shakeology, which I hated and cancelled after first batch. I prefer the Evolve brand ready-to-drink or the Garden of Life powder, and they aren't nearly as expensive. I don't use the vegan shakes often, but good to have around in a pinch.

    I was able to get a window with Amazon Prime Now, so I'm waiting for delivery now. Needed dog food especially, but also ordered some ingredients for glowing spiced lentil soup to make this weekend. Hope it arrives soon. My headache is still really bad and I want to take a nap.

    D - Sauteed greens and cheezy chickpeas if I feel like cooking when I get up from my nap. Otherwise it will probably be a Dr. McD soup, a couple wasa crackers, and a clementine.

    I so feel this! I DIY my hair color. Hair stylist is better, but on our budget, I pick and choose. My roots would be spectacular, but I did finally get out the box last week and catch up. I had let them slide for extra long. I am proud to say that I had thought of this when doing initial quarantine shopping, so I did at least have a box of the right stuff in the house.
    I did see, on my last grocery trip, that our local grocery chain knows we are in this stage of lockdown shopping, and they had done some extra stocking and displays on that aisle! Seriously! :lol::lol::lol:

    Okay, off to finish making coffee!

    Austin, I used to color my hair myself but she does such a better job and it seems to last longer. My hair is thick and pretty wavy/curly so I can get away with only coloring it a few times a year and just getting a trim in between. If she doesn't open back up soon I may have to go back to DIY myself though. Eek! I have some friends who have been doing crazy pink and purple stuff from sheer boredom. I don't think I'd go there myself. LOL

    Magic, hope things are going okay at work!

    Headache cleared up, yay! So I am doing a major laundry catch up today and did some cleaning. Have a guy coming tomorrow to haul a bunch of stuff to the dumpster the contractor left here. I did all that clearing out last year but there is still a lot that I should get rid of now that I'm taking a second look. I hurt my knee last week and I can't see carrying things downstairs myself right now. I want all the "stuff" in my house to be useful or meaningful. I uncovered the treadmill and it's all good to go now!

    Morning all...a quick hello...everything is good at work...hours reduced but that's ok...still working and getting most of my hours, so no complaints. Everyone is still being respectful about keeping their distance.

    Using Amy's for a couple meals today...but tonight, I get off at six and pretty sure a big salad with baked potato will be on the menu.

    Pulled out my back up blender...just put in almonds to soak...will try tonight. Missing my oatmeal.

    Thought my ZERO debt CC date was May 5th...have to revise to May 10th. Huge celebration in this house, that's for sure.

    Also, brought on a very young coworker, who likes to spend, as part of a challenge. NO spending on non essential items. She has CC debt and I am letting her know, she is too young...and it is not fun. I am about 45 years older than her...kinda nice to do something smart for someone so young. She's excited and totally on board.

    That's it from here...so happy to hear you guys are doing so well. Stay healthy...and safe...and I shall talk to you all later. people_squirt.gif

    I spent all weekend working on the house. The BIG project was cleaning out the garage. Looks so much better out there. I was really sore and tired yesterday, but I seem to be okay this morning other than some stiff muscles which should loosen up through the day.

    Going to hit my desk early and work all day. Will definitely be hitting the treadmill today.

    Plan for the day...
    B - oats with berries, a few walnuts, chia seeds
    L - big ol' salad
    D - lentil soup, fruit

    That reminds me, I need to make salad dressing this morning before I head up to the home office.

    I so feel you hair frustration! I kinda like the idea of crayon color hair until I contemplate doing it myself, and then I think no. Partly because I have dark hair with red undertones, and past experience suggests I wold have to bleach it twice to get to where I could then color it peacock blue or some such. My hair would be the texture of straw! So sticking with my natural color, even if all the cool kids are going clue and purple!

    Grocery shopping went well yesterday. I am so glad to have fresh foods and frozen greens in the house again. Today's plan:
    B-(done) green smoothie (blueberries, spinach, broccoli; almond butter, goji berries
    L-garbanzo beans & turnip greens; steamed mushrooms & carrots; steamed zucchini with onions and tomatoes
    S-almond butter & apple slices
    D-big salad with roasted beets

    So I am keeping on keeping on!

    Morning all...LOVE THE CORGIS, Austin! Congrats Mihani, cleaning out the garage.

    I put my instacart/Sprouts order in yesterday...it arrive just before 8 am today...with EVERYTHING...so grateful to my shopper...today, I am making GREEN JUICE. I need to get back to juicing...one to two glasses a day.

    NEVER was a juice fast kinda gal...have to eat. But all that concentrated goodness does seem to keep me more focused on WHOLE foods and LESS AMY's. (hehehe). I have just been so lazy. One of my coworkers noticed no green juice lately...so I am getting off my lazy butt and getting to it.

    Also, loads of stuff to make salads with my baked potatoes...and today I am making almond milk in my stand-by blender. It's a really good one...even vacuum blends...kinda interesting, which keeps whatever you are blending fresher for longer...or so they say.

    I also have a gizmo that vacuum seals my mason jars that I fill with fresh green juice. THAT really does work. My juice stays fresh at least 7 days. No change of color or flavor.

    My hair is naturally curly...and I never ever have it this long...it looks crazy. But, what are you gonna do...soon this will all be in our rear view mirror and we will be to our NEW NORM...I suspect there will be loads of changes, some just might be great at keeping us from getting the flu...(whatever the strain is the current year) as much. I hope so.

    DONE...made four quarts of green juice: cukes, celery, spinach/kale/chard=16 ounce container of organic super greens, granny smith apples, lemons, fresh ginger.

    Did my prep work perfectly so there were no "strings" of the celery winding around the gizmo that masticates the produce...same with the ginger...sliced up.

    Turned out great. Will probably have 32 oz today...but then just 16 ounces...takes a toll on my knees from so much standing for so long.

    Really happy I did it.

    Time to chill for a bit. Later, mates.

    Slept better...had the best, not so many cravings day in a long time. It's the JUICE! Homemade Green Juice. I have enough for one 16 ouncer for the next six days...thinking I would love to have 32 ounces...might make my own Sprouts run tomorrow.

    Trader Joe's has my favorite organic, SMALL, Granny Smith apples...bagged so there are no stickers...and no cutting to get into the feed chute. I might make a TJ run this morning. They open 8-9 for seniors ...hmmmmmm... what to do what to do. But two stores...maybe pushing my luck. Probably not going to TJs.

    Decided to try Trader Joe's. There was a little line...only had to stand for 10 minutes, waiting to open. They marked off six feet with blue tape. Lady at the door had a hand sanitizer to squirt on our hands.

    The idea was to not let a lot of peeps in...and I was in the over sixty group. I was in and out and in my car, pulling out of the parking lot at 8:17. (They opened at 8.) Also, they had plexi glass at the cash registers to protect customer and cashier...you wait back of this line til they finish ringing up and bagging your order. Very efficient. I felt really confident there that every precaution was taken for everyone's safety.

    I bought four bags of the apples, lemons, mushrooms, red onion, scallions, pasta sauce that is vegan and a great price and no sugar added, hummus, pico de gallo, bananas, and some lotion to put on my desk at work. Everyone has hands that are begging for something soothing. I think that's it.

    I have plenty of other produce at home already.

    Also got gas...1.89 a gallon for reg.

    Came home, took Lulu for a walk ... we are supposed to get up into the 90s today. I know that sounds hot and it is...but it is not that hot yet in my house...fans keep it cool. It isn't til really June or late May that the house actually begins to heat up. It's weird. I think it's because of where the sun is in the sky. Anyway, I am fine with NOT turning on the AC so early. Costs a lot and I hate so much AC all the time.

    I am beginning to feel like my old self just from drinking this juice. It was so much a part of me for so long and I have been away from it for A LONG TIME.

    Glad I finally pulled the trigger and got it made.

    Magic, when I was younger everyone had that perfect feathered hair, and mine was so curly it would NOT do that and I was always so upset over that. By the time I got into my 20's I was quite happy I had curly hair while everyone else was paying for perms. :p Your plans for today sound perfect!

    Glad the grocery shopping went well, Austin. Love the corgis! I have beets for my salads this week and love them so much. I don't bother roasting or steaming them usually. I remember the first time someone said eat 'em raw and I was like oh really? Funny how some veggies you think have to be cooked though. I just recently had a friend say what? You eat zucchini raw?

    Pot of lentil soup on the stove almost ready to eat. I have had a rough couple days at work and I am staying home tomorrow to get through more of what I have here. It just seems like everything is in limbo and not going well. We are making plans for next month to get the office a bit more back to normal, but we can't have people in and out as much so it's still up in the air.

    I was at the office this morning and didn't eat at all today so my plan for rest of day is a big bowl of lentil soup, some raw veggies as an appetizer, and a slice of Ezekiel toast to dunk in my soup. Then I need to get back to my desk and get some work done. I'll also eat an apple or a couple clementines.

    Mihani, your note about your hair made me smile. I have indeed met people who wished they had straight hair. And yet, when I was younger I wanted it to be different. I tried having a perm for a while, and disliked that pretty intensely. Now, I just think my hair... is what it is.

    I will have to try some beets in my salad raw! Sounds like a great thing to try. As long as the chunks are big, I'll bet that would be tasty. I have been enjoying jicama lately, and I love that raw. Oh, and a big yes to zucchini -- it's great raw or cooked!

    Hurray to your post of soup. It sounds so healthy!

    Magic, your Trader Joe's sounds like they are doing all the good safety things I am seeing at my market.

    We expect it to get to 90 today, but right now it is cool and just over 60, and I have opened windows! I love a spring morning!

    Off to do some family meal planning. Maybe I can do a quarantine bake for the teenager!

    For myself, it will be a nice, plant-based menu plus some movement.

    Morning you two...loving your posts and seems we are all doing our best with pretty good attitudes.

    If you need laughs, I can't recommend Jim Gaffigan more. He is the best...he has several specials stand ups on Netflix and also two, I think, on Prime.

    He also has a live youtube every evening at 6pm EDT from his home in NYC with his family...dinner with the Gaffigans. They raise money for workers...can't remember the name...but they are just a wonderful family.

    No stores today...just home, with my girl...and loads of plant based goodness.

    LOVE the Corgi ...so sweet.

    Not sure what else...probably cuties and I don't know...hmmm...better figure that out fast.

    Hi all, worked from home yesterday and got a lot done. I am going to the office just for a little while this morning then home to work here more. I need to stop and pick up my salad veggies from my prepping friend.

    Magic, agreed it seems like everyone is settling into the new normal a bit now. Last week I was rather grumpy but now I seem to have adjusted. Your post reminds me, I gave my juicer to my brother and he is enjoying it a lot, so I'm glad that it found a good home.

    Austin, I have been using my treadmill sporadically since it was uncovered after the reno work. I think since I am going to work a bit later now that I should really try to do morning treadmill. Sometimes it is still hard to get motivated after a long day at work, even though I know that I'd feel better if I did it. Oh, and I did the perm thing too in my early 20's. I didn't like it either!

    Plan for today...
    B - probably nothing not hungry this morning
    L - oatmeal and fruit
    D - baked tofu, steamed green beans, salad

    Think I'll make un-honey mustard dressing for this week. Last week I had the ginger miso from Engine 2. That stuff is so good!

    My other food selection is baked sweet potatoes...just popped em in air fryer...will mash and season and most likely eat cold.
