Food inspiration, or what's for supper?

Alexandra - I was thinking this thought the other day - how important it is not to coast for too long in my "comfort zone" - because though it is comfortable it also kind of implies a degree of life stagnation.
Sergeant Pickles' arrival sounds just a perfect nudge out of the incredibly organized efficient life you have created. It will be stressful, because as you said it is a change, but what a good reason to experience stress!2 -
Shrimp tacos in low carb wrapper. Vinaigrette coleslaw. And a little bit of Mac n cheese cause it’s so good. There was also some pineapple mango salsa involved.
Not sure of supper because lunch was filling and it’s 🔥🔥🔥2 -
Dinner was salad...with a boiled egg, ventricina, Serrano ham and shaved Parmesan.

Looks very very yummy--for a salad!
My paw is "poorly" for values of poorly. Will not be goodie-goodies till they make soup out of it and make it bionic! I hear that they don't actually make soup... but who knows what will be happening by then: reduce, reuse, recycle!
Basically lack of ligaments and fluids and accumulations make the situation fairly predictable though weight reduction has been incredibly helpful! And it was truly the last 10lbs that made the biggest difference to the daily clicking and locking and grinding.
Puppy is one good paw for a while. Front right was being held in the air and piteous whining ensued when paw handling was attempted. She became operatively three legged within 24 hours of non activity. Tried to take a header down the stairs to chase a squirrel while three legged. 24 hours later she is actually no longer SUPER visibly limping. Went out on leash for about 20 minutes. Agreed, reluctantly, to not try and climb a tree, attack the bushes, or cross the road to hassle dogs on the other side. When she started showing signs of limping we came back. probably another 24-48 hours of highly restricted activity. Plus very very hot for us.4 -
Not a lot of time today, so I made a quick potato salad to accompany my regular 10 bunny one.
Last time some people didn't like the anchovies, so I went with spicy sardines in olive oil this time. They go extremely well with the potato salad!

I went to our only (in a city of 1 million plus!!) Mediterranean market yesterday in search of rusk and anchovies with oregano. No luck. I can get various canned sardines however. Outside of exorbitant Amazon prices I’ll be checking out recipes.
Dante’s meals are so lovely and inspired. Actually appetizing for especially those of us in tropical climates. Simple colorful and well seasoned. Share some recipes please!4 -
I'm looking at the potato salad. Spicy sardines is an idea!!!2

Dinner was homemade gnocchi with a tomato and basil sauce, and plenty of freshly grated parmesan. 500 calories of yumminess.3

2 sliced Zuchinni, spaghetti sauce, peppers, onion, garlic, Parmesan, and mozzarella…..plus a salad with home made lemon poppyseed dressing!4

All planning, rational thinking out the window today. Hit and run eating, stress nibbling - way over deficit. Hoping to regain control tomorrow.3

Sure, it is a very easy/lazy one.
1. Get some potatoes and boil them whole in their skin in water with some white vinegar.
2. After about half an hour (I tend to go for 35') remove them and let them cool a little. While still hot (but not finger scorching), peel them and cut them to medium pieces.
3. Add extra virgin olive oil, fresh lemon juice and white vinegar in the amounts you want, and mix lightly. The potatoes will literally suck in the liquids, and get fortified with taste.
4. Then on top chop a couple of spring onions, some fresh parsley and throw in some capers for good measure.
5. Season with salt and pepper, and -optionally- add a little curcumin and bukovo. Mix thoroughly but make sure you don't actually mash the potatoes.
6. Refrigerate until cool, serve cold with the protein source of your choice.
Hope that helps..C:2 -
Thank you!2

We had chicken quesadillas. I may drop the size of the tortilla I am using because I was disinclined to eat the whole thing.2

Thanks for the recipe Dante - sounds like something I’ll be making soon!3 -
But, but... why would you discard the skin!?!?!?!?!

I have been ordering in WAY too much due to having Covid. The fatigue has been REAL this weekend. Even taking a shower had me ready for a nap. So I have not been eating well at all. So while today may not be healthy, by god I will be eating what I have in the house!
Breakfast: Maybe just some toast as mornings are the hardest part of the day atm
Lunch: Soup (my cousin sent me a care package and it had a couple panera soups in it)... maybe a sandwich.
Dinner: French toast (frozen, also sent by my cousin), chicken sausage, and fruit
This sounds doable.5 -

Having burned off 1200 net exercise calories today, I could afford to indulge in a more calorific dinner than usual...
So Kim made spicy chicken burgers by taking two chicken breasts, battering the hell out of them until they were thin and the size of side plates (literally), then dipping them in beaten egg, dredging them through seasoned cornflour (seasoned with salt, pepper, chilli flakes and paprika) and finally rolling them in crushed chilli heatwave Doritos.
He then oven baked them until they were cooked through and super-crunchy and we had them served in a toasted bun with oven-baked french fries and a large salad. 840 calories in total, but worth every calorie.3 -
Lahm bi Ajeen from downstairs! 300g Plus a good 600g salad with tomatoes, cucumbers, onions, green beans (cause that's what I had!), and banana peppers!3

That is a very interesting sounding salad, PAV. Did you use pepper juice as dressing/for flavour or something else?0

Just lemon actually. Peppers were there for... some heat and salt without using salt!
That stuff was good... the $2.00 300g grab bag of belgian cookies at 1600 Cal? Not as good!1 -
700g tomato, cucumber, lettuce, onion, banane pepper, red wine vinegar, lemon pepper seasoning salad! 201g canned sockeye salmon... a slice of bread.1

Trying to navigate the antibiotic bombs I’m taking. Not much raw stuff, no hot spices, not much coffee, no acidic stuff…. Makes for a bland unhappy meal! Only another 10 days.
Unlike most people, I haven’t lost my appetite which could have been a bonus. But no, I still have the munchies.2 -
You are made of healthy stock, Yooly! Your body isn't going to let you starve for no reason.1

Boiled a dozen eggs. The bring to hard boil, turn off and leave 10 to 15 minutes method before plunging in cold water
Luckily the turn off portion of the plan took place.... and the water was cold to the touch with no plunging involved a couple of hours later...... 🙈🤷🏻♂️1 -
Still reminded that plain baby potatoes ARE a good deal.
Heading towards a potato egg yogurt salad to maximize goodness and not worry about food groups today 😹
Last night came back and instead of eating chocolate nuked 400g of baby potatoes at just under 300 Cal. The girl had about 10% and I had the rest with lemon pepper and oregano and some garlic powder and some fork smashing 🤷🏻♂️ maybe 8g butter too 👍2
