  • I can always tell by the tone of the barking when the neighbor's pit mix has chased a squirrel up the tree. How unsporting of that darn squirrel to put itself out of reach!

    Going to try an informal midday log here....not up to the database yet....lol

    Today - clementines and tea first thing, plate of raw veggies & hummus after walk, 1/2 portion frozen lentil stew and 1/2 portion frozen fried rice just now :) thinking I'll pick up some kinda of small treat when I go out to pickup groceries, and then ? maybe ? a mixed veg/red bean frozen dinner with some kind of frozen fake meat type thing from the store for supper? (they now longer carry my favourite harrissa mediterranean sausage....**kittens** :(

    Guessing I'm looking at 2000 calories...slightly less than maintenance I'm guessing....but....I put on my jeans today for the first time since early summer and they are a bit snug. The last few weeks have "rounded out my curves" just a tad :) so I'm thinking I need to tuck those stretchy pants away. They are dangerous! It takes a long time to do up the zipper and button and tuck in the front pockets of the jeans...but they might keep me on the straighter and narrower!

    Vegetarian fake pho if you can live with sodium is a possibility! Rice noodles 35 to 50g dry. And basically the halal Knorr cubes made in Egypt that we see around (at least the chicken version) seem to be 100% vegetarian in origin. Would double check my info before pulling the trigger but it seems like a quick not too many cal soup I might add to my repertoire!

    Made creamy mushrooms with bacon last night. The fellers had theirs on pasta. I decided to skip the pasta so that I could have some mango frozen yoghurt for dessert.

    I need to put my hand up and admit that it was a bit of a failure! :'(
    The bacon I used had been over-brined in the making, and even though I only stirred it in right at the very end, the whole dish was uncomfortably salty.

    The boys (bless them) at all of theirs but I only ate half of mine.

    The silver lining was that I could have a larger serving of the frozen yoghurt! And after the dinner .. the mango was VERY refreshing :smile:

    Tonight - going to do a wee roast of lamb and some oven baked veges - carrots, potato, parsnip (if I have some).

    I chucked every vegetable I had to hand in the biggest pot I could find and made veggie stew.

    Potato, swede, carrot, leek, celery, green beans, onion, parsnip, celeriac...bay leaves, thyme, passata, worcestershire sauce, garlic, red lentils...

    Made 1890g of stew for a total calorie count of 1068 calories...or 6 x 315g portions@178 cals/portion

    Went with the prosaic option of just making more beet spiral / fine green bean sauce (formerly known as pasta sauce), instead of consuming either picture #1 or picture #2!

    You can note the shocked expression when the lack of green was internalized... hence the deployment of fine green beans as something to be covered by the sauce!

    Dude still needs a haircut... but he's been taking selfie lessons!

    But why so many bags of candy? Hope it was a spectacular sale or two-for-one. Otherwise it’s just madness. Perhaps take the candy to the barbershop where it can be used to bribe toddlers to sit still.

    A couple nights ago I made meatloaf, mashed potatoes, and glazed carrots. I have one more serving of that for tonight.

    My lunch for the week is roasted vegetable burritos. So roasted bell peppers, onions, and zucchini plus pinto beans, shredded lettuce, salsa, and sour cream. I failed at rolling it yesterday and ended up with a mess but it was good. I do think I need more beans and less veggies today because it didn't keep me as full as I wanted.

    I am really trying to have more vegetarian options in my meals. I already rarely have meat for breakfast though I do have dairy and rarely eggs. Lunch can go either way depending on what I plan for. Dinner is where I am trying to make some changes because I am still stuck in the mindset of a meat and sides. Not that it is BAD per se, but I just want to change it. The biggest problem is that I can't have soy so no tofu (cries) and I have to be careful with my bean/lentil intake. I did look up some tips and trick when it comes to cooking beans and lentils to make them easier to digest so I am going to try that. My aim right now is keeping breakfast meat free, lunch not have meat as the main item, and then dinner try for one meat free meal a week. After Thanksgiving of course because I will have so much turkey that planning for anything else would be a waste.

    These sound so good!

    I think, over time, your body will begin stocking more of the enzymes you need to easily (quietly) digest beans and lentils. Or perhaps I just became accustomed to the digestion whirlpool?

    Since I don't make use of them never realized the vast price difference between the various food delivery services! Wow! Instacart is way more expensive than "hasty-cart". Ended up there because the PC website was not bringing up Green Bean Pictures!!!! :smiley:

    These guys are actually fairly long and worked well for me. Dad was, of course, complaining that they don't taste as good as pasta. I refrained from reminding him that pasta and less than 500 steps a day... don't work well together! Anyway. The french cut ones may be better for sauce use; but these ones did pretty good on their own.

    Question To You All - Have any of you tried making your own toasted muesli?
    And if so - do you have any recipes / hints / tips to share?

    I looked up a couple of recipes online - spent some time working out the actual calories aaannndd...
    The result is that 1 serve of the online recipe is EXACTLY the same calories as 1 serve of the purchased muesli.

    So I'm not going to save any calories by making my own - but I suspect my recipe will have a better blend of nuts, seeds and fruit - which I tailored to suit my requirements.

    The care and feeding of elderly parents can be frustrating. I took care of mom for 30+ years until she passed away at 96. As she got older food was a constant battle with what hubby and son wanted, what I should have been eating and then what mom fussed about. I learned to batch cook and freeze.     I use the French style .... they seem to cling well to the sauce and don't feel quite as "vegetabley" ?? I imagine the taste is pretty well the same - and I really like it actually :)

    Yes, well, Alexandra is really good both at juggling and at making a nice nest for her family! I am not even close to claiming that I have her calling!

    Part of the issues is that just going along with what everyone desires in our little nest won't get us very far. Most health challenges currently faced by Mr closer to 82 than 81 have to do with mobility. And said mobility is more than marginally affected by being 5ft 6" and recently down to the 230lb range.

    Dad has a -multitude- of available options as to the type, amount, and even the location of help that he gets. As things stand it may well be that he currently DESIRES that all needed care comes from myself and at his current home location... but this is far from the ONLY option available to him.

    We went out for pizza with MIL for my husband's birthday. I had a small (6") thin crust margarita pizza with extra toppings of cherry tomatoes and rocket. Oh, and a bottle of Moretti. Then, back to MIL's for a slice of homemade victoria sponge.

    That necessitated a light dinner, so I made do with a packet of dry Doriana crackers, a banana, a small Pink Lady apple and a small satsuma. Just to tide me over until breakfast

    I reckon that with the milk in my cups of tea and my usual slice of toast for breakfast I've consumed around 1800 calories today. Not too shabby....

    Unfortunately we came home with a big chunk of the victoria sponge, so that will add temptation tomorrow. Plus we've a few more treats planned for the next few days, until the birthday proper on Saturday. I may treat this as a maintenance week...or fortnight, even, because next week is also a special week, as it's the 20th anniversary of my husband's transplant, and we always go out to dinner and raise a glass to his donor and his donor's family, because obviously our joyful anniversary is their sad one...
