Weird "menu" today. High protein through!
175g cooked shrimp with 65g cocktail sauce (one of the thaw and serve shrimp coctail rings).
Run into a "red lentil and chickpea" orzo made out of the respective flours... and nothing else! Cooked it in knorr mushroom bullion. Served my portion mixed into riced cauliflower. Then added parmesan petals and the universal equalizer (logged sriracha but actually used garlic chili sauce)
That said... it was actually better than acceptable and I am thinking I will be acquiring more boxes of the stuff! Laurie: PC Blue Menu Red Lentil and Chickpea Orzo (boil 11 to 13 minutes for al-dente....)3 -

Last of the turkey leftovers today. Sooo done with Thanksgiving. I may opt for some frozen shrimp and let the guys finish the bird.2

Special dinner tonight.
Tomato and garlic bruschetta followed by pasta al forno. Cheeky little Pecorino vino to wash it all down. Not sure about dessert...may be good and just have coffee.

I'm glad we kept a good moment of silence in honor of Bella's emotionally laden dinner!
In a more pedestrian everyday world, a couple of days back we got some sea bream (tsipoura) from Costco. Grilled it in the oven with some fennel, lemon, lemon pepper, tiny bit of olive oil (like literally less than 2 grams) and served it with boiled baby potatoes and carrots. Then yesterday we warmed up the third fish (they were just over a lb each including heads and tails and all that), and made some tilapia in parchment paper pretty much seasoned the same way. It wasn't terrible actually though I am considering adding something to the mix. Still thinking on what and how! Also did a bag of ready to eat "veggie fries" with the fish, warmed up the leftover boiled potatoes in the oven, and boiled some more carrots!
Today was different though! A mix of cauliflower rice with brown rice (200g and 100g in my case), surrounded by baby brussels sprouts (300g), and served with.... (ready made and warmed up in the oven) Korean Kalbi beef short ribs!
Holy *kittens* are beef short ribs NOT a great caloric bargain! And quite hard to quantify in terms of calories eaten what between so much depending on how much of the (excessive) fat gets eaten and on how much sauce ends up on your plate! Don't get me wrong. They WERE tasty and I AM full... but the 500g package was like 1500 Cal. And even though we shared it I am quite certain that either one of us would have had no issue gulping the whole thing down in one go!!!!3 -

Hubby spent a year in Korea. Food was excellent. However in most Asian countries meat is the SIDE dish or flavoring agent. Veggies and rice are the main meal. Hubby said most Koreans were rather horrified by the quantities of meat eaten at one sitting by Westerners.
We’re having enchiladas made with low carb tortillas, no fat refried beans, cheese and peppers. I’d rather have the tilapia at PAV’s house.4 -

My experience with Asian friends is similar - North American meating eating is a bit extreme - I think we have a bit of a reputation for that.
Bella's dinner was deserving of a moment of silence.
I have no idea...past few days have been birthday and "cocktail" parties. My gimpy self, so tired of frozen meals (though they are great to have), took full advantage of being fed.4 -
The parchment paper tilapia was fairly... pedestrian / standard.
The more "exciting" one, thus deemed photo worthy, was the sea bream extravaganza! Admittedly... clean up was "interesting"
"spoiler" picture of aquacultured whole grilled sea-bream may not be suitable for everyone! Dad "prepared' the fish so he didn't score it, which would have made it even better, but it really was still quite good.

Today's dinner was actually a (relatively) much better caloric value.
A 700 Cal frozen lemon garlic shrimp and scallop (with broccoli and onions) linguini kit. Thaw in hot water and prepare it all in one skillet!
Not bad at all... once I added another 250g of shrimp and 10g fresh garlic and 150g of carrots and green beans and less than 2g oil 😹
With some parmesan and lemon pepper each portion ended up being just under 550 Cal for a full plate of good yummies.4 -
Haven't added things up yet (which is most certainly NOT the way to go); but today was mixed greens, tomatoes, pickles (onion, pepperoncini, dill), (partially blanched) red onion, boiled potatoes, grim turkey peperoni and mozzarella stock packages (cut up), turkey cold cuts, and parmesan petals salad day. With "blue menu"=low cal zesty italian dressing and a squeeze of lime! The weather was really nice (+6C / 43F and sunny) so I even snuck in a good walk!
Had a quick look at what it all added up to... and can confirm once again that a salad does NOT equal a caloric bargain. Especially if you washed it down with an extra 150 Cal of pita chips and snuck in a 100 Cal of cheese while preparing.
In all any of my dinners the past few days except the ribs was probably less calories in a single go! Thankfully I had the room today!
I am also a bit confused. I thought I had posted my egg curry yesterday?!?!? Pouch of egg curry sauce (450 Cal) plus 6 eggs (475 Cal) plus pouch of rice (300 Cal) plus cauliflower rice from frozen (90 Cal) = two fed quite comfortably at less than 660 Cal each.3 -

Must go read about it now. Since I can't actually do much on the food prep front yet....I will read (and eat bad food apparently).1 -

Wow. Thank you, PAV. A sincere thank you because I'm kinda falling apart on this front - and you just threw me a bit of a lifeline. This curry looks like a thing. I've been trying to up the protein - at least for "healing" - but have had it up to my eyebrows with boiled eggs and with bits of shell in my scrambled eggs...(stupid left hand). This might just get me through the holidays (not perfectly or at a deficit, but without losing me freakin' mind completely).3

oh....but I'm hankering for the curry now! Found it at one localish Walmart - going to ask the son to pick up there because that happens to be where they do their grocery shopping.
And, fritatta kinda begs me to do other things that still feel a bit overwhelming...almost more so than they did because I'm running out of "I kind do thisness"

Today opened up mega can of diced beets (not a one handed operation) 31Cal per 100g solids the whole can is under 600 Cal if you don't drink the juice. Nice for salad with onion, boiled potato and egg and some dill and hot pickles for even more filling!
Will either nuke some ready made beef cannelloni or will parchment bake tilapia and veggie fries ....

Canned Beets are impossible to find here right now….Publix is rationing buying a lot of holiday foods and not sure why there are no beets lol…we had a store bought baked chicken and a light pasta salad for dinner….husband is not good and has terrible indigestion right now on top of everything else….he had an RA flare last night and his toes hurt….some days SMH….3

I'm lucky to have lots of cooked beets in the freezer. I was supposed to make those fermented beets - but ran out of time - and instead cooked them and put them in the freezer - not having any idea they would become the another item on the pandemic shortage list.3 -

Those are some impressive baby icebergs in the geese pictures.
Supper was a small salad and a frozen tomatillo stew concoction. Hubby picked it up on sale and it’s languished in the freezer. I think it was an overpriced Martha Stewart effort that was way overpriced so the store was clearing it out. Martha should be ashamed of herself! At least it was only 190 calories.3 -

We were going to do the fish tonight... but dad spotted the frozen pizzas and had apparently forgotten that he didn't like the frozen cauliflower crust roast veggie pizza last time he had it
So... I added some prosciutto (mainly because it was starting to dry out a bit)... and... dad liked the prosciutto but still didn't think the pizza was any good!
No mention (positive or negative) was made about the crust, so I didn't blab to further condemn cauliflower!
We had some greens, beets, and onion salad with the pizza. My bowl also got some hot peppers, and "sliced" turkey "breast"-the stuff that pretends to be real as opposed to fully admitting to loaf status
Jokes aside I am iffy on the fully prepared cauli pizza. Crust only may be a different story; but not too sure even about that.
Our end product was a small medium pizza (if that) and it was almost 1300 Cal and 641g in total. The extra meat was there; but not overwhelmingly so. Cheese was... definitely not overwhelming!
Yet, by weight the calories were similar to those of a domino medium. Maybe closer to a veggie than a meat extravaganza; but definitely in the same ballpark.
A couple of real pizza slices seldom set me back 650 Cal and I don't think that my three cauli slices felt any more substantial... or tasty!2 -
I've been left disappointed by any alternate crust pizzas, too. So I go for the Domino's crunch thing crust - which always leaves me feeling full and like I've had something decadent - high - but not ridiculously high on the calorie front because I usually eat 3/4 of the medium pizza (Laine gets the other1/4). I could die if I left any pizza for the next day, so I don't take that chance.
I'm impressed that you have the salad on the side. Maybe I should try that on pizza nights rather than the lava cake with a splash of bourbon? (I'll probably end up with both - but that can be okay on a maintenance day).2 -

Mainly because flat- mate in BC **often** orders pizza (one or two mediums, green olives green peppers and/or green olives and banana peppers, unless it's cheese pizza or a pepperoni walk in special--both higher cal), having one to three slices is common as opposed to a special occasion. So it has to somehow fit. And pairing with a salad is a good way to fluff it up!👍
On the rare occasion pizza makes it to the next day, it's either eaten cold, or I warm it up (semi-acceptably) wrapped in paper towel, single slices, 70% to 80%, 30 and then 10 second increments in the microwave, or (almost perfectly) in a 325 to 350 oven.
Lava cakes would not make it to pizza night... they would be consumed on arrival 😹3 -
So I'll keep my decadent pizza nights decadent, and occasional, maybe I can have salad earlier that day - a low calorie salad not one with a million toppings 😁3

Toppings... well, I guess it depends on the topping.. nuts and seeds vs unsweetened cranberries!
today was a more tame day... I just made soup using a hakka noodle package and veggie knorr... and then added some pre-cooked frozen shrimp I quickly thawed under hot water. Whole thing was under 500 including the bowl of greens and tomatoes and pepperoncini's3 -
Lunch today is a chicken and cheese quesadilla. Dinner is chicken marsala, wild rice pilaf, and maybe a roll and butter.5
