Since we've been talking about Atomic Habits lately I thought this would be a good title for August.

I got a bunch of cooking done this afternoon and all set for a seriously good WFPB kind of week! Breakfasts will be oats with blueberries and raspberries, ground chia/flax mix, cinnamon, turmeric, black pepper. Lunches will be a cup of the cauliflower curry soup and a bowl of cooked veggies, greens and brown rice. Dinners will be big ol' salads with hummus and balsamic. I also have cantaloupe and watermelon to eat with my meals. A lot of stuff will likely go into the freezer by the middle of the week.

Will continue my half hour of treadmill time in the mornings. That really sets me up for a good day when I do it. And I will make every effort to work in some strength training a few evenings this week.

    Good day!

    B - leftover broccoli
    S - cantaloupe and blueberries and raspberries
    L - big ol' salad (too full to eat the cup of soup that I had taken to the office)
    D - a cup of soup, cabbage with black eyed peas over brown rice, some more cantaloupe

    I couldn't quite finish the big salad at lunch. I forgot how much I like hummus on my salads. Makes it so much more filling. Hoping this getting back to basics will get the scale moving in the right direction again.

    Still super busy with work and had someone call off sick again today. It seems like a rare event anymore if we are fully staffed for more than a week in a row.

    Went to Trader Joe’s
    Picked up only fresh and frozen fruit and veggies
    Came home
    Threw out all and I mean all processed frozen ! ALL!

    No more Gardein!

    My California Balsamic arrived today…no more FOLLOW YOUR HEART RANCH

    Mihani, I to need to work on back-to-basics and habit resetting. My weight is up and my inflammation is up.

    I'll be starting my day with a trip to the gym for weights + cardio.

    B - cashew milk + coffee + broc + blueberries + spices (almost done with this)
    L - black beans & steamed spinach (1 lb)
    S - apple + a few cashews
    D - big salad, soup (more spices!)

    coffee with nutpod creamer
    oatmeal the usual
    watermelon
    couscous summer salad using lettuce cups
    roasted veggies with jasmine rice (going to try and make a big batch and freeze into portions...using method from ONE POT CHEF).

    Hi Austin, so glad to see you! Great plan for the day. How was your trip to the gym?

    Not managing my stress as well this week as I have been lately. Need to get back to my mindfulness in the evenings.

    I need to portion out some of the soup and black eyed peas with cabbage that I prepped and freeze it. Not going to be able to eat it all before it goes bad.

    B - leftover broccoli (all gone now)
    L - cabbage and black eyed peas, some of the greens, brown rice, cantaloupe with raspberries and blueberries
    D - soup and a big ol' salad topped with hummus

    Had plans to have oats with fruit in the mornings this week, but I'm on this veggies for breakfast kick now.

    Thanks for the inspiration re yogurt, Nance. I made some a long time ago and I think I'll do it again. I remember 'they' said the key was to keep some of the yogurt once made and add it to the next batch so that over time your yogurt gets thicker.

    I'm going to do the 6 week Fuhrman plan with Joe. I need a good reset to get back on track. We're going to prep lots of raw veggies with bean dip, and make some easy one pot meals. I was planning on just fruit for breakfast, but I think I can make a Fuhrman-approved yogurt to go with the fruits/berries and that makes it more satisfying for me. The toughest part of the plan will be no salt. We've been pretty lax with that lately. We're starting after our next grocery shop or Monday, whichever comes first.

    Carla's back, yay! I just started the 6 week plan on Monday, although I may be overdoing the starch serving just a tad as usual, but I only eat a starch once a day. This week it is brown rice. This will be cool doing the 6 week plan at the same time. :) I think next week I may try going with no grains at all and keep my starches to sweet potatoes or squash.

    I am with you on keeping it simple. This week has been so easy with veggies for breakfast, salad or leftovers for lunch, and salad or leftovers at dinner. I've enjoyed hummus on my salads this week and think I will expand my repertoire of bean dips. I've just made the basic E2 recipe so many times I don't even have to think about it or measure anything so I usually make that.

    Another good day... I actually opened the snack cabinet once to look at the pretzels and then I convinced myself I was being silly and just wanted to stress eat so I closed the cabinet, got more water, and waited for lunchtime. Oh, that's the other thing I've been doing this week. I have a 24 ounce tumbler that I use at work. One of those ones with the lid with a plastic straw. I've been making sure that I drink 2 of those every day at work so there's 48 ounces of water, plus I usually have a glass or two in the evenings.

    B - leftover greens with mushrooms and onions
    L - leftover cabbage and black eyed peas with brown rice and some more of the greens, cantaloupe
    D - big ol' salad topped with hummus and a bit of balsamic

    YOGURT tastes great, but runny! I am going to try and use the method Dillon told me to try...reduce the soy milk (since I am using westsoy ...soybeans and water only ingredients)...and I ordered a thermometer...to try again.

    I will use the yogurt for my cereal...I eat my oats raw with almond milk...so this should be a nice change.

    Not sure if I told y'all...but I have an abdominal hernia...surgery is 8/25...taking my vacation then, so I will be home for ten days. Outpatient...should be easy.

    I am still using Forager sour cream...one of my favs, is baked potato, small amount of SC and scallions. So good, with salad.

    I did pick up some mushrooms and cooked lentils (steamed at Trader Joes)...going to attempt to make taco mixture for work...using lettuce cups and tortilla. NO walnuts...trying to keep the calories under control. NO walnuts...NO avocado for awhile.

    My goal is knee replacement in January...would love to be 125 then...147 now. I will be happy with 130, however. I just feel like this weight is glued on me.

    Now that I have nothing to fall back on in the freezer...I am really trying to get my kitchen and my food menu in gear.

    Even without the weight coming off, eating this way...well, I just feel better. I know when I eat junk food vegan, I do NOT feel this great.

    Ok dollies...oh yes, I did reheat the rice...it pretty much works. IT's not as good as freshly made...but it's just me and I only make a small amount each time. This is a time saver.

    Nance, Mihani is right, you've been rocking your food lately for real! I like the Forager yogurt but have not tried the sour cream. The unflavored yogurt works for me in place of sour cream in my chili. Great weight loss goal for before knee surgery. I didn't know about the hernia, best wishes for that. Sounds like you'll have some time to recuperate and hopefully enjoy a good book or two(?).

    Mihani, it is great to be on the Dr. F. 6 week plan together...just like the good old days! I'm close to on plan already, but I want to be all in when I commit so I'm re-reading for the finer points, and want to make sure my fridge is cleaned out and full of on-plan foods ready to eat.

    Work today was a bit stressful and took longer than anticipated, but I took a break and went for a 45 minute treadmill workout. I came back calmer and felt good about getting in the exercise.

    Food:
    morning- 2 cups coffee, black & lemon water
    Lunch - tu-no salad (has salt in it) over fresh mixed greens and cherry tomatoes
    Dinner - the same, plus a nectarine and a cup of frozen blueberries with cinnamon and almond milk on top. the almond milk froze and with some imagination it was a bit like ice cream!

    Oh man, just as I am enjoying my coffee with NUTPOD creamer, I spy Carla drinking hers black...I must stop this yo yo ing and QUIT the creamer kick!

    I will have to give making my own yogurt a try soon. I didn't know about the hernia, Magic, but I'm glad to hear it should be an easy surgery. I know what you mean about feeling better in general when sticking to WFPB. Definitely the same here. How was the dentist and did you get your prepping done?

    Carla, I should probably give ETL a quick re-read myself. Have most of Dr. F's books, and really liked Super Immunity. Seems like I should have re-read that when Covid started now I think about it!

    It's so cool that Joe is doing ETL with you. I think it would be more fun if I had someone to help with the prepping and trying new recipes. I get burned out trying too many things when it's just me. Hope your day was less stressful.

    My salad prepping friend is going out of town for 2 weeks starting week after next. Waaaah! When she's out of town I usually fall back on box lettuce and chop the basics of carrots and radishes and grab some grape tomatoes.

    D - big ol' salad topped with hummus and the last of the cantaloupe... it was a huge cantaloupe and has lasted me all week

    I froze all but that one serving of the soup I made last Sunday. I'm happy that I'm building up some standby meals in the freezer. I hope to do some more cooking this Saturday but I have plans to take the boy to the vet and visit a friend so I'm not sure how much time I'll have for shopping and cooking with the amount of work piled up on my desk both at the office and here at home.

    Oh, forgot to mention, I did my mindfulness last night! I hadn't done it for several weeks and I enjoyed it. Also did a little bit of yoga type stretching and felt so good afterwards. I have SO much tension in my shoulders and neck from sitting at a desk so many hours every day.

    Mihani, it is definitely a huge bonus having Joe along for the ride. He's not one to suggest it, but when I do he's always up for it and helpful. I think I need some yoga too after a few long days sitting at my desk.

    I might be being too optimistic, but I feel like after all of this time eating plant based, and all of the recipes we are familiar with, it just won't be all that difficult to do the reboot. This is being said before a meal with no salt of course LOL. Looks like we're gearing up to start sooner rather than later. We've got pinto beans made for chili and if we skip the salt and have a pile of greens with it, we'll be on plan.

    I picked some fresh blackberries for breakfast and they were delish! I will be doing that as long as they are in season.

    breakfast - 2 cups of Nance's favorite kind of coffee ;) , 1 cup blackberries, 1 cup frozen blueberries, 1/2 cup or so of almond milk on top
    lunch - tu-no over mixed greens with cherry tomatoes, a nectarine
    dinner - planning on chili over greens and fruit salad or nectarine

    Key to our success: Progress not perfection! Celebrate steps you are taking to get you where you want to be...it's not about doing everything perfectly...it's about taking steps daily to get you there. My little bit of pep talking this morning!

    Dentist was great...no problems...I go back every four months cuz I have pretty fast tartar build up. So next appointment will be in Dec.

    gosh, I just saw Carla's shout out to me regarding my fav coffee...OK OK..throwing out the remainder of my nutpod creamer...coffeebath.gif

    oatmeal with homemade soy yogurt which practically is milk since it's THAT runnyscratchhead.gif Next weekend I will try adding an additional step...reducing the soy milk...I ordered a thermometer...to keep the temp correct before adding the yogurt starter

    so oatmeal with yogurt, blueberries and a touch of maple syrup

    big salad with Lotus rice noodles (this was a step I took last night...I made my salad with a very messy kitchen...I had enough in me to either clean the kitchen or make the salad...messy kitchen cleanup can wait...I had made lentil, mushroom, walnut mixture for taco lettuce cups...did NOT turn out)

    fresh cold pressed juice featuring turmeric and ginger

    baked potato with you guessed it...homemade soy yogurt and chopped green onions

    fresh cherries

    My weight is going down...totally excited. Do not miss the processed crap at all. It's funny, I was at work. thinking I must do something drastic to get make progress. And really, it wasn't drastic at all...it was what you all have been doing all along...NOT EATING PROCESSED VEGAN FOOD.

    My ultimate goal is 130 for total knee replacement surgery in January. That change I made after work on Monday is definitely going to help me get there!

    Lulu deserves a mom that can walk her!

    Great pep talk, Nance! Progress not perfection. I was teasing about the creamer! Do what works for you :) i had a heck of a time adjusting to no creamer...what ended up working for me was that we moved 5 years ago to a smaller town and they didn't have the creamer I like! And then I made my own but it wasn't the same and took effort and forthought...so I guess I 'lazied' my way out of the habit LOL I'll paste the soy yogurt recipe I used down below. I'm going to attempt it again in the next few days if I can find the right soy milk.

    Mihani, I have a bunch of different Dr. F books, including the immunity one and the diabetes one. I was using the original ETL for the 6 week plan reference, but as I go I will read through the others. It keeps me motivated, even when I already remember a lot of the info. (or more accurately, I remember what I'm supposed to do, but the 'why' of it is motivating).

    Breakfast this morning is fresh picked blackberries and frozen blueberries with almond milk, and an apple from one of our trees. There are so many apples that have already fallen off of the tree. We will make some applesauce for canning, some fruit leather with the skin included, and dried slices but the excess needs to be boxed up and dropped off for donation. We don't need a bunch of high calorie dried fruit tempting us, especially not now during the 6 week plan.

    For lunch I'm having the last of the tu-no salad over greens and tomatoes and dinner will be chili with some sauteed zucchini from the garden and mushrooms to hit my G-BOMBS goal.

    Some rain is in the forecast for tomorrow and I'm so ready for it! It has been dry here for 50+ days now and everything is thirsty.

    Servings: 4 cups
    Ingredients
    Ingredients:
    1 32 oz. container of unsweetened PLAIN soy milk water and soybeans as the only ingredients:
    5 probiotic capsules with 2.4 billion CFUs or any number of capsules totaling 12 billion CFU (first batch only). For all subsequent batches, use ½ cup of plain yogurt from your last batch as a starter.
    Steps
    Add the contents of a new factory sealed container of soy milk directly into a clean instant pot.
    Add the probiotic or starter.
    Stir well with a whisk until completely blended.
    Push the yogurt button on the instant pot and use the + sign to change the time to 15 hours.
    Place the lid on top and make sure the valve is turned to vent to allow humidity to escape.
    Wait 15 hours and come back when the yogurt timer beeps.
    Use a spoon to drain off any water that formed at the top of the yogurt.
    Let it cool to room temperature and transfer to sealed containers.
    Save ½ cup of yogurt with nothing added for your next batch.
    Notes
    The yogurt will taste more like store bought soy yogurt once the culture matures and you make the yogurt from starter.
    Reduce cook time by an hour or two for less tangy yogurt.
    Increase cook time by an hour or two for more tangy yogurt.

    Magic, you've done a great job getting things in order! Totally love that you are feeling better and weight is dropping so you can get ready for your knee surgery. I absolutely get it on the processed foods. When I first went from vegetarian to vegan about 10 years ago I lost all kinds of weight and felt great. And honestly I didn't do that to lose weight at the time just thought it was time to give up dairy. Then a few years later the market exploded with vegan junk and I gained so much back!!! Not all of the weight by a long shot but too much, and still struggling to lose the last 20 to 30 pounds.

    Fresh berries sound so wonderful, Carla. I just looked at my instant pot and it doesn't have a yogurt button. I have had it for 2 years now I think, and have only used it once. I am still afraid of it! I grew up in the 60's and 70's when Mom was using the pressure cooker pot and yelling at all of us get out the kitchen the pressure cooker could explode! LOL I agree the "why" is important. I love How Not to Die by Dr. Greger for that reason. I enjoy his silly humor too.

    I can't say I was perfect today. Had a glass of wine when I got home, but other than that not bad.

    B - ezekiel toast with a smidge of peanut butter, watermelon
    L - Dr. McDougall soup and a couple wasa crackers
    D - big ol' salad

    I forgot my lunch, which is why I had the Dr. McD soup, but I need to remember to take my lunch. Glad I have plenty of Dr. McD soups to fall back on though, when necessary. On Monday, I plan to take several of my frozen items to the office so I have better choices when I forget my lunch.

    Ugh...really poor sleep last night. DARN!

    but I am back on the Black Coffee train. Not gonna lie, miss my Nutpod...but I know that the ingredients are not good for me.

    In the original, unsweetened, almond + coconut: Water, Coconut Cream, Almonds, Acacia Gum, Dipotassium Phosphate, Sunflower Lecithin, Sea Salt, Gellan Gum.

    That coconut cream uh...NOT GOOD!

    I tasted the lentil/mushroom/walnut mix last night...actually good. So:

    black coffee
    oatmeal with blueberries homemade soy yogurt
    squeezed fresh cold pressed juice
    lentil stuff and potatoes
    more juice

    I am NOT prepared for work today. I may order off Yogi's Grill...they have one thing I can have...steamed veggies and rice. I'll see.

    My salad yesterday was not great.

    There is absolutely nothing in the house for me to cheat with...so that's good. If I can find the energy and a clean work space...I'll cut up the watermelon and take some of that. That would work.

    My kitchen is a disaster!

    Wait...you know what...my broccoli is prepped and I have the same steamer as Chelsea...(you know I love that girl and copy her as much as I can)...going to go steam some broc and I have rice in the freezer...use the ONE POT CHEF method of defrosting.

    Well, things are NOT all that bad.

    Good plan, Magic. I have a watermelon to cut up today myself. I love it so much it's almost pathological. LOL

    Took the boy to the vet this morning to get his lumps checked. He's a lumpy old lab (mixed breed of mostly lab and shepherd but looks more lab and he's 12 years old) and I get paranoid when I feel new lumps or others seem to be getting bigger. Doc says she doesn't see anything alarming that she would want to aspirate to test for cancer. Whew! She totally understands my paranoia and is very patient with my every other month visits to get things checked out. I will not worry about it for another couple months. I'm going to start him on glucosamine because although he still gets around like a champ he's starting to get a little unsteady like stumbling on the steps or almost falling if he tries to jump up for a treat. Labs are perpetually 2 years old in their brains!

    Taking it easy today. Last week was really rough at work. Watching TV and reading, probably napping. Tomorrow I will clean the house, do laundry, and get some work done. I will get some cooking done today. Plan to make a big skillet full of purple kale and napa cabbage with onions. No mushrooms on hand unfortunately. Still planning to buy some mushroom powder to add to dishes.

    Also going to make some baked tofu and a batch of hummus.

    L - big ol' salad with hummus and balsamic glaze
    D - ezekiel pita pizza

    I think I already shared this but the pita pizzas I make are AHmazing. I mash a can of cannellini beans, mix with a can of tomato sauce and italian seasonings. Spread on pita and load up with veggies and baby spinach, sprinkle with nooch, bake.

    Nice job pulling that lunch together, Nance!

    Mihani, once you get used to the IP it isn't scary. I used to leave the room when I first got it, though, so I get it. Glad it was good news at the vet re the puppers.

    My yogurt turned out thin as expected for the first round. There's something about making my own yogurt that makes me uneasy eating it. Adding those probiotics with the milk frothing and then leaving it for 16 hours in the IP. I just feel like there could be something wrong with it...which makes it hard to enjoy! I will push on and see if I can get comfortable with it. Since the recipe only requires a tetra pack of soy milk and a probiotic tablet or starter, it is pretty easy to whip up as needed.

    I made the black bean salsa from the ETL Cookbook to have on hand. It looks good but I am letting the flavors meld so I won't know about the taste until later. The problem I have with the 6 week plan is that everything looks good but with no salt it just doesn't have any flavor. I keep thinking that 1/4 tsp of salt would make all the difference! I've been adding lemon and extra spices to everything but still struggling a bit. I'm avoiding any dried fruit. I am waiting for my palette to reset...i don't remember how long it's supposed to take. 2 weeks? a month? As far as making the meals, it is definitely easier this time around. I have so many recipes that are Fuhrman approved, as long as I remove the salt and oil if they call for any.

    Breakfast: strawberries, cantaloupe and yogurt, sprinkled with cinnamon
    Lunch: greens, green goddess dressing, roasted veggies and salsa, nectarine

    My yogurt directions couldn't be easier (now it is a bit runny...but the taste is so good...and it is not as thin as milk...it's thick enough that it brings a new dimension to my oatmeal breakfast.)

    I used: Cultures for Health Vegan Yogurt Starter Culture | Non-GMO, Gluten Free, Non-Dairy, DIY | Make Delicious Batches of Probiotic-Dense Plain Vegan Yogurt | 4 Packets
    Visit the Cultures For Health Store with tax it was 11.77 NOT FOR SALE ANYMORE

    But I think it will be again.

    I didn't worry at all. I put the packet in the carton of soy milk...shake shake shake...then poured into two glass 16 oz mason jars...set in the insta pot for 14 hours...done!

    I have been eating it and no worries. Tasted so good.

    BUT I CAME HERE TO TELL YOU...the frozen rice hack WORKS PERFECTLY!

    back to work...just wanted to share.

    Carla, I never used a lot of salt. My mom jumped on that reduced sodium bandwagon in the 70's and I don't particularly like things too salty. I use Mrs. Dash or Trader Joe's no-salt seasoning. I use coconut aminos quite a bit which isn't salt-free but greatly reduced from soy sauce or bragg's. I love the slightly sweet flavor of coconut aminos too. I still use reduced sodium soy sauce sometimes in stir-fry but I only use a little bit. I'm avoiding it during the 6 week plan though.

    Magic, glad you are enjoying your homemade yogurt. I doubt I will try it any time soon but one of these days! I bookmarked that website, thanks for the tips.

    Okay, time to get busy! I've been up for 2 hours and have done nothing but drink tea and make a list of things I want to get done today. The list isn't going to do itself.

    Plan for today:
    B - frozen berries with chia seeds and cinnamon
    L - big ol' salad with hummus (so I better make the hummus)
    D - pita pizza, watermelon

    I will make your pizza, Mihani, on my weekend. Is this all I need to know:

    I think I already shared this but the pita pizzas I make are AHmazing. I mash a can of cannellini beans, mix with a can of tomato sauce and italian seasonings. Spread on pita and load up with veggies and baby spinach, sprinkle with nooch, bake.


    I need to get to the store, but I need to clean the kitchen MORE. I might not get finished this morning before work, but I am going to get STARTED.

    With that said, I so need more broc, only have frozen. Never cooked with it. Any tips? Any fail proof recipes/ideas?

    Today:

    oatmeal...the regular!

    rice and broc...if I can get somewhat organized, more steamed veggies...OR roasted. That might be better.

    Watermelon was mushy. Trashed!

    Ended up making corn, kidney beans, cuke, celery, red onion, mint, cilantro, Kalamata olives, freshy squeezed lime salad.

    Brought some to work. At home, I will have over crunchy romaine.

    roasted, baby bell peppers, yellow squash, carrots...had some broc...so combine and having that with steamed rice, using the ONE POT CHEF hack to freshen up my homemade frozen rice.

    Magic, frozen veggies are pretty blah in general IMHO. I usually mix in some spices, balsamic, or even better some spicy brown mustard. Really perks up those tasteless overcooked frozen veggies. I use frozen fairly often as a fallback so I had to come up with something that made them taste decent. Fresh are just so much better but we need hacks to save time and also when we run out of fresh before the next grocery run and prepping session, Dr. Greger says that adding some mustard reactivates the good stuff in broccoli after it has been frozen too.

    Bad watermelon is tragic! Tragic, I tell ya! I had one a couple weeks ago that I threw out. Mushy and tasteless.

    I managed to get the hummus made, and a huge pot of cooked veggies. Red onion, napa cabbage (saved half for my salads and cooked the other half), purple kale, beet greens, daikon radish (again saved half for my salads), and some sort of asian spinach that my salad prepper friend found and gave to me, chopped golden beets (saved some to have raw on my salads) and carrots, garlic, a little coconut aminos. I save the broth to drink like coffee. I swear it is so good. I spiced with no salt seasoning, cumin, turmeric, black pepper. I added some smoked paprika to my hummus too, that was a nice addition.

    Do I think my homemade "hummus" which I don't think is technically hummus without oil or even tahini is as good as real hummus? Probably not, but I don't think of it as hummus and rather as "bean dip" and that makes it taste better! LOL

    Okay, dryer is buzzing so I'll get my laundry out and head up to my desk. Not sure how much work I will get done today but at least put in a few hours.

    Oh, Magic... forgot to respond to your question. I just use ezekiel pitas and yeah that's pretty much it. I added red pepper flakes to the sauce this time which gave it a nice kick. It's not "pizza" by any means, but it tastes good to me, I haven't eaten cheese or dairy in almost 10 years now so I don't miss it anymore. A sprinkle of nooch is fine. There are some really good WFPB "cheese" recipes out there for topping pizza though. I'm just generally too lazy to do that extra step.
