oh I'm sorry! Mihani! I forgot that I modify the queso from the original...
I use a fresh jalapeno without seeds or pith, 2 generous Tbsp of nooch, and 1/2 tsp of smoked paprika. (plus I tend to just use the cashews) I made it without salt one time and didn't enjoy it near as much, so I use a generous 1/4 tsp now.
even if most of these modifications don't sound good to you, toss in that nooch, it surprised me how much that helped it out the first time I made it0 -

I hope you heal up nicely in time for work, Nance. If you are not up to it, do you have someone to cover you? I purchased a set of high quality linen sheets. We love them. But they are too expensive to get multiple sets...so I wash and dry them and then put them right back on the bed. I still have a few spare cotton sets, but I try really hard to remember to throw them in the dryer so they are ready!0

Hi Carla, thought of nooch when thinking about what I would do to modify the recipe so I'll definitely add that and the smoked paprika. I did use all cashews but will probably do half white beans next time to cut down on the fat. I like the idea of roasting the jalapeno first as well.
Nance, sounds like you are a procrastinator like me when it comes to household chores. I'm so bad about that even though I know it is easier to keep up if I just do a little bit every day instead of waiting until it's a day long project to catch up. I forgot to get a watermelon when I was at the store Friday and so sad!
B - ezekiel toast with avocado and sliced tomato
L - half a baked potato topped with salsa and cooked greens
D - salad topped with the roasted fajita veggies, some cashew queso and salsa
I'm on a big salsa kick lately. Want it on everything. Starting tomorrow I'm cutting starches back to ETL guidelines (no more than one cup per day) and continuing on with Dr. F's 6 week plan. I enjoyed my wine last night but I always feel tired the next day when I have alcohol, even just a couple glasses of wine. Not sure it is worth it.

Today was a decent day at work. Busy and stressful as always but managing to stay calm through it all. Trying to keep my stress in perspective given how much worse a lot of people have it right now.
B - thawed some mixed berries and sprinkled with chia/flax and cinnamon
L - big ol' salad (red and green leaf, arugula, purple cabbage, radish, carrot, tomato, chickpeas) with Shane & Simple vinaigrette, half a baked potato (plain)
D - arugula topped with fajita veggies, cashew queso and salsa, an apple
Carla, I can see why you eat the fajita bowls so often. Darn tasty and leftovers are great.

Hi gals!
We're going out for dinner to celebrate a family birthday tonight. Hopefully the weather improves because it is a little drizzly and cool outside and we're hoping to opt for outdoor dining due to rising covid cases. They have a covered patio, but they don't take reservations. We don't go there often, but when we do, I always get the most awesome pizza - thai curry roasted veggies, fresh spinach and mango chutney, hold the cheese. Thin crust so not as carby as it would otherwise be.
Nice to hear you are improving rapidly, Nance! Yogurt w/ jam sounds good...I should have put in the effort for make my own blackberry jam this year...might not be too late if I get ambitious later in the week!
Mihani again sorry about missing the changes I made...I use the 'copymethat' app to store recipes and after tasting it the very first time while still in the blender, I made the changes and edited the recipe so after all this time I forgot I even had to make the changes....then I copied the recipe for you from the original website. We enjoy the leftovers too, and it makes it very easy for me to get in my mushrooms, and cooked and fresh veggies for the day.1 -

Not a problem at all Carla... it's not that the queso wasn't good just more bland than I thought it would be and it needs a little tweaking. I was thinking about adding some lime juice and fresh cilantro as well. Love the recipe and already planning to buy more portobello mushrooms to make it again this weekend. Hope you have a lovely time and enjoy your pizza!
Magic, that wrap is beautiful. I firmly believe almost everything is better in a wrap! So great to hear you are feeling better.
I was stressed today but made it through...

D - going to skillet steam some greens that are getting wilty on me with onion and carrot, half a baked potato, top it all with salsa, maybe an apple with a smidge of PB if I'm still hungry
I am looking forward to doing some cooking this weekend. I want to make a couple different soups.
My contractor showed up today and repaired/painted the deck. It had a couple broken boards. It looks great! He also left a dumpster here so I'm thinking that means he's planning to start on the family room soon. There may be an end in sight to the everlasting home projects!

I have been quiet for far too long.
Some combo of the blues and breaking my food/fitness habits. So I am working to get back into the groove.
Food today was decent:
B- coffee & cashew milk, low-sugar vegan bar (Nugo Slim)
L - 1 lb steamed spinach, small helping of garbanzo beans, steamed squash & mushrooms, fresh mango, Orgain protein powder
S1 - mango, Orgain protein powder
D - nectarine, small potato
S2 - Orgain bars & Zevia soda (my son got me to take him to Natural Grocer & I was bad & got treats for myself!)
Tomorrow will be a bit better. :-)
