    Thanks Mihani! So my bean/corn salad was yum...and my oatmeal. Later this afternoon, I'll have my roasted veggies with steamed broc and my rice.

    I am pretty pleased that I am just shy of one week without the frozen vegan options...and I survived! Especially, today...when I thought I had nothing to eat...I figured it out. I do need to make a bunch of potatoes in the insta pot to have those just in case.

    Better meal prepping on my weekend. It's really for those times when I am tired...knees are killing me and I cannot stand up. Motivation is fickle as Chelsea says. Be ready for those times when you are not feeling it. Make sure there is food ready to go.

    If you watch her youtubes...I say put them on all...she is always quoting and showing ATOMIC HABITS...if you do go to her channel, please subscribe and if you have vegan/plant based friends...get them on board as well.

    HER channel is so authentic and down to earth. She is a character. Ok...OK...I really am not her press agent...I just love her so...so completely opposite of the stylized, make up perfect, instagram ready youtubers out there.

    Her two little ones are just adorable...anyway, obviously she is my fav ... if you need inspiration, put her on as you are on your treadmill or doing the dishes...time will fly by.

    Actually, they are all my favs...this one she did without much in the fridge, which I appreciated, especially in light of what is going on in my fridge today.

    In so many of her youtubes, she talks about calorie density...and progress not perfection.

    Made it through the day on plan, but it was the hardest one so far. Not sure why but the cravings were intense and went on all day long. Will try out your version of hummus soon, Mihani. The pita pizza sounds good but that will have to wait until later on. One pita is enough to derail me so I'm staying away from bread for as long as possible.

    As soon as I post this, I'm going to soak garbanzos for my my tu-no salad, this time without salt. Having beans for lunch and dinner helps me stay satiated.

    B - blackberries, blueberries, homemade soy yogurt
    L - mixed greens, roasted broccoli, onions, jalapenos & summer squash, black bean salsa, green goddess dressing
    D - red lentil cauliflower curry, half a cantaloupe with a heavy sprinkling of cinnamon yum, good to the last bite!

    Ok ladies...my Friday...yay!

    Not sure about diinner for today:

    coffee BLACK day 3
    oatmeal, yogurt and blueberries
    iceberg based with my corn/bean salad
    might take a frozen squeezed.com juice with me...nothing else prepped.

    I love the frozen rice hack...but I think I am eating too much rice. So I just ordered smaller containers to freeze the rice in.

    Also, I think I am going to start making overnight oats with water.

    Watched some of Chef AJ on calorie density in the mid of night last night...I think I am doing oatmeal all wrong.

    I feel really good since trashing all processed food last Monday...but think I need to do some more tweaking.

    Happy Friday, Nance! How's the black coffee going down?

    I'm happy I made it through all of yesterday without snacking or adding salt. I started re-reading 'The End of Diabetes' by Dr Fuhrman and it sure is motivating. I think I just need to cycle through all of his and Dr. Gregor's books endlessly!

    Joe made up a batch of dehydrated apples last night and they are ready this morning. I had one to try them (yum!), but I think it's best for me if I don't get into them. I will eat the fresh apples instead. With cinnamon. I've always liked cinnamon but now I'm super into it on my apples and cantaloupe.

    I'm trying out a Ratatouille recipe tonight. We have lots of summer squash in our garden to use up and then some eggplant and tomatoes...I might even slip in some yams. I don't know if they go with the dish, but I have a hankering for them.

    B - fresh blueberries, nectarine, yogurt
    L - no-salt-added tuno salad over greens, tomatoes, few water fried mushrooms to hit my g-bombs
    D - ratatouille, greens w/ green goddess dressing, nectarine or apple

    I decided to blend frozen blueberries with my yogurt and then add fresh whole blueberries to that for breakfast. It turned out great! I noticed we still have some leftover Red Lentil Cauliflower curry so that's what's for dinner.

    Hope the coffee is still enjoyable, Magic. I got used to oats with water rather than plant milk a long time ago and actually prefer it that way now. What does Chef AJ have to say about oats?

    Carla, the blueberry creation looks delicious and very pretty too. I hope the cravings are better today. Last week I had a couple close calls. I want to stress eat when I'm at the office so weekends are easier in general.

    I ordered a mushroom powder blend today. We'll see how it tastes, but it will make it easier for me to get my 'shrooms in. From reading reviews it seems like most people mix it into coffee (which I rarely drink anymore) or soups. One woman commented she mixed it into her morning lemon water. I keep forgetting about lemon water in the mornings, and Dr. Greger always seems to say blend the lemon so you're getting the fiber so maybe I will peel and blend a bunch of lemons and freeze in ice cube trays. Then I'll leave a glass out next to my tea kettle to remind me to have a glass of lemon water with mushroom powder. Atomic habits!

    B - some of the cooked greens and veggies, oats with blueberries and chia seeds
    L - more of the cooked greens and veggies, 5 Mary's Gone Crackers
    D - big ol' salad topped with hummus and balsamic glaze, watermelon

    Horrible night's sleep...dang! Been up since two. Gave in...having coffee. Making oatmeal in my hotlogic...

    3/4 large zucchini shredded, 1/2 oats, 1 cup almond milk I've had this before and it is pretty tasty...will add frozen blueberries after cooked. I like the different temps...they thaw out pretty quickly...but the cold and hot is interesting to me.

    chef aj just says add more veggies to everything. LOL WATER + FIBER is her philosophy...EAT TO THE LEFT OF THE RED LINE!

    I think this is day 4 black coffee...it's fine. I save on time and money...time, I don't have to froth the creamer and wash out that gizmo...and money cuz the stuff is expensive...oh and fat and calories...win win win I'll survive

    I prefer oats make with milk...at least I think I do. When I make them fresh on the stove...water is fine.

    My bean corn salad was good. Mint and cilantro and Kalamata olives made it special ...I might have said that already.

    My area I need help in is when I steam broc for example...I am not that happy with it plain...I just have no clue how to make it taste aaaaaamazing. What do you all do?

    I think someone puts in the oven and roasts it a bit...yes?

    Hoping after oatmeal, I will have a good morning sleep to get back on track.

    Nance, I've been roasting my broccoli with a drizzle of balsamic vinegar. If you eat salt, I'm sure that would help as well. I started roasting a few cloves of garlic whenever I'm doing any roasting. leave the skin on. Comes out great, just give it a squeeze to get the insides out. Hope you catch up on your sleep!

    I lost 7 lbs my first week on plan! My blood sugar is also doing better...amazing for such a short time eating this way. Better fasting numbers and after-meal numbers.

    In re-reading The End of Diabetes, the message that it is the high nutrient density of the food on this plan that causes the cravings to go away is sinking in. The only downer is that it can take 3 to 6 months for this to happen. If I remember correctly, after about a month the cravings for me were mostly gone way back when I was truly following this plan last.

    B - cantaloupe, cinnamon, yogurt
    L - greens, tomatoes, tu-no salad
    D - fajita bowl with some roasted jalapenos from the garden

    Oh and Mihani, I reading your post I realized that I forgot to include mushrooms yesterday AGAIN! argh! Let me know how that powder works for you. I have some Reishi mushroom powder that I put in my smoothie for a while there, but a little went a long way...very strong taste. Maybe I'll try adding a little bit to my yogurt.

    oh and I forgot, Nance, I sprinkled Thyme along with the balsamic on the roasted veggies the first time and forgot it the next....i like it better with.

    Nance, hope you got some sleep. I like a drizzle of coconut aminos and some no salt seasoning before roasting my broccoli. Just have to watch as if it gets overdone yuck. I usually leave slightly underdone as they continue to cook a bit after removing from the oven and I don't want my leftovers mushy. I often eat broccoli cold as leftovers. The coconut aminos give it a slightly sweet flavor and helps the broccoli get caramelized in places. Yuuuum. Chef AJ is why I started eating veggies for breakfast so often. She is not a fan of smoothies. She has a video out there where she shows how much can fit into a smoothie as opposed to the whole veggies and fruits in a bowl, and no way you could eat all the stuff in the bowl but could drink it up easily in a smoothie. I get a kick out of her. So much energy and enthusiasm.

    Ahhhh, Carla! Those little produce bugs are adorable. Can't figure out the eyes. I think some are mini choc chips and others maybe currants cut in half? Woohoooooo on the better numbers!!!!! I think I usually hit my biggest cravings around week 3 to 4 so if I can push through that I'll be fine. We certainly have a lot of experience with making tasty WFPB meals by now, but mostly I keep it simple and don't do that much cooking. I still hope to try the entire 6 week plan from Hello Nutritarian one of these days. It's just too much prepping and cooking with my crazy work hours, but I really like the recipes I've tried from the plan.

    Yeah, I'm a little iffy about the mushroom powder but Dr. F only requires one mushroom a day to meet his goals. One of the reviewers said it tastes like pond water. I kind of wish I hadn't read that. LOL

    Anyway, I assume just a little bit of the mushroom powder will be enough to hit the GBOMBS goal and I won't have to fuss with the real ones unless I want to.

    Speaking of crazy work hours, I need to get up to my desk and finish a couple things that I couldn't get to today. I'm really tired of this and wishing away the next 8 years of my life so I can retire. That's sort of sad isn't it? Oh well...

    B - leftover cooked greens and veggies
    L - more of the cooked greens and veggies with farro
    D - big ol' salad topped with hummus and balsamic glaze, an apple

    By the way, I had frozen a batch of cooked farro a couple weeks ago because I couldn't eat it all. It freezes very well. Couldn't even tell any difference from freshly made.

    How was the pond water, Mihani? hope not as bad as described by that reviewer! I managed to remember mushrooms yesterday.

    I used a pastry brush to put a light coat of Dr. Fuhrman's Walnut Balsamic Vinaigrette on my roasted veggies yesterday and they turned out really good. I think I'll be doing that from now on. As a bonus there's plenty left for multiple roasting trays and for salad dressing. (Let me know if you want the recipe, Nance.)

    My 2nd batch of yogurt just came out of the IP and is cooling in the fridge. It is a little thicker than the first batch, but not a massive difference. I'll let you know if I detect any flavor differences from using the 'starter' rather than the prebiotic capsule.

    Today's plan:
    B - berry and cantaloupe salad with yogurt
    L - mixed greens, balsamic vinaigrette, tu-no salad, perhaps fruit
    D - fajita bowl and berry melon salad

    This is very new for me. NEVER have been a good water drinker. So, following the very hip lead of the young people I work with (lot attendants), I invested in a 32 oz Hydro Flask. If nothing else, the price of that dang thing WILL MAKE ME DRINK MORE WATER!

    Yesterday was day one...it was late in the day when it arrived...so only 32 oz

    Today...already had 32...on my second bottle. 64 is my goal for awhile.

    Salad looks awesome, Carla. Nom nom! The pond water was not bad but not exactly enjoyable either. I don't think I will try mixing the mushroom powder into my tea again. I think I'll try the suggestion I read to mix it with lemon water and drink it down. It doesn't seem like something I want to savor and sip for a while. LOL

    I came home early today. Some sort of cold, hopefully not the flu. I feel pretty yucky. Going to take some nyquil and sleep in my recliner for a while. Hopefully nip this in the bud. Way too much work to do to be down with a cold. Doesn't feel like covid symptoms to me. Being vaxxed I'm not super worried about it, but I know two people who got it after being vaccinated so I can't rule it out. Sometimes it really is just a cold, but now the second you say you don't feel well everyone thinks COVID!

    Took a shot of nyquil and heading to bed. Not feeling much like eating today but I'll have a salad or some soup later. I ate a little of the greens and veggies this morning.

    Ugh... stayed home today. So not good when my desk is so piled up, but I really didn't feel up to going in and didn't want to spread germs around the office. I think it's just a bad cold... sore throat, cough, stuffy. Had a very low fever yesterday for a while but that is gone. I have pretty much slept since I got home yesterday afternoon and feeling a little better. Going to try to eat a little soup and take a shower now.

    I have had this weird pressure in my head for the 2nd day in a row. Not sure what that's about.

    It's really smoky in the air here today, so we've got the doors and windows closed and the AC on. I'm so glad we have that option.

    Ruby got injured yesterday. Joe thinks it was when she and Radar were both 'fighting' over the same apple (in an orchard FULL of apples on the ground of course). It's not a bite but some sort of cut. Joe dropped her off at the vet and they are going to put her under and stitch her up. She'll be back later today and will have to be a cone-head for a while. Poor doggo.

    Carla, hope Ruby heals up quickly. Mine always hate the cone! That hummus looks really good I bookmarked it.

    I feel a bit better at this point. Had some soup and took a shower which both did wonders. Got grocery delivery since you can't go to the store with a cough. People would probably throw things at me or call the police. LOL

    Going to eat an orange then take another dose of cough syrup and back to my recliner. Been drinking lots of herbal tea and water today.

    Such a big smile when I saw Chelsea's YOUTUBE show up, Carla. HUGE Chels fan...huge. But you all know that! You know, Chelsea used roasted salted cashews in that hummus...you'll probably be switching that up. I only have raw, organic. Do let us know how it goes.

    Anyway, speaking of hummus, I made another batch I think Wednesday...best so far. I use 1/4 cup Tahini, 1/2 cup lemon juice in the recipe I follow. NO OIL of course. I added fresh mint (LOVE LOVE LOVE) and cilantro. But I backed off and not as much as before. Add ice water to thin. Here's the recipe I use...I think I posted it before. https://www.inspiredtaste.net/15938/easy-and-smooth-hummus-recipe/ I do peel my garbanzo beans. ONLY because I tried both ways (should never have peeled in the first place) and peeled is definitely better IMO.

    Also, made more yogurt. Walmart now carries 2qt Westsoy. And the Cultures for Health starter I use ...well, one packet is good for 1 - 2 quarts. Even more of a savings.

    Anyway, dolls...here's my menu... but first:
