Persistence makes all the difference. Never give up! Keep trying until you hit the right combination.

We eat plants. It's that simple. We also eat whole foods. That is definitely a goal of mine this month! Ditch the processed stuff...stick to whole foods.

Come join us wherever you are on your journey. You do not have to be 100%… however, you are headed in that direction.

What steps have you taken today to make YOUR WFPB GOALS REALIZED! Hint: It does not just have to be about weight loss. In fact, try and choose something OTHER than weight loss goals.

We do hard things. Enjoy the journey!

    Today, I cleaned out the freezer...all processed convenient frozen plant based foods were tossed. Did not even blink an eye. For me, it was time to make the leap.

    Also, going through fridge and making sure nothing lingers to get me off track. So fridge will also be cleaned out.

    Today's Menu: (this is the plan)

    coffee
    homemade juices
    pasta salad, Hight Carb Hannah (will post what I actually put into it later)
    air fried zucchini and yellow squash
    sugar snap peas
    watermelon

    Will revise before bed.

    Thanks for starting the thread, Nanc! You are rocking it going into May.

    I just made a big batch of roasted broccoli for the week. I am going to stick with IF and the plan is smoothie for breakfast (around 11 am), wrap with hummus/veggies/lettuce for lunch along with some fruit (around 2 pm), maybe a yogurt for a snack, and a big ol' bowl for dinner with lettuce, roasted broccoli, beans. I'll throw a few nuts in at meals for the healthy fats.

    I'm tired and down in the dumps lately. My goal for May is to STOP that and get my mind in the right place. Continue morning treadmill and get some strength training in evenings.

    Carla, thanks for the tips for using the frozen tofu. I really just froze it because I was not using it and did not want it to go back. I have three :o in the freezer and just bought a fresh one...lol...did not want to bother with the whole defrosting process.

    Ok, this is how today went:

    coffee
    carrot/orange juice
    two small baked potatoes plain
    a small bowl of the pasta salad
    oil free, air fried french fries. I love the food mandolin I bought to cut fries.

    Pasta salad: used Tinkyada penne

    added: cukes, which I seeded, cherry toms, Kalamata olives, red onion, red bell pepper, carrots, fresh spinach

    dressing: nutritional yeast, garlic powder, fresh garlic, tamari low sodium, fresh lemon

    Needed red pepper flakes which I am out of.

    It made a lot...which is good...will have for probably three days.

    I had a small bowl ... but think next time I will use organic wheat pasta

    Had a bit of watermelon...opened it up to cut up for tomorrow. NOT even close to what is grown here in the the summer! Think I shall wait til I see grown in the USA.

    That's it. All whole foods. I am happy. The kitchen is a disaster. I also made three quarts green juice.

    Mihani, feel better. Just think, your life is going to be so much better with your new gal. Hope tomorrow looks brighter for you.

    PS: I might add a can of chick peas to the salad. Make more meal like!

    Great job, Nanc! Your pasta salad sounds great. I think I'll give that a try with bean pasta for next week.

    I have set two goals for this month. First is to finish several books that I've started and never got back to. Second is to challenge myself to get to 100 crunches a day by the end of the month. Going to start with 25 and work up from there. The crunches in addition to the morning treadmill time should set me on the road to toning up a bit.

    Good job on your goals, Mihani. Hope today is extra special...day five for your new gal...she should be settling just a bit now...yay for both of you.

    Today's plan...pretty easy:

    coffee
    quart juice
    pasta salad
    watermelon
    sugar snap peas

    the end. no eating once I get home from work 7:15pm (let's make that a goal of mine...I get home at 7:15 the three day I work...no eating...or at least if I eat, it should be a piece of fruit or tea)

    I want to wake up tomorrow fresh and ready to hit the ground running so to speak.

    Day two of NO processed foods.

    Pretty good day at work. Got through some stuff. The new gal is such a big help.

    UP way too early again...oh well, stressing about it makes it worse. It is my weekend so I will just roll with it.

    Day three of no processed food...came home from work and did not eat...first time, I think FOREVER!

    No cooking today...pasta salad ready to go and juice is made. Next time I will add more veggies...like broccoli and cauliflower...just tiny florets, instead of spinach. The dressing was pretty good. I thought I would be looking for something creamier...nope, not at all.

    Today

    coffee
    1 quart juice
    oatmeal with flax, cinnamon, frozen blueberries and maple syrup...soy milk. Having it cold.
    pasta salad
    strawberries, watermelon, cantaloupe
    sleepy time tea

    Having zero cravings...feel the timing was right on my decision to ditch the processed stuff...head is in the right place.

    Carla, where are you ! We miss you !

    So, I am going to get back on the daily oatmeal train. I used to eat it like Dr. Esselstyn…raw with frozen fruit and almond milk. Right now I am going to use my organic Westsoy…just cause I’m too lazy to make almond milk.

    Also, on the agenda this weekend is to make homemade soy yogurt…Vegan Blueberry has a great recipe which I use. Easy peasy in the insta pot!

    I'm here! Glad you got back to sleep, Nanc. Hope your enjoying your weekend. Try the Dr. Fuhrman oatmeal. It's good and once you make it a few times, super quick and easy. I'll post it below.

    How are the crunches going, Mihani? Great goals for May!

    For May, I'm going to continue with intermittent fasting and work on being more active.

    I'm thinking of going somewhere tropical next winter for a few weeks to avoid the seasonal blues. I'm not sure if 2 weeks will offset a whole winter of dark & gloomy, but I'm willing to give it a try! :) I think I have my parents convinced to come with us. After a few years apart due to covid it would be nice to get a big chunk of time to hang out with them and make memories.

    oatmeal
    fruit
    spaghetti w/ red sauce, mushrooms etc and baked tofu

    Fuhrman Oatmeal
    1/3 cup rolled oats
    3 Tbsp cherry juice, unsweetened
    1/2 banana, sliced
    1 cup frozen blueberries
    a walnut or two, chopped to top

    Mix in your breakfast bowl (make sure you stir well) and 'nuke' for 2.5 to 3 minutes. Stir again and let set for 2 minutes. It will thicken up. So good.

    Hi y'all... another pretty good day at work. Things are just better all around with the new gal there. We all seem to have renewed energy and enthusiasm.

    Glad you got back to sleep, Nanc. You are really on a roll with eating right! I'm betting the cherry juice and water from the frozen fruit are enough to moisten the oats.

    Carla, that sounds like a fabulous idea to get away next winter! Hope you make it work.

    I didn't start the crunches yet because I was having back pain for a couple days. Feels okay today but giving it another day before I try that. Treadmill is getting done though.

    Food tastes so good right now. Not sure why but I'm just enjoying everything more than usual. Maybe it's spring finally appearing making me feel more alive all around. LOL

    Meals today same as yesterday.

    pasta with marinara with mushrooms, zucchini, spinach...in other words, over load it with veggies...using organic wheat penne

    fruit for snacks and dessert (strawberries, watermelon, cantaloupe)

    Mani (just basic nothing added) and pedi today...it's been since before surgery in January...I cannot do my own feet. So, looking forward to that.

    Nothing else going on.

    Maybe pool and sauna today B) ...did walk Lulu...short walk, but I am so sore from yesterday's PT appointment ...did lots of quad and glute work.

    No water, as Mihani guessed, the frozen blueberries and the cherry juice mixed all up before heating will moisten things up and cook the oats. Unstirred or poorly combined doesn't work. Stir before and after nuking, wait a few minutes and enjoy :) Pomegranate juice works as well. Is POM brand unsweetened? If so, you could get a single serving size bottle to try out the recipe.

    We're having almost the same dinner, Nanc. Whole wheat penne, red sauce heavy on the mushrooms, with onions and peppers and garlic. I wish we had some zucchini to add as well. I'm going to have baked tofu on top and a sprinkle of walnut parmesan.

    I'm enjoying my meals about the same as always (a lot!) but I am also feeling spring vibes here, Mihani. I feel uplifted and more positive overall. It's really this lifted feeling that made me start to plan a winter getaway.

    I love the positive effect your new employee is having on everyone and everything at the office, Mihani! What a great hire. Have you had time to think about your vacation plans?

    I've been having trouble moving forward with my art projects, but I finally rigged up a stretcher for smaller fabric pieces, so today I will get into sampling some techniques. 12 days until my natural dyeing classes start :)

    Added one pound of veggies to the 32 ounce jar of sauce…I have Classico in the house…sweet basil…but will be jumping up to this brand…Cucina Antica tomato basil. Better all around. Was number one on best and worst list of jarred sauces. https://www.eatthis.com/pasta-sauce/

    I added, small bit of onion, about five small carrots shredded, 8 ounces mushrooms, one whole zucchini diced.

    I had two servings of pasta… 112 grams. Perfect. I have enough sauce left for three more meals.
    I added a big handful of spinach to my meal today. Better to add the spinach fresh each time instead of cooking it in.

    Cancelled nails…late afternoon appointment…will reschedule when she has earliest appointment of the day. Probably after next week…when PT is finally completed!

    That’s my update for today. Probably only fruit and green juice for the remainder of the day.

    Y'all have me thinking of some pasta this weekend. Sounds great with lots of veggies.

    No vacation plans yet, but I'm sure sometime in June or maybe into July but no later than that! I just want to spend the week reading, napping, shopping. Probably trips to the zoo and the art museum. Haven't been to either one in years. Maybe do a big batch prep for the freezer. I do have hope we're going to get caught up enough soon that I can get away.

    Meals same again today. I enjoy the hummus veggie wraps so much it's easy to eat every day.

    Going to chill tonight. Want to do some reading on one of the several books that I have left unfinished, especially since I just got two new ones. LOL

    No pasta this weekend. I was browsing through the Oh She Glows Cookbook (the original) and realized it has been years since I have made the tex mex casserole. It is good plain or in a wrap with lettuce or to top a big ol' bowl of lettuce. I always left out the oil but will see if it's just as good without daiya and the crumbled blue corn chip topping. Maybe add a little nooch or cashew cream to get the cheesiness. Going to chop up some green onions and avocado to top when serving.

    I left work a little early for a hair appointment so I went to the store after for ingredients and now have no excuse to not make it tomorrow night. I don't cook very often anymore and I'm actually looking forward to it.

    Have to admit I am pretty happy with my gray hair. All the color finally grew out and it feels more healthy these days. I do have to get it cut a little more often because it gets crazy curly/frizzy now if I don't keep up on it.

    I am good with my gray hair too...it really kinda of just blends into my brown...there is no demarcation of where it begins and ends...sort of a woven look, naturally.

    Anyway, no time for your oatmeal today, Carla. I have some baggies made up of oats, cinnamon, flax...and they are measure out and ready to go. So I used those. Also, I have just opened up a 32 ounce carton of or maybe it's 64...yes, I think it is 64 ounces Westsoy organic soy milk. So, I must use that up within 7 - 10 days.

    Your oats are UP NEXT....after I am finished with the milk.

    My coworker, who I share this desk with...she works Tues-Thurs...she brings in bags of chocolates to share with everyone...and then there are leftovers all over the place. THAT does not interest me, but the crackers she leaves, does.

    When I say she has chocolates all the time, I am so not kidding...pounds of it...ALL THE TIME.

    Crackers and pretzels and bread are my kryptonite, Nanc. I try to avoid because I can't moderate.

    It has been a rough week with implementing new software. It was supposed to be done Tuesday but we're still waiting for certain things to be migrated and there is the whole learning curve. I am good with picking up quickly on new software and it is pretty intuitive so I'm not too worried about it, but it's hard to remember to use the new software and not the old! We'll be keeping the old for at least a couple months to be sure everything is carried over properly.

    I am going to make my tex mex casserole tonight I think. I was going to leave it for tomorrow but I have tons of work to do this weekend so I would rather have this casserole all ready to go and not have to think about meals. I picked up my salad goodies on the way home so I can use the leftovers on the casserole to top my salads for a few days and then I'll make another batch of hummus.

    I'm so excited ... we are booked for a trip to Mexico this winter! My parents are coming out for Mother's Day tomorrow, and we'll be talking it all over, but I think they are actually going to join us for part of the trip. That's hugely surprising because I think they can count the number of flights they've voluntarily taken on one hand. I found 3 VEGAN RESTAURANTS and 1 or 2 vegetarian ones all within walking distance (or short cab ride) of where we'll be staying. So excited about that. I looked over the menus and want to eat it all! We have a full kitchen too, so we will take advantage of that and do some simple, light cooking.

    So, as of yesterday when we booked, I am learning how to speak some Spanish and trying to lose 40 lbs!

    Speaking of weight, after the initial 9 lb loss I mentioned, I've been going up and down by a pound or two, never making any headway. Finally, today I can report 10lbs total loss. Only 40 more to go ;)

    Today is a cleaning frenzy kind of day. We've put it off all week and now my parents will be here tomorrow and it cannot be delayed any longer.

    oatmeal for breakfast, fruit, and I think we have enough spaghetti left over for one more meal.
    I'm making tu-no sandwiches with some fruit on the side tmo for Mother's day

    Yay, Carla! That is such a great idea and something to look forward to is always a pick me up. And woohoo on the 10 pounds down! I tend to do the same thing. Will lose 10 or so then I bounce around by a few pounds for weeks. It can be discouraging. I am pretty much stuck in the low 150s right now and really want to get down to 135 which is about where I should be. Maybe 130 ish.

    As I think I've mentioned though, I am fatter at my current weight than I was years ago at the same weight. I need to get back to some strength training to tone up ASAP.

    The tex mex casserole is good but not as good as I remember it. Not sure why other than the spice doesn't seem totally right. I ate some last night with corn tortillas. There is a LOT leftover so I will be eating that on my salads for several days.

    I actually enjoyed cooking last night though. I got into a pretty zen place with the chopping and stirring and baking. I rarely make recipes anymore and just throw things together but there's something satisfying about following a recipe, measuring and prepping.

    I am probably going to take a nap soon. I've been up since 5 a.m. Then I can get started on some laundry and work. My rep at the software company said everything should be in there by Monday. Woohoo! I plan to go to the office for at least a few hours tomorrow.

    Plan for today...
    B - ezekiel toast with arugula, sliced tomato
    L - salad topped with tex mex casserole
    D - same as lunch

    Will have an apple with a little PB and a bowl of berries with forager yogurt and cinnamon sometime today as well.

    Mornin' Ladies,

    I am heading to the office in a bit. Probably won't stay too long since I have plenty of work to do here, plus it's a nice day and I can have the window open in my home office and enjoy the spring air. But I want to get my desk cleaned up a bit before tomorrow morning so I can start the week off more organized.

    The Tex Mex casserole tasted a lot better yesterday than when it first came out of the oven. Maybe it just needed time for the flavors to meld. I made OSG cashew cream to top it. I adapted that recipe a long time ago for mexican dishes using lime instead of lemon and adding a handful of chopped fresh cilantro. It is so good that way! I had a big bowl of lettuce for lunch and dinner topped with slightly warmed leftover casserole, a dollop of the cashew cream, chopped green onions, and avocado. Yum!

    Plan for today...
    B - ezekiel toast with avocado, arugula, sliced tomato
    L - apple and blueberries topped with forager yogurt
    D - thinking of a wrap using lots of veggies and some of the casserole

    I haven't been as good with the IF the past week and will get back to that this week.

    Mihani, you probably made modifications to the Tex Mex Casserole back when you were making it before. I remember liking that recipe, too.

    G'day, mates!

    Sauce turned out fabuloso! The sauce, Cucina Antica, was recommended by High Carb Hannah...pure ingredients, no added sugar...tiny bit of oil 1 gram per serving...calories are 45. That is the lowest I have ever seen. But the taste is amazing. It came out to be #1 on Eat this Dont Eat that list of best and worst jarred sauces. Of course pricier that most, but dang good. I bought a three pack on Amazon. I think about $22

    The edit thing in our posts has been changed...thankfully. No longer just 60 minutes. I do use it...and like it.
