Oh and Carla... I totally forgot to give you a WOOHOO!!! You are doing great! And so with you on weather. We had weeks of rain and alternating warm and cold days. Felt like there really wasn't even a spring, now it's hot and muggy.

Totally forgot about the spelt berries on the stove for about 20 minutes too long and they were dry little pellets. Gah! So I am soaking another cup of them and will make the recipe tomorrow. Dinner ended up being a veggie sammich.
Managed to get a couple more hours of work done, finished my jigsaw puzzle, and got one load of laundry done. Energetic today.

I am into my fourth year of living vegan. 🌱💚🌱 Started for health reasons…STAYING for the animals. I now know too much…my heart would never allow me to go back to an omnivore diet.
I have been known to get carried away with too many processed vegan foods…GARDEIN was my guilty pleasure. However, just this past May 1st. (Three weeks ago) I did the hard thing and tossed all processed foods…frozen mainly. Still have some vegan breads and wraps…you will see those listed in my menus…but clean plant based eating for the most part… 100% vegan.
I do not not follow anyone’s plan…I count nothing …no macro nor calorie counting for sure. I just eat all plants and do my best to get in loads of non starchy veggies each day. I do measure some things…like oats for example.

Oatmeal…I eat it like Dr Esselstyn…1/2 c raw organic oats, 1/2 c frozen blueberries, flax meal, cinnamon, plant milk. Right now organic Eden soy but as soon as my new Vitamix arrives ( burned out motor on old one) , I make my own organic almond milk.
Trader Joe’s Lavash wrap…Trader Joe’s herb salad, avocado, red bell pepper, cucumber, red onions, fresh mint and cilantro, hummus.
Cous cous salad…inspired by CHEAP LAZY VEGAN YOUTUBE…will edit once I make it. Left overs for work tomorrow.

Spring, I’m 73…Rx med free…work full time as a receptionist as car dealership, three miles from home. Live with my little rescue, Lulu…schnauzer mix.
I had total left knee replacement this past January…very successful. Right knee will be next January.

Slept in this morning and a little out of sorts, not sure why. Got laundry done, made the spelt berries and lentils so those are ready to go for the recipe. Read for a while, took a nap. Now getting ready to finish making the recipe and will get on some work after that.

Not a bad night’s sleep. Happy about that…12 hour workday today and then my weekend. 35 hours a week (considered full time)…3 days a week. Sunday Tuesday Wednesday Thursday off

@mihani I love the starches too! I'm not sure how well I'd get by with the no oil thing, I do love to saute a lot of things in some olive oil if not eating them raw. But, when I do go no-oil, I tend to lose weight more quickly - it really is empty calories.
@Carla_wfpb I'm trying to be more vegan in the restaurants, there is usually at least one option that is or can be adjusted to be vegan.
@magic71755 When I'm trying to lose weight I tend to log all of my food to make sure I'm getting enough calcium and protein, and also to make sure I don't go over my calorie range.
I like how you all list your daily menus, doing something like that might help me get off the processed veggie food for the most part.

Yay for sleep, Nanc! I've been staying up too late too often and definitely going to bed early tonight.
Spring, it took a while for me to adjust to the no oil too but I've been doing this for so long I don't even think about it. I don't eat out often so I don't worry about oil when I'm at a restaurant, and I do have one special treat mac & "cheese" recipe that I make once or twice a year and splurge to include the oil because it is definitely richer with than without, although even then I use half what's called for in the recipe. If you do decide to go without any oil make sure you are getting some healthy fats with nuts, seeds, avocado.
If you read some of the major vegan docs they give compelling reasons to give up oil. I find Dr. Esselstyn and his son's Engine 2 to be the most "friendly" plan and enjoy the writing style of both Dr. E and Rip, but also like and learned a lot from Fuhrman, McDougall, Greger, Campbell.
Busy day at work as usual and going to chill tonight, get to bed early and be at the office early tomorrow. Just don't have it in me to start in on anything tonight.

Mihani - my first foray into veganism was through the 21-day vegan kickstart, found when I was looking into Dr Barnard and the PCRM. Their recipes are also no oil. It's definitely a healthier way to cook and eat (and the kitchen cleanup is so much easier without the splatter of the oil on the stove
)
I'm not too worried about getting healthy fats, I love avocado and plan on getting an avocado tree now that I'm in the South. I also love nuts and have a great recipe for a cashew 'cheese' sauce with really infinite ways to flavor it https://www.diannesvegankitchen.com/go-vegan-cashew-cheese/#recipe.
I love Dr. Greger and actually all of the vegan doctors and proponents. They all have such a compassionate aura about them, it's something to which I really aspire.

Spring, oh yeah! I knew I was forgetting someone. Dr. Barnard. I do put dijon in my hummus. It's super easy and has evolved over time, but basically 2 cans chickpeas (drain over a bowl to save aquafaba), about 1/4 cup lemon juice, garlic, dijon mustard, fresh ground pepper, spices. I don't measure anymore so hard to say exactly how much dijon maybe 3 or 4 tablespoons. Throw it all in the food processor and add aquafaba as needed until desired consistency. Spices vary but of the top of my head I know I've used paprika, cumin, coriander, chili powder, etc. It's all good. It did take a little getting used to it being so different from hummus with oil and tahini.
That cheese sauce looks great. I think I have everything needed on hand so maybe I'll give that a try this weekend.

Mihani, the hummus sound great, I love all of those spices, especially paprika.
When I make the cheese sauce I use just a small tomato although the recipe calls for medium. I find a medium one makes the sauce a bit too "tomato" tasting.0 -
Musical was great...just hit Broadway so it was wonderful to see it at our little dinner theatre
so early. Of course based on the movie (Ghost) of the same name.

FYI...so when I said I did not follow any doctor...(plant based of course)...what I should have said was I do not follow a particular doctor’s program .I take something from all of them. I have all their books...and then some. Documentaries that made the biggest impact was Forks over Knives, What the Health...and the Game Changers.
Favorite vegan YouTube influencer...Dillon Holmes, Well Your World...but I do watch them all and grab bits and pieces of ideas from each that works for me. Chelsae Mae is a close second...but her youtube channel is more about weight loss and no real emphasis on health. I love her quirky vibe and she is a huge fan of James Clear and BJ Fogg. Her podcasts are superb and I can highly recommend them.
Both Dillon and Chelsea are all about volume eating and recipes are more about process…and no DAILY entering of data into MFP or chronometer…which I appreciate . That works for me…not everyone. Eat mostly to the left side of the calorie density chart and everything just works out…you will get into a calorie deficit…WHICH IS KEY TO WEIGHT LOSS.
I am just finishing up my fourth week of no real processed vegan food...I love being part of a movement that matters.... for health (at almost 74, I am on ZERO prescription meds) , the environment, and most importantly for me, the animals.
MY WHY has been exponentially growing since 2019, when I went completely plant based. My next life I want to live on a sanctuary farm for rescued animals. However, maybe by then it will not be necessary.

The corn we planted sprouted this week. I don't remember if I mentioned before that we're going to do a 3 sisters planting, starting with corn, then planting beans around the corn, and finally, squash around the base to shade the soil and keep pests away.0 -

Y'all making me jealous talking about gardening. It's yet another thing I used to love to do that went by the wayside as work got so busy over the past decade.
I got stuff to make another batch of the OSG goddess bowl this weekend. That was wonderful this week for lunches on a big bed of lettuce.
Planning to spend a fair amount of time in the office this weekend and working from home. I have a project to start on and want to clear the decks so I'm ready to go next week. I still hope to get a week off in June but at least a long weekend if nothing else, and an entire week off WILL happen this year.

Happy Friday to all! (hope you are off to a good start to your work week, Nanc)
Gardening here is not all sunshine and roses Mihani LOL (had to use that saying since it fits so well with the topic.) Last year by this time we had strawberries and this year they've just flowered. It has been such a chilly and wet spring. We are way behind. The corn we finally planted indoors is ahead of the corn we planted weeks ago outside. Luckily, we don't have high expectations! If we grow some corn etc that we get to eat, we're happy.
Spring, we use raised beds here, too. It helps a lot with weed and pest control. This year we're making some removable hoops to lengthen the growing season (and to keep a bunch of wet dirty pots out of my dining room!). The 3-sisters crop we're doing this year is not in raised beds. We put cardboard down on top of grass/field, then added compost and soil piled on top. Super easy, but no idea if it will work well or not.
We found someone to take care of Ruby, Radar, and Kittens while we're in Mexico. That is the biggest load off of our minds as far as the trip is concerned. A co-worker we've known for years lives nearby and has a son that would be interested in living at our place and taking care of our animals. It is also nice that if there's a big snowstorm in winter, our co-worker will be around and able to help his son get out of the driveway. We're thinking of doing a week-long trial run sometime this summer.
Weight is up and down in small increments, but safe to say I'm down 15 lbs since I started. That leaves 35 more for target weight. Not that the number is super important, but it is an easy way to measure progress. We've been holding off on breakfast until noon lately and I've been busy with my natural dyeing classes so it has worked out fine for me.

We have two flower beds in the front of our new house, and had no idea what was in them. We removed the overgrown bushes from the one bed, so it's empty right now. I moved a couple of small plants from another area into the larger bed because they looked like they might be something - turns out they're lilies. They're beautiful, two of them are pinks, one yellow and one orange. I don't normally like lilies (they remind me of funerals) but these are such vibrant, pretty colors we're going to keep them.
There are also a number of bulb plants in the bed. It seemed so late in the season for bulb flowers (I'm used to spring tulips, daffodils, etc. in Jersey) I was going to pull them, but since the leaves haven't started dying back yet, I decided to wait. Good thing because I just saw some buds on a few of them today, turns out they're gladioluses! Can't wait to see them bloom and see what colors they are, I love gladioluses but never grew them in New Jersey because they have to be pulled up in the winter.
Now I have the opposite problem here in South Carolina, my absolute favorite flowers are tulips, but it doesn't get cold enough here over the winter for them to grow back each year. That means I have to plant new each year or pull the bulbs and keep them chilled over the winter. Haven't figured out what to do yet, but I HAVE to have tulips in my garden!0 -

Carla, any gardening is fun in my mind. So glad you found someone to watch over the critters! I actually wondered about that when you said you were going for a month long trip, but I knew you were thinking about it too. I think you've shared the Fuhrman oatmeal before but can you post?

Spring your flower pictures are beautiful! It will be interesting to see what else shows up as the season progresses. I love tulips too, but every time I have planted them something nipped the flowers off and I had a bed full of tulip stems. I finally gave up.
I forgot to mention yesterday that I signed up for a 2 week trial run with a "gym" near me. I have been intrigued, because it's more than a gym, but it's pricey so I hesitated. It's for women over 35, and they are all about fitness (small group or personal training classes only), nutrition, lifestyle, habits. I am hoping some real life coaching and accountability will help me. I have an appointment on Wednesday with the owner to do a fitness and goals assessment. If I like it after the trial I will figure out how to work it into my budget. The skyrocketing cost of gas, dog food and everything else isn't helpful.
I did tell her I'm vegan and won't even consider changing that, and she said no problem they have many clients who are vegan. Whew! I wanted to be sure they weren't one of those you have to eat chicken breast every day mindsets. LOL

Pretty flowers, Spring! When we moved here 5 years ago we had the same kind of surprise in one of our beds, Tiger Lilies! For some reason these ones get super tall, like over 5 feet. They are a very vibrant orange for the most part, and a few deep burgundy blooms if I'm remembering correctly. They would have already been blooming in a 'normal' year.
Your food is so spot-on lately, Nanc. Are you feeling the effects yet? Is work more or less busy for you on a long weekend?
I hope your gym experience is a good one, Mihani. Sometimes just switching things up for a while can make all the difference.
I have some initial prints from my natural dyeing class, but I think I will hold off posting pics for now since it is a multi-step process. Or I'll forget and post a pic or two tomorrow. Time will tell LOL

Mornin' all. Yesterday evening was very stressful. I worked at home then ran a couple errands. When I got home my dog's ear looked funny and when I checked it out realized it was a massive hematoma. He had been shaking his head for a couple days which I figured was just his allergies but the ER vet said it appeared to be a yeast infection in his ears. So 4 hours of surgery and $1,000 later I got him home and he was so stressed and anxious coming out from anesthesia. If I had it to do over I'd have had them keep him overnight because he's way too big for me to lift and I had a really hard time getting him out of the car and into the house. The strong young doctor carried him out but nobody here to help me with him.
Finally got to sleep after midnight. Got up a couple times to check on him and he was out. I've been up since 5:30 and he hasn't moved yet. I'll just let him sleep.
He has to wear this wrap around his head to keep him from flapping his ears or scratching at the sutures. He looks so silly! It is a little cockeyed right now so I'll fix that when he wakes up. I felt so sad for him last night, but I hope he'll be better today. He has always been very anxious after anesthesia.
I'll have to talk to my boss about working from home part days next week. I don't want to be gone so much when he's on pain meds and wearing this wrap. He's always been really clever at getting out of e-collars so I'm a little worried about keeping this on him for 2 weeks.

Aww, poor doggo! And a lot of stress and money. I hope he recovers quickly and that you're able to work from home, Mihani.
We ended up having Amy's chili with Ezekiel toast for dinner. and I had 2 of the 'caramel' apples instead of 1. I have to control that business, or I won't be able to keep apples in the house! Weekends are hard for me.

Fuhrman's Blueberry Oatmeal
1/4 cup rolled oats
2 Tbsp cherry juice or pomegranate juice (juice is important for flavor I've found)
1 cup frozen blueberries
1/2 ripe banana, sliced thin
~1 Tbsp walnuts
Stir well before microwaving for 2.5 to 3 minutes. Stir well after cooking. Let sit 5 minutes.0 -
