    Thanks for getting things started, Carla! Spent 8 hours in the office today. Came home and made a really simple stir-fry. Chopped up a bunch of fresh bok choy, threw frozen chinese stir-fry blend in the wok with spices and a little soy sauce, added the bok choy, nuked some TJ's frozen brown rice. Voila. Had leftover brussels sprouts and farro for lunch.

    No exercise today and I don't feel up to it tonight. I'll get in some treadmill and core time tomorrow when I get home.

    Mornin' all, only working half day today because I have a doc appt early afternoon. Going to be having oats with fruit and chopped arugula or baby kale in the mornings, a leafside meal in the afternoons, raw veggies, fruit and salads as needed for the next while.

    The forum got quiet all of a sudden! How is everyone doing? Hopefully all is well and everyone is enjoying the Spring weather.

    Sorry to hear about your continuing health issues, @Marilynsretired. You have probably already read Dr. Fuhrman's books, but if you haven't, I highly recommend them. He suggests cutting out all meat and restricting grains. He is has the most regimented sort of eating, but I believe that when things are really not going the way you want them to, it is worth the attempt. The End of Diabetes is one I refer to when I want to get serious. (and one I avoid when I don't feel like being that strict! It is a lot. But I do notice the difference when I follow it closely.) Sorry if you already know all of this, but I would want someone to make the suggestion to me if I was in a similar situation.

    I finally had my birthday breakfast out with my in-laws. I treated myself to a rather deluxe splurge involving too much sugar and white flour. My birthday was spent in agony with my tooth pain so we didn't do much. And it was my big 5-0. I'm feeling pretty bummed about it to be honest. When I turned 40 we also did nothing and it bothers me. I wanted to go on a trip or do something memorable. I made a cake and had family over but the candles didn't end up lit and no one sang and well. you know. a bummer.

    Now that the breakfast is behind me, I'm going to really prioritize getting back on track. I took the dogs for a walk when we got back to help burn off some of that sugar. Tonight we're having a mango curry over brown rice and after dinner I will let no more food touch my lips. The key for me is no evening snacking. Wish me luck. The addiction has a strong grip on me and I am not feeling in charge of things.

    On a positive note, the weather is getting better and the days are getting longer. Its going to be time for a second mowing soon enough!

    Carla, I totally agree about Dr. F. All the doctors like McDougall, Greger, Essy, etc. are excellent but Dr. F is strict and can take some weight off and address health issues fast. It's not easy to stick to the strict 6 week plan but the times I've done it I felt great. My big problem is the limited starches. I love my grains and potatoes, etc.

    I'm sorry your milestone birthday wasn't as much fun as it could have been. I remember my 40th I broke a tooth and spent the day going to dentists and getting a molar pulled, had a flat tire. It was NOT a good 40th birthday!

    I went out with some friends after work which was so fun. I've been 100% on it for over a month now so I had a cocktail and lots of laughs. Didn't eat and had a Dr. McD soup when I got home. Got a good report from the doctor and am inspired to stay the course. That's my mantra now. Stay the course!

    Back at it today. Not that I was really off plan yesterday but I know from long experience that cocktails have to be a very rare indulgence or I'm going to start sliding. Didn't get home from the office until 6:30 so I don't think a workout will be in the cards, but I have strength class tomorrow night. One more week until tax time is over and I just have to keep on keepin' on.

    B - oats with the usual goodies (mixed berries, mixed cherries, chia/flax, cinnamon, chopped baby kale, a few walnut halves, almond milk). I was using oat milk and have almond milk this week. Much prefer the oat milk for cereal/oats. Also usually use baby spinach but thought I'd try to start using more low oxalate greens.
    L - leafside golden garlic bean soup. I liked this one.
    D - steamer bag of california blend (forgot how much I despise frozen carrots unless they are cooked into a soup won't buy these again), a banana, and one brazil nut

    Strength class was great tonight! I had a couple weeks where I was really struggling and had to cycle down on the weight I was lifting. Felt stronger and was able to get through with heavier dumbbells tonight.

    B - oats with all the usual
    L - leafside madras curry bowl (this was good but should have let it rehydrate a bit longer there were some crunchy bits)
    S - apple with a smidge of PBB
    D - not sure because it's so late now and I'm not very hungry so maybe just a banana or munch on some raw veggies

    PT is going much slower than I had expected...not getting the results I was hoping for. But I am getting there...slowly. Just been in a funk.

    Doing my best to eat whole foods but do eat a few helpers here and there.
    More later...I promise! I hope everyone is doing well...I have a lot of catching up to do.

    Nice job with strength training, Mihani! I'm glad those Leafside meals are working out for you.

    A rainy day here so I will only be doing the obligatory 3 walks outside with the doggos and no yard work. Joe has been going in to the office to train a new employee and the dogs are mopey. At least they have their walks to look forward to.

    Forgot to hit Post, so an update: went on a nice long walk with the dogs while there was a break in the rain. Little to no wind. A good time was had by all :)

    I've got a hankering for a no-meat-loaf. I'm thinkin about this one https://www.veganricha.com/recipe-pages/vegan-lentil-quinoa-loaf/
    Anyone tried this one or have any loaf favorites?

    I have had some stomach upset and lack of appetite the last few days. Maybe from the antibiotics I had to take? will try some cashew yogurt later today.

    My yogurt turned out tasty.
    1 mostly full container Forager probiotic cashew yogurt
    blended with 2 cups of frozen blueberries and 1 banana.

    Then just put it all back in the container. Good flavor! would be nice with a bit of oatmeal or granola bits on top.

    Came back from PT...ate lunch and took a good 1 1/2-hour nap. My best sleep is after PT. I won't bother to bore you with how bad my night sleep has gotten. Only to say I am still sleeping on my back and I am a side sleeper. I just can't get comfortable on my side yet. My knee is not happy yet.

    Very sorry to hear about your health situation, @Marilynsretired. I agree with @Carla_wfpb ...giving Dr. Fuhrman's program a try would be worth it. But only you know what you can handle. I am just sorry that you are going through this.

    Man, @Mihani, looks like you are doing great with the ready-meal program...much better than I had done. Good for you. I know you much be so very busy right now. But wow, you're killing the weight loss program. That is super!

    I found a new gal on YOUTUBE...Let's Eat Plants...she is just delightful and really focuses on meal planning.     I am making a cabbage-based soup for the second time today...easy...really easy...and I modified it...NO OIL, of course...carrots instead of potatoes. Otherwise, everything else is the same. SOOOOOOOOOOO good. Makes a lot. Add potatoes or noodles or rice later...or NOT.

    Yes, @Carla_wfpb, the bike is in front of the TV. (I think it was you that asked). So that helps.

    My six-week appointment is next Tuesday and I am hoping I get the ok to get in the pool. I just do not want to risk infection...so I will follow my OS's advice to the letter.

    Lulu has been thrilled to have me home...she follows me everywhere....she is waiting til I get the okay to go on walks again. We will start out slow...up and down our block or around the block...not venturing out where we would come up to other dogs or God forbid coyotes.

    Ok, that's it for now...again, I am so sorry I was gone for so long. And I had March (thank you @Mihani ) dedicated to me. Not a nice thing for me to do.

    Yay, Nanc is back!!! I was getting worried again and so glad you are back posting. I'm so sorry to hear that PT is not going as well as hoped though. I know you have the strength to get through this and build back up. I will check out your youtube recommendation when life slows down a bit.

    Carla, I haven't ever tried a vegan meatloaf but I have had the OSG and fatfreevegan recipes on my radar for years now. I simply must try it one of these days. Way way back in my meat eating days meatloaf, mashed potatoes and peas was one of my favorite comfort food meals. I used to buy the Amy's meatloaf now and then but last time I had one I only tasted salt and didn't enjoy it. One drawback of changing your tastebuds... some things just taste awful after that happens. Yay for decent weather to walk puppers.

    Today was rough. I am seeing some cracks in my efforts at serenity. Going to be working all weekend but after next week we'll be through tax time and I can maybe take a step back and evaluate where I am in my life. Recent health scares have me a bit introspective about all that at the moment, and while everything appears to be fine so far I have a couple specialists to see in the near.

    B - banana, a few walnut halves and a brazil nut
    L - leafside lentil tomato pasta
    D - salad and a martini (out with friends)

    Going to bed early so I can get into the office and try to get some stuff caught up without anyone bothering me tomorrow. At least in theory, my boss could very well show up too.

    Instant pot oatmeal with frozen fruit (using directions from detoxinista* https://detoxinista.com/instant-pot-oatmeal/)

    Vegan sushi (leftover rice, cukes, carrots, avocado, bell pepper)

    Vegetable cabbage soup with noodles (made a huge batch yesterday, leaving out potatoes, rice, noodles, etc...add only at the time of serving...that way I can change it up...or leave it out)


    Watermelon 🍉! First one of the season

    Instacart has been a lifesaver! The first gal shopped at Spouts and did a horrible job...I called customer service...I had left notes with each item...they reimbursed me for all the horrible chosen veggies. SECOND gal/order a complete 180 degrees...she read all my notes, and stayed in contact with me thru text while she was shopping. Perfect order. <3

    The new gal I found on YOUTUBE Let's Eat Plants has a main focus on meal prepping. But different degrees. Not just meals. But produce. OR starches...or just the day prepping. She does not have a large following but she is so enthusiastic and clear with her directions that I am going to see if I can do this more...MEAL PREP. I still have 20 pounds to lose...this might help. basketsmileyff.gif

    *Oatmeal is done. 2 cups rolled oats. 3 cups water. Into an instant pot and mix. Close, close vent. Set to 0 minutes on high. Let naturally release ten minutes. Makes about four servings. Add-ins are added when serving. Microwave to heat when eating. I will add cinnamon, flax meal, and then possibly berries or banana, a teaspoon of runny peanut butter. Add plant milk to loosen.

    Yay, Nanc! Nice to see you. I have been having some poor sleeps lately so I understand where you're coming from, at least a little. I am waking up with hot flashes; just roasting in bed. I started moving to the guest bed to get cool sheets and then back to my bedroom when the next flash hits. But almost every time I wake up, my mind starts running amok and it is hard to get back to sleep. I am going through a lot of books this way, reading myself to sleep. At least the PT does double duty for you, healing your knee and helping you sleep! I will check out Lets Eat Plants

    Mihani, nothing like a health scare to cause you to re-evaluate things, huh? I hope you get some excellent and reassuring results. I think you are in the thick of your job, always busy, and it is hard for you to get the perspective you need. Now is the time. Book a week off at least. Your boss has been on at least 20 vacations since you last took a week off, am I right? You need and deserve some time away. Everyone at work will be REALLY happy to have you back on your return and they will better understand the tremendous amount of value and hard work you bring to the table.

    Plan for today is smoothie for breakfast, some fruit and blueberry yogurt with oats and walnuts on top, and Falafel with something for dinner.

    Off to do some fabric dyeing in the shop.

    Somehow, I missed @Mihani's health scare. Could you update me? I am so sorry.

    @Carla_wfpb I am very sorry to hear about your disrupted sleeping issues. It just ruins everything, doesn't it? I do hope it resolves itself soon.

    Horrible night sleeping again...but I am going to get in the shower and try to make something of this day. The warm shower does help to loosen things up a bit. I have about four exercises I need to do twice today, so I had better get busy. I won't be back to PT until Wednesday.

    The oatmeal was just ok. I need to jazz it up better. But it is made and ready for four days. I think I just like raw oatmeal much better. No prep is really necessary.

    Ok, off to shower and get into this day that is already moving along.

    I am looking forward to my sushi for lunch. So, yes, I will be making my day deeeeeeee licious! Y'all do the same.

    Carla, ugh hot flashes! I hit menopause early and was pretty well done by mid-40s. I think my brain has blocked most of it out but I do remember the waves of heat at times were awful.

    Oh falafel! I love that stuff but I think I only tried making my own (baked) falafel once and it didn't turn out as well as I hoped. I will have to try your recipe.

    Nanc, hopefully nothing to worry about just some odd symptoms but my doc isn't too concerned just have to get a couple tests.

    I'm with you on preferring raw oats. I usually mix mine up in the mornings and take to work. With the addition of frozen berries I set them on my desk until they are fairly thawed and eat around 9:00. If I want cooked oats I go with steel cut.

    Spent about 5 hours at the office, hit the grocery, home and going to take a nap. Working from home tomorrow woohoo! That was my main goal today to get enough cleared off my desk that I wouldn't have to go back in there tomorrow. I'll do laundry and salad prep tonight or tomorrow.

    B - leftover cooked veggies, a banana, a few walnut halves
    L - leafside sweet potato dal soup
    D - going to splurge on a sammich... baked tofu, lettuce, tomato, spicy brown mustard, red onion, maybe some fruit

    I slept close to 12 hours last night. I'm just flat out exhausted. Didn't get up until 8 am and have laundry going. Need to prep salad veggies and roast broccoli. Getting ready to eat a late breakfast/early lunch (sandwich) while laundry dries then I'll get up to my desk for the rest of the day.

    I will also have to try out the overnight oats you gals make. I do love my cooked blueberry oatmeal but I'll never know what I prefer unless I try it!

    Unfortunately I ended up reading quite a bit in the middle of the night again. I'm reading this series of I-don't-know-how-many books that is okay but not great. They are conveniently packaged together as one large kindle file so I can read one after the other in order without having to search to find out which one is next in the middle of the night.

    I have some dyed fabric samples going through the wash right now. The results look interesting but I won't really know until they are washed and hung to dry. The experimental dye process leaves a lot of dye behind so I will end up doing some more dyeing this afternoon to use it up.

    Morning, ladies! Lots of sunshine here...which I have no complaints. I had been so cold since surgery, so am fine with the higher temps.

    Hope everyone had a nice Easter. I did not make my sushi...had mock meat instead with cole slaw and applesauce.

    @Carla_wfpb I don't have overnight oats, instead just raw oats, with cinnamon, flax, frozen blueberries and today, homemade almond milk. Oh, and a sprinkling of Grapenuts.

    So, today's plan...

    coffee with np
    oatmeal, raw with the add ins
    sushi
    cabbage soup
    watermelon
    homemade muffin and tea
