Magic - what happened to co worker??? My friend the Vet says the more dogs you have the more the love is spread thin. I think 2 dogs work for us because we can give each attention. Both my sisters have only 1 dog each. I guess it just depends.

Card making workshop today. 5 hours. I met the most lovely people. We were suppose to bring snacks to share I bought these small plastic cups with lids from Walmart. I filled 1/2 with red and green grapes. The other with nuts I roasted myself in air fryer. Most of the snacks were fattening or sugar laden (bag of Cheetos?) Several of these women are morbidly obese. I feel so sad for them because they are very nice people. Next big workshop will be in January.

Nanc, I liked having 2 or 3 dogs and they kept each other a lot of company when I was at work, but the way my job has become overwhelming over the years I don't think it's right to get another dog until I retire. I hope that will be in a little over 5 years from now but we'll see if I can afford it.
Slept in a bit this morning but our client isn't coming in until noon (couldn't get her in any other time and we have a deadline coming up) so no real rush to get to the office other than I have lots of other work to do as well. I ended up napping too much yesterday and only got in a few hours of work. Did manage to get laundry done but didn't cook.
I think I'm going for another simple week. Oats with fruit or smoothies for breakfast, bean and veggie soup and/or salad for lunch with fruit, salad with cooked veggies for dinner.

The coworker was not doing her job and got fired. Prior to getting fired, I tried talking to her to explain what she was doing wrong...she would not listen. I had nothing to do with her firing...that decision was made by the GM and the Controller.

Got 4 or 5 hours of work done at the office, got my hair did, car washed, grocery. I will cook tonight! I've been procrastinating too much lately on the things I have to do to stay on track eating healthfully. Not today! I am making roasted broccoli and mini peppers for my salads, and I have bag salad mixes and cocktail tomatoes, a package of cole slaw veggies (these are great added to salads or wraps for extra flavor and cruciferous crunch). Plus a big batch of greens with mushrooms, onions and beans. The neglected split pea soup is getting put off once again. Also got tofu but I will likely put that off until later in the week or next weekend.

Not much going on today...cept making two juice recipes: carrot/apples/lemons AND super green/cukes/celery/apples/lemons. All for work, which is where I tend to eat the most. The green juice gives me so much energy...looking forward to being back on it.

Mihani - Are you doing anything special with the tofu? I seem to be in a cooking rut lately but card making has been a bit more creative. I think if I was gong to pick up a new hobby knitting would be it.
Marilyn I like that post. It is all perspective! Especially with food! I don’t see not drinking or eating certain foods as deprivation anymore. I look at it as what can make by body stronger and healthier. Adding more fruit especially a cut up apple and eating it throughout the day seems to keep my blood sugar stable and energy up.
My friend from Italy arrives tomorrow. She has a Veterinarian conf. For CEU’s over the weekend here in SA. It will be lots of long walks, museums and good food. . Hope CB and I can keep up.

I should try juicing again, Nanc. I do like really green juices and the place I used to be able to get them closed down.
Donna, I usually just bake tofu because it's easy. I press, slice, dredge in coconut aminos, throw the slices on a baking sheet lined with parchment paper and sprinkle with whatever spices appeal (TJ's 21 seasoning salute is excellent on this) then bake at 400 from 20 to 30 minutes. I like it a little more done and chewy but there's a fine line between chewy and shoe leather so I have to watch pretty closely after 30 minutes.
Sounds like you're in for a fun time with your friend visiting.
I got all my prepping done. I ended up making my usual pot of greens with 'shrooms and onions into more of a thick soup by adding a couple cans of beans (one garbanzo and one cannellini) and a can of diced tomatoes and a carton of veggie broth. Used garlic, cumin, paprika, coriander, turmeric. It turned out delicious and will keep me in lunches all week.
Have a watermelon to cut into tomorrow night.

The enclosed patio project has turned into a nightmare. Long story short, I am no longer working with the designer, who repeatedly made promises he could not keep...in one word he is a liar.
Still going through with it and working with the customer advocate...who is helping get to people who will follow the guidelines set forth by my HOA. Yes, I know HOAs suck, but this is where I live and was able to afford a small home.
Spent most of the day in bed with a headache...first one since going vegan in 2019 (other than Covid Headache). The whole thing is a mess...luckily there is a customer advocate who is working to make everything better. And canceling is not an option, well it is, but I would lose a big big chunk of money. I thought I made it clear that I could not go forward with the project until it was okayed by HOA, but I did not get that in writing. Idiot me.
Did not make juice. Did not to jack S#&*#!

Nanc, I hope that now that you have a customer advocate everything goes smoothly for you. It probably doesn't seem like it now, but once all the dust settles (literal and figurative) you will be able to use your porch more and will love it. As far as the dog question, though you've already decided not to get another for now, I want to add that 2 dogs seems like it won't be much more work than 1 but I find that not to be true. And ask me about the thousands we have spent on emergency vet visits because even when they get along, they still compete and race around together getting injured.
Donna, I hope you are having a lovely time with your friend from Italy. Your kid card is fantastic! Funny how the creative juices just ebb and flow for different types of projects.

A switch has been thrown in me and I no longer can stand the thought of any of our previous go-to meals. They were in the rotation for years. I hope I can enjoy them again because they are easy and healthy, but for now, no way.
I tried some new recipes yesterday and they are okay. If we make them again, I will do some tweaking. I made Charro Pinto Beans, cauliflower taco 'meat' and a Mexican rice recipe that Chat GPT gave me. The rice had a bit too much liquid but other that everything turned out pretty good.
I also asked ChatGPT to come up with a WFPB no oil menu plan with the theme 'Bowls' and to coordinate the meals so that recipes could work for more than one day. Just on the first try it did pretty good. I'm sure with some added instruction it would become useful for quick meal plans. And now that I'm thinking about it, I could also tell it to give me the grocery list, too.
Radar's tail is doing good. He had the stitches out and now we just need to wait for the fur to grow back. He does have a sore paw though. He races around on our walks at full speed but then at night when he gets up for bed he isn't putting any weight on it. Ruby, for once, isn't the one that is injured.

Carla's back! (Happy Dance) missed you Yay for Radar feeling better and able to wag his tail proudly.
I get the ugh on some things you could eat every day suddenly not being appealing. Some weeks I prep my greens and beans and they go to waste because I barely eat them, but other weeks I eat them up and love them! I think the soup that I invented this weekend will become a go-to for a while. Luckily I never get tired of salads as long as I'm mixing up the veggies (raw and cooked) that I add and the dressings.
Sometimes the prep is the problem though. I just don't enjoy cooking and prepping like I used to, and I don't think that would be any different if it wasn't WFPB it's just a stage. My favorite knife got a notch in it and had to be trashed so I ordered a new set of knives and that kind of got me motivated to prep over the weekend to try them out. Although I was petrified by the number of people who left reviews saying they are sharp and they ended up in the ER for stitches. I was very careful.
A couple weeks ago someone asked me "don't you get tired of veggies and beans?" and I thought about it and honestly replied nope. What I was tired of was the endless days of skinless boneless chicken breast and fish before I finally went full vegetarian. But even then I was eating a lot of "fake" stuff and since going vegan I don't eat the fakes often. When I think about foods I crave it's mostly veggies and fruit and admittedly, the starches like rice and bread, and the crunchy salty. Oh those PB pretzels and hippeas and blue corn chips! LOL
Nanc, I am glad you have a rep who can help you with the patio issues. I agree with Carla, it's a PITA now but you'll be so happy when it is done. Hang in there, and you and Lulu will be relaxing in your new space soon. Hope you can manage the stress of it all and avoid more headaches though. Hang in there!

Good news about your patio, Nanc! How do you get a customer advocate? I haven't heard of that before but it sounds amazing for any renovation type projects. They always seem to go awry at some point.
Mihani, I too got tired of boneless, skinless chicken breasts. I remember when I was at work having my lunch I would polish off the salad portion and if anything was left behind it was the chicken. I think what people don't realize is that not having meat or dairy doesn't really limit the variety of flavors. If anything, you branch out and end up with more variety, texture, and flavor.
Last night we put all of our Mexican ingredients into a wrap and toasted it up in the oven. Yum! The only thing it was missing was the yogurt that I use in place of sour cream. Tonight we're doing a repeat.0 -
Carla, I've become a master at seasonings since going vegan. I do have occasional fails of course, but mostly I can throw a bunch of stuff in a pan and cook it up and it's delicious. You do have to learn a new way of cooking, and I had rarely used cumin a decade ago but now it goes in everything.

I'm going to clean out my car tonight. Bunch of crap on the back seat floor that should have been tossed or put away a year ago. I'm on a mission to quit procrastinating on every little chore around the house.
Seriously enjoying my greens, beans, mushrooms and onion soup. I've been eating a huge bowl for lunch every day and it is keeping me out of the snack cabinet at work. Been eating salads and sometimes baked beans for dinner. I discovered that Amy's brand baked beans are really great and not too sweet, but they do have a little oil. I need to look for a copycat recipe and try making my own with no oil. The couple recipes for baked beans that I've tried so far have been gross so maybe looking for a copycat of a canned variety I know that I like will be helpful.
Breakfast this morning was an ezekiel muffin and munching on some of the roasted broccoli that I made for salads. Seriously could eat broccoli all day long. I'm a little weird, I know. LOL
Oh, and I have been using a little bit of tahini on ezekiel muffins or toast for the past month or so. Better than earth balance and better for me.

birthday potluck today...nothing elaborate...I am bringing Trader Joe's Veggie Fried Rice...I pass it on as my own...make in here and then it keeps hot in a Large Hot Logic. Easy and delicious. Oh and I add some edamame to it.

Hi all, had a fun evening at a chamber orchestra concert. I'm making tiny little efforts to get out and do some different things now and then with actual friends. All I ever see is my boss, co-workers and clients.

Co-worker's bday pot luck was nice...I kept away from most stuff, but did have some treats...my rice and I also brought pb filled pretzels from Trader Joe's...they were so good. Can't buy again until Christmas potluck. Oh, and someone brought a fruit tray that was actually deeeeeeeelicious. Cantaloupe was so sweet.

I was reading a blog that suggested throwing a handful of grape nuts in your oats for a crunchy treat. I tried it this morning and wow it was good! Like a dessert with the oats, grapenuts, chia/flax, berries, splash of vanilla and a few chopped walnut halves. I just used water enough to moisten everything and let it sit a few minutes to soften up a bit. Yum! Go to treat. Note it's the original grapenuts not the flakes which have oil and sugar.
Got out of the office early, hooray! Stopped at the small grocery and got stuff to prep for this week and more bag salads. Also stumbled across a tzatziki dip that is WFPB and bought a container https://www.goodfoods.com/product/plant-based-tzatziki-style-dip/ so now I have to find a good recipe for falafel.
Carla, didn't you have a baked falafel recipe that you really liked?

Plan for the weekend is lots of work that I brought home, laundry and a little housework, prepping and cooking. I have broccoli and mini peppers to roast (because of course I do), stuff to make another batch of the greens and beans soup I invented last weekend, and I really hope to get around to the split pea soup that I keep putting off. It would be nice to have in the freezer for easy meals later in the week when my other preps run out. I have a couple containers of lentil soup left but I like to have a variety stocked in the freezer.

@Mihani ....I have been putting Grapenuts in my oatmeal for over a year...haven't posted lately, but yeah, a total game-changer. I eat my oats raw...so it's oats, flaxmeal, fruit, almond milk, then I sprinkle the grapenuts in as I eat, so they do not get soggy.
So, I have a ganglion cyst on the top of my left foot...has NOT bothered me in years...today, woke up in pain...so no walk, yet, with LML...going to see if a warm compress will help.There's not much exciting going on...once my foot feels better, I can walk LML, clean, and do laundry. Pretty exciting stuff, eh?

Ugh! This has been a struggle this week. Had fun with her all week then Friday a friend of hers who invited herself this weekend to see our mutual friend has been difficult. My friend has been a vet conf from 8-5 Friday and today so brooks and I have been trying to entertain her. She has been very critical of me and sweet to Brooks. Then competes for attention from our friend. I don’t play those games so last night I went to bed very early. In my room now “taking a nap” Ugh. Icky.
Despite the stress I finally reached the big 60 plus 1 lb. !!! 61 lbs gone. 39 more to go until I reach my goal weight of when I was in HS!going out to dinner to Mexican restaurant tonight. . Going to have mushroom and spinach enchiladas on corn tortillas.0
