Loves - The meringues are beautiful!

WW - good for you on the bars! I like your plan - I kind of do that with muffins. I'll bake a dozen or two of 2-3 different kinds and freeze them. Then take 2-3 out at a time. Without preservatives, I've found they don't keep very long. I wonder if you could do the same with bars?

Pix - it's hard to make hash look good! The pork chops, however... yummo!!!

Thanks for keeping up this thread! I can't wait to cook again!

A very linear dinner from the weekend. Our favorite spice crusted salmon with oven roasted asparagus and fresh corn.

Nikkie, I made the ancho chicken thighs tonight and they were fantastic. The pics are taking forever to upload, so maybe I'll post them tomorrow.

L*oves, the meringues look great! I love to make meringues. I think I need to try making some cinnamon ones.

Grilled Chicken Thighs with Ancho-Tequila Glaze (Cooking Light). These were fantastic. I didn't have any agave syrup so I used the same measure of half honey and half maple syrup. It was raining, so these got made on an indoor grill pan on the stove-top (my old dinner party buds sent me a gorgeous Le Creuset grill pan for a wedding gift). I'm sure on the charcoal grill with some wood chips would be even better. Definitely a make again recipe.

Roasted Mushroom Quinoa (Clean Eating). I made this with the above chicken and I liked it but hubby thought it was bland. He has never liked quinoa, though. I added extra seasoning but even I admit that the flavor is a bit subtle. I think this would be nice with some grilled chicken for lunch at work. I like that you can eat it cold. The parsley gave it a nice freshness.

My Sweet Potato and Turkey Sausage Breakfast Hash. That other photo was way too ugly. I added chopped kale (wilted in skillet) to the roasted sweet potatoes, turkey sausage, onion, spices, and maple syrup, then added fresh parsley after cooking. I make a big batch, then divide into containers and freeze for a grab and re-heat at work breakfast. There isn't a lot of volume but it is filling with nice protein and slow carbs. This past weekend I poured a beaten egg over the hash and cooked it in the microwave, stirring every thirty seconds. It cooked great and the egg held everything together. It added extra protein and made it even more filling, though I had to fight my toddler for it. I finally made him his own bowl because he was eating all my sausage!

I love Quinoa so I would have cobbled it up!

I don't have a picture but I made my first pesto last night! Sniff sniff, I am crying because it was sooooo good and I wondered at that moment why I ever buy it at the store. It was sooooo easy peasy too!
I used it as a spread on my eggplant sandwich....I took a couple fingers bc it was sooo good. Didn't miss the meat at all. I personally think the garlic makes the pesto! Ha!!!!!

WW, of course the garlic makes it, lol. I never liked pesto before, but it was good in those chops so I plan to try it more often.

Clean Eating Blueberry Crumble Muffins. I made these with regular whole wheat flour rather than the whole wheat white flour it called for (because it's what I had) and they were good. I worried it would be too heavy. Just remember to let the batter rest after you add the liquid so you don't get tough muffins. This is a good grab and go breakfast to keep me from the drive thru on days I need a quicker breakfast than my usual sweet potatoes and suasage.

Cooking Light Cheddar Cheeseburgers with Caramelized Shallots. Yum. The shallots were fabulous. I used my porcelain coated cast iron skillet instead of the plain cast iron one and it really made clean up easier. Plus, any excuse to cook in a gorgeous old pan from Belgium, ya know? I scored it for $3 at an estate sale. Love it.

After a long hiatus... food pics!

A friend and I attended a fabulous picnic called Fete en Blanc. The location is announced a few hours before the meetup, and everyone wears white - along with fun hats and fascinators - and the tables people bring are decked out. Half costume party, half hoity-toity party... alll fun!

My pics from the event can be found here, if you're curious: http://www.flickr.com/photos/nikkiecanuck/sets/72157631011217296/

And here's more info about the event itself: http://feteenblanc.wordpress.com/our-story/

The food pics, however are RIGHT HERE:

    fetefood.jpg

    1. Appetizer: Ricotta with salt, cracked pepper & honeycomb (spread on crackers)
    2. Appetizer: Lemon, garlic & rosemary white bean dip with jicama and zucchini. Smoked gouda and sharp cheddar.
    3. Main course: White lasagna with garlic cream sauce, zucchini, caramelized onions and turkey Italian sausage. Simple lettuce salad with wine-vinegar/oil dressing.
    4. Dessert! Store-bought stuff. We didn't want a lot of treats on hand, so bought bits of this and that. Key lime bar, Mexican wedding cookie and some shortbread cookie with raspberry filling and lemon icing.

A great time! Great food! Interesting people watching! :)
