Let's see if I can remember all the things in these. I wish they were more colorful :ohwell:
Pumpkin pie- We repurposed our pumpkin "pudding" for the filling. Pumpkin puree, coconut milk, pecans, almond butter, and chia seeds. Crust is just assorted nuts and seeds, with a little butter, one egg, honey, and almond milk.
Threw this one together one night with leftovers. Smoked salmon pieces in a brown butter sage sauce, sautéed spinach, and garlic sweet potatoes.
Roasted chicken (we always have a few frozen, whole chickens)
This was about 5 fillets of smoked trout (that a friend gave us after he caught them up in the mountains) and salmon. We still have leftovers, lol.
Smoked salmon and trout with lemon pepper kale chips, roasted sweet potatoes, and fried onion straws and sweet potato skins.

Not a recipe of my own but I just made an awesomely rich caesar salad and dressing using this recipe:

Super tasty and very quick to make. Didn't have any chicken so toasted some walnuts instead and used a little fish sauce in place of the anchovy. Great recipe for those aren't really a fan of salad :-)0 -

Chocolate avocado tart from last night.
Here's the recipe-
Chocolate Fudge Crust Ingredients:
1 Cup Pitted Dates
1 Cup Slivered Almonds
1 Tsp Vanilla Extract
2 Tbsp Cocoa
Chocolate Avocado Pudding Ingredients:
4 Avocados
1/4 Tsp Salt
1 Tbsp Vanilla Extract
4 Tbsp Agave (Maple Syrup, Honey or Stevia)
2 Packets Stevia
1/3 Cup Natural Cocoa
1/2 Cup Melted Dark Chocolate Chips
We prebaked the crust a little, but it can just be frozen too. Then just poured in the pudding, froze, and topped with shredded coconut.
We halved the recipe, and in the crust, we also used figs and pecans. We didn't have dark chocolate chips, so we melted cocoa, coconut oil, and a little butter to substitute. Also used raw honey instead of agave. So rich and filling. Very dark chocolate taste.
