    The best, most succulent and juicy lamb steaks I have EVER tasted with sweet potato wedges.

    Frozen bananas with a whole coconut-lindt bar melted over them.

    Yum, I have only tried lamb a handful of times in my past but looking at these pics I may need to delve into that again!

    Also, I've seen a lot of people talking about freezing bananas and I still haven't done it yet! time for a weekend treat :)

    Here's some eats from the past few days - been hectic, due to Uni, and kind of a struggle to prep meals and get the calories in, so nothing all that fancy.

    Ground up (with my meat grinder - awesome buy, btw :D) oxheart/lambliver nachos with guac and gherkins. Mixed in a crapton of veggies with the mix this time round, so I have enough leftovers for the next couple of days.

    What's the secret to the cottage cheese and berry sludge? I was thinking just heat the berries to get some juice flowing.

    That... looks... delicious. I've been thinking of doing something with chicken breast myself, maybe a "Primal Double-down". i dunno. :P

    As for the cottage cheese sludge, it really couldn't be any simpler: step one, empty full fat cottage cheese (tastes waaaaay better than lite) into a bowl. Step two, pour berries of choice onto cottage cheese. Step three, stir the mix.
    Done. :D Add some sweetener if you like or enjoy as is.
    Tbh, it's the same as my Cottage Cheese ice cream recipe, just without the blender; been a little too busy lately to make stuff like that.

    Salmon fillet on white rice with assorted vegetables. I've been craaaaaaving salmon for a while now, so this really hit the spot.

    Homemade coconut ice cream on frozen bananas covered in a drizzle of honey. Honestly, the ice cream was fantastic - and I whipped up a big batch on Sunday so i don't have to worry about desserts throughout the week, I can get at least another three generous servings of the stuff. :D

    Leftover salmon becomes Sunday morning brunch: salmon, artichoke & spinach fritatta w/ easy blender hollandaise

    edited to add: Hollandaise is great for fritattas & omelets, b/c you use the yolks for the sauce and then you can toss the extra whites in with your fritatta--no waste! I use butter in my hollandaise, but I think I've seen some recipes that use coconut oil instead.

    Ox heart steaks fried in butter alongside a big dish of roast sweet and white potatoes, garnished in homemade goat feta sauce.

    Chocolate coconut flour brownies and raspberries. These were freaking delicious.

    Bacon and Sweet Potato Crustless Quiche

    Preheat oven to 350deg

    10 Organic eggs
    1 lb Canadian Bacon wedge cut into cubes
    1 lb diced Sweet Potatoes
    1/2 Yellow Onion
    1tbsp Coconut Oil
    2 tbsp Cinnamon
    1 tsp sea salt
    1/4 cup Raisins

    Cook the onion in Coconut oil for a bit and then drop in the potatoes. Once the onions are cooked dump the bacon in and saute for a few minutes. Dump into a coconut oil coated casserole pan and whisk the eggs with cinnamon and salt. Pour into the meat/potato mixture and then drop the raisins all over the mix.

    Put into the oven for 25 minutes and check to see if eggs are firm yet. Mine usually takes 30 minutes. You can poke the center and if it is springy it is done.

    Nice mix of sweet and salty with the cinnamon and raisins, then the salty kick of the bacon. It was awesome! Fills you up too and is good for you.

    What the heck. My pics will not show up. I even edited it and tried it again......I will work on it and see if I can fix it. I don't know, I have posted hundreds of photos on forums and never had them not show up before. I have tried it 3 times and they will not show up.

    Any ideas?

    You need to put the bit in brackets in lower case - img instead of IMG.

    Nope, had it in lower case the first time I did it. I then tried them again and no go and then I used the auto copy IMG link from photobucket the last time.

    Let me try and upload them to a different account.

    i'm in the midst of a Whole30, so ingredients are pretty strict, as is form. still managed these delicious meals :

    I'm proud of this one! It's snapper braised with orange, cilantro, coconut aminos, ginger, and garlic over steamed bok joy. In the little bowl is julienned chinese squash, berries, papaya, and mango tossed with cashew butter. :bigsmile:
