    Today I made flax crackers for the first time. OMG they smelled so yummy while they were baking. Then, I saw a link on FB to a recipe from Hellman's Mayonnaise for Jalapeno Guacamole Dip. I can't stand anything spicy, so I left out the jalapenos, and GOODNESS it was good. I'm sharing the links below to the recipes--I'll be definately be keeping these recipes.

    I made a delcious shepherds pie the other day using cheesy mashed cauliflower as the topping. Comfort food to the max!

    -1 pack lean lamb mince/ground lamb (Approx 450g/1 lb)
    - 1 cup lamb stock (I made mine using 2 lamb stock cubes dissolved in boiling water)
    - 1 small red onion
    - 2 cloves garlic
    - 1 tin chopped tomatoes
    - Few dashes of Worcestershire sauce.
    - 2 Bay leaves
    - Sliced mushrooms
    - S&P.

    p.s a dash of red wine into the sauce would be v.nice!

    Topping:

    - 1 Head of cauliflower (Large one)
    - 2 tbsp cream cheese
    - 1 knob butter
    - Pinch nutmeg
    - S & P
    - Grated mature cheddar to sprinkle on top.

    Method:

    Make the braised mince by sautéing the onion & garlic then add the mince and oxo and brown. Add a little water & tomatoes, Worcestershire sauce, seasoning, bay leaves and simmer for about 30 mins until reduced.

    Meanwhile chop the cauli head into florets and boil until squishy and a bit overcooked (about 25 mins) and drain well. Return to the pan and add the cream cheese, butter & seasoning and mash thoroughly.

    Pour the mince into an ovenproof lasagne-type dish and carefully spoon over the cauli mix. Top with the grated cheddar and bake at 200 degrees celcius (390 F) for about 20 mins.

    ** If you do not like lamb, sub it for Beef (Mince/ground) and beef stock.

    Just made flax seed pancakes for the first time. The recipe only made 3 very small pancakes. I added a little cinnamon and splenda to the recipe. I am STUFFED! This is my first experience with flax seed so I am anxious to see how it effects my GI. Only 1 net carb/371 calories in the pancakes and 1 net carb/30 calories in the sugar free syrup. So, 301 calories, 2 net carbs and 1 full belly!

    Plan on making homemade Alfredo sauce for chicken and broccoli for lunch! It is so easy and takes very little time to make, if you have leftover chicken in your fridge too. Nothing but butter, heavy cream, garlic, and Italian blend cheese. Sometimes I may add some cream cheese if I have some. I tried the jarred Alfredo sauce and it was gross! There is about 2 carbs in the sauce so the broccoli has the most.

    Making a low carb ice-cream today.

    400ml unsweetened almond milk (0.8g)
    3 medium egg yolks (1.3g)
    30g vanilla protein powder (0.5g)

    Total 2.6g for about a pint of ice-cream

    blended all up together, put in the freezer, break up the ice formed every 30 mins run a stick blender through it when it is most of the way there.

    B- boiled eggs, deli meat, slice of cheese (kind of a mess was in a rush lol)
    L- Left over cauliflower pizza topped with sausage mushroom and pepperoni
    D-Shrimp alfredo made with shrimp, shiritaki noodles and Bertoli jarred alfredo sauce(only 2g for 1/4 cup!) and maybe some green beans mixed in :D

    B: 3eggs (only ate approx 2 of them though) with ground turkey and salsa verde, coffee

    L: paleo cream of mushroom soup ( I used 2 of those Styrofoam little boxes of mushrooms, one of white button mushrooms and one of baby bellas. I started with about 1.5 sliced leeks in 2tbsp ghee, cooked until soft and added the shrooms. Cooked that about 8min (once the mushrooms started giving off water) and then added 2cups bone broth, 2 tbsp dried parsley, 1tsp ground thyme (rosemary would be good too but I didnt have any), salt and pepper to taste. Cooked 5-8min until the mushrooms were softened and then blended with my immersion blender (not all the way since I like some chunks), added 3/4 can of coconut milk and simmered on low for 10 min. I was worried it would taste like coconut but it really doesn't)

    D: london broil, zucchini and summer squash sauteed with onions, coleslaw
