I really love the MIMs and have made several varieties, both sweet and savory. Today I made "sliced bread" for the first time. I put a little oregano, basil and sage. It came out great and I enjoyed a tuna fish sandwich for lunch today. And btw, my bread said ziploc, lol.0

Hi all . . . first time posting, but I've been following for a while. I tried this variation of the OP recipe:
I increased the flax meal to 1/3 cup
added 2 T no sugar added applesauce and 1/3 cup of diced apples
sprinkled some Splenda brown sugar/sugar mix on top before I nuked it
It almost tasted as good as my mom's apple struedle (almost)

I used these to make French Toast this weekend. I baked a standard MiM, popped it out of the mug (sprayed it first with coconut oil cooking spray) let it cool for a minute and then sliced it into three slices. I made a dip using egg, cream and cinnamon. Dunked the sliced MiM and let it soak for a few seconds and then cooked on a hot griddle. A bit more dense than regular French toast, but very yummy.0

Low carb bread pudding tonight. 1/2 One Minute Muffin from http://healthylivinghowto.com, (she uses almond flour and flax) with cinnamon and splenda. Diced into cubes, add 1 oz half and half, microwave about 20 seconds if need be to warm the half and half. Stir the cubes around in the half and half and top with some sugar free maple syrup. Yummmm.0

Just wanted to say thanks for these recipes. I was having a really hard time eating bacon and eggs--even just eggs in the morning! These are perfect. I'm just eating the plain for now but will get into the others soon.0

Thank you, thank you for posting the MIM recipe. I tried it cooked in the bottom of a small round pyrex storage container so that it would be about the size of a hamburger bun. I took about 1 1/2 minutes. I CAN'T WAIT TO TURN IT INTO A HAMBURGER BUN! I used 1.5 T of almond flour and 1.5 T of flaxseed meal and 2 t of butter, and a good pinch of salt. I also added a little dried dill. along with the egg It wasn't dry as some had said and I even made it last night and kept it in the fridge and put it in the wave this morning for a few seconds. So Good!0

Made the chocolate recipe in my waffle iron came out great just leave in a little longer to get it crispy. Put sugar free syrup & butter on it very good!0
