My ankle is starting to feel better, so I'm hoping to get in some cardio this weekend.
Strength: 60/60 done
Cardio: 60/100
Calories: Under for the week so far. St. Patty's Day celebration tomorrow, so hopefully, I won't have too much fun!0 -
Totally forgot about the challenge. I didn't make anything this week, but one of my favorite recipes that uses a substitute is pumpkin-carrot muffins (or bars).
Ingredients:
1 Box of Carrot Cake mix
1 can of pureed pumpkin
1 cup water
Optional:
Cinnamon
Raisins
Walnuts
I typically will only add the cinnamon, because I have a picky family.
Mix all ingredients together. Bake per the instructions on the box.
You can make a light philly cream cheese frosting for them too.

Hey folks! Finally saw the last episode. Something was up with my comcast tv for a few days, and I didn't want to accidentally see any spoilers. In any case, now I'm here. I'll definitely be fine with my strength, cardio, and calories this week. I am working on the punishment today. It looks like fun! ^_^

I have been so busy I hardly had time to log food let alone look at the forums. I don't have any recipe short cuts. I truly dislike cooking. But I have done my workouts and stuck below my cals for each day. Hope everyone is having a great week0

Don't really have an easy recipe to share this week, but since there was a recent TWD episode where we found out that baby Judith was being fed acorns, here is a website on how to process and use acorns in food. The acorn coffee does sound tempting. http://www.wikihow.com/Use-Acorns-for-Food0

Healthy no bake chocolate BUTTONS
SERVINGS
24-28 chocolate buttons
6 tablespoons milk
4 tablespoons cocoa powder
2⁄3 cup honey
2 teaspoons vanilla extract
2⁄3 cup crunchy peanut butter
1 1⁄4 cups quick oatmeal
1⁄4 cup oat bran
1⁄4 cup wheat germ
1⁄4 cup ground flax seeds
DIRECTIONS
1) Combine milk, cocoa powder and honey in medium sized pot.
2) Slowly warm over medium heat until well combined and smooth.
3) Remove from heat, stir in peanut butter and stir until peanut butter has melted, add vanilla.
4) Stir in oats and grains.
5) immediately drop onto cookie pan lined with wax or parchment paper.
6) chill until set.

I was lame the past two weeks and missed check-in -- am I still in or did I get eaten?!? My kidney stone is gone, so I will actually feel like a human this week and not a walker! Let me know -- I'll probably do the challenge regardless, just want to count for my team if I can!!0

There's no other suggestions, so this week's punishment is Bring Sally Up. If you haven't done it, it's painful, but the view is excellent. It was a big hit last time and many people chose to be punished several times, even the MVPs and winning team members.

I did 60 minutes of cardio yesterday and have a 90 minute yoga class tonight. I'm thinking I'll take the bambino for a stroll around the neighborhood too -- so that'll count for something. I'm back!0
