I USED FRESH GINGER AND ESCALLIONS IN A SOUP.
I ALWAYS USE FRESH ESCALLIONS FOR A LOT OF MY SALADS LIKE COUSCOUS SALAD AND POTATO SALAD BUT NEVER IN SOMETHING WARM. THIS WAS ACTUALLY VERY NICE. ALSO MAY HAVE OVERDONE THE GINGER BUT IT WAS STILL GOOD AND THE WHOLE FAMILY ENJOYED IT. A LITTLE LESS GINGER NEXT TIME1 -
Hello fellow Smashers, I am so sorry I have been absent this week. I have been nursing a very sick 18 month old all week. My Sammy has hand mouth and foot disease and has been out of daycare which is why I haven't been able to go to the gym. I did the challenge videos and a couple of youtube walking videos here at home when the baby napped but not much. I wish I could have helped more with miles this week but the baby has been very clingy and unable to eat or drink much of anything so its just been too hard. He seems better in himself today and the sun is finally out (rain all week) so we may go out for a nice long walk and finally get some much needed fresh air. I will do my best to get a few more minutes before then end of the week but i will not be able to max out this week.2

Hi all.
I just did the videos in the hotel bathroom while my family was sleeping. I should max out on minutes today.

Today is Friday !!! I will go to work then it's FINALLY supposed to dry out so I will get out for a MUCH NEEDED RUN !! I might take tomorrow off (another wet one) ,then on Sunday we are planning on getting out for a nice long walk/hike. PLUS I will get another run in .

Sounds like we have several on the team having a rough week. I hope it gets a little better for everyone.
I've completed two challenges and will finish the 3rd today. I'm really tired and a little sore from yesterday. Still have the darn sore throat too. Probably take it pretty easy today. I'm still on track to max out this week.0 -
I won't be able to get many minutes today, but will try to catch up this weekend. I will be in New Orleans on a business trip next Tuesday through Friday, and may not be able to log much, but I'll try to get in as many minutes as possible.

Challenge 3
I used ginger. Tried making some tea with it yesterday and I didn't use enough ginger because it barely tasted like anything. Tried again today with more ginger and let it steep longer and I liked it. It wasn't as easy as just dropping a tea bag in, but I'll probably do it again. I liked the little zing the ginger had to it.0 -

Ginger was the spice chosen.
My cousin came to Florida and she drank ginger tea every morning. I asked her to make me a cup and just as I expected it was awful. I'm not a ginger fan, I've tried ginger in my smoothies and always hate them but it was an easy way to get this challenge in. I don't plan on trying ginger by choice ever ever again.

I haven't kept up on my logging as much as I wanted to while on this trip. I've had healthy and not so healthy days. Let me tell you these theme parks do not make healthy choices an accessible option. It's annoying when all you want is healthy food so you don't have greasy food dragging you down while you're on your feet all day. The healthiest I could get was a grilled chicken sandwiches. All I wanted was a giant bowl of fruit!
I'm loving this weather though, I've missed running outdoors so much!2 -

Hey Smashers, sorry I've been MIA this week! I feel like a crazy person trying to catch up at work after being gone for four days. Finally got back to the gym and running towards the end of the week and it feels so good. Today I ran a 5K with my sister and even ran to the race location so I could get more miles in (was totally not looking to PR so I was okay being tired starting out the race).
Did challenge video #2 as well. Very enjoyable. I think I will do it again tomorrow to get a few more minutes in. I'm also making a stew for dinner tomorrow and plan to add thyme to it for challenge #3. Sorry for putting it off until the last minute but I WILL get it done!

Challenge # 3 - Spice Dat Up Mon
I choose ginger as my spice and I tried it 2 different ways.
I made grilled sesame ginger salmon that was ahhhmazing!! I will definitely make this one again and it was super easy to make.
I also had ginger lemon green tea. My stomach was upset the other day and a friend suggested I try it. It really did help.my upset stomach. It was ok tasting. Maybe if it was a little sweeter it would be better. I think I'll add honey next time.2 -

Saturday - 112
I got a good workout in at the gym yesterday morning. Ugh, looking forward to not having to use this gym! It was okay the first day, but has gotten more annoying. There's literally one tiny mirror, and yes I'm a mirror watcher when I work out. Watching my muscles motivates me IDK, the equipment is just so limited it makes me crazy. On top of my morning workout we did a good amount of swimming yesterday and walked to and from the arcade before dinner.
We're leaving Orlando and heading to Tampa today to visit my husbands cousin for a few days. Then back to Lakeland to see some friends we have out here. I think we're all ready to be home. We miss our beds and fur babies!
I have no clue how many minutes I'm at, but I'm sure I'll end up with more minutes today. No gym though, time to pack!3 -
Challenge # 3 - Spice Dat Up Mon
For challenge 3 I had ginger tea, sorrel and saltfish this week. These use ginger and scotch bonnet pepper.
Sorrel is a drink popular in thr Caribbean aroubd Christmas time but I love it so make it year round . It is made from the petals of a type of hibiscus flower and spiced with ginger, cinnamon and cloves.
Saltfish is a popular Sunday breakfast in the Caribbean. It's made from salted cod fish, tomatoes, onions, garlic and scotch bonnet pepper.2 -

I chose thyme for my spice.
I found a simple beef stew recipe a couple weeks ago (no other spices than salt and pepper), so I decided to add thyme. I put it on the beef while browning it and then added more to the gravy as it was cooking in the crockpot. GREAT flavor and definitely something I would make again! Even my very picky boys liked it1
