Ughh! I don't know what the heck is going on with my body. It's frustrating. Next week the kids and I are going to spend the week with my parents and grandma. My mom is diabetic and struggling with her sugars which sucks but she's been eating a lot healthier (than she did when I was a kid) and so hopefully I won't come back with a gain next weigh in. We move into June tomorrow, right? Hope everyone is doing good!1 -

I feel silly for asking, but what are the big white slices in the front of the picture?
@brandi_84 That is eggplant! I had salted them so the water would be drawn out. I cut them in to smaller pieces afterwards
Here is the whole thing after it was baked! Added a little parmesan and it was delicious!

I need a start over. I'm up to 169. I'm joining an online fitness class and paying for it. I feel like this will help me get back on track. I don't want to gain everything back. Sorry for the past 2 months team. I have been super stressed and I have turned to food for comfort and haven't been logging much. This post feels like a dear diary entry ... lol.0

What is in it:
Green pepper
Red pepper
Green beans
Eggplant
Onion
Baby potatoes
Summer squash
Zucchini
~5tbsp olive oil
4 italian sausage links cut and cooked
Salt&pepper
Paprika
Chopped basil
A little dried cilantro
Parsley fresh herb paste
I spread all of it out into a cookie sheet covered in foil, baked 15 minutes at 400, flip and bake another 15 minutes. Honestly it should have been 4 servings, but my boyfriend had about 2/3 of it, and I had the remaining third. There is still a ton of prepped veggies to make at least 4 sheets... so, at least 4 days, but ideally 6-8 meals worth of food!.1 -
