Food inspiration, or what's for supper?

I forgot we were going to see my cousins tonight. We were going to do dinner at home, but neither of us were hungry. (I a ton of fruit today, and beans at bith breakfast and lunch. So filling!). We didn't get to cousin's early enough for dinner anyway. Instead I skipped dinner and opted for ice cream and wine. Hit my calories and feeling great.3

lauriekallis wrote: »going to try that boiling garlic with the ??? trick. Sounds exciting! Do you really get some garlic flavour?
Nah, it didn't give any real flavour to the potatoes, though the garlic was obviously way milder and could be eaten by itself (similar to oven roaster garlic). Was just trying to use up some. I have/had an open jar of pre-pealed garlic that has been a little bit too long in the fridge and is starting to go.... so looking for things that can make use of it!
Now look up skordalia (reduce the oil or you're sunk in terms of calories!) :chortle chortle:1 -
eeek ... not actually over maintenance calories as of yet... but the food quality
I think I've maybe got a single bunny in there!
coffee, pitted prunes (the lone real bunny!), a couple of cliff bars, 4 cans of coke zero and a vanilla cone took me to 6pm.
Large Tim's Chili with everything bagel and two butters for dinner... AND then I was handed a Little Ceasar's peperoni pizza!
Half the pizza was 310g when I got home an hour ago... so I've eaten a total of 410g/950 Cal out of the original ~620g/1435 Cal.3 -
Tonight was b/s chicken thighs with a homemade greek spice blend, grilled, and butter and shallot sauteed hreen beans.
Tomorrow, steak and a big side salad... Iceburg lettuce and baby spring mix, english cucumber, roma tomato (end of the week veg) and greek yogurt ranch or light balsamic, not sure yet.4 -
@PAV8888 disappointed that boiling garlic cloves with the potatoes didn't add much flavour - so simply and low calorie! But wow - skordalia looks pretty wonderful. Going to try that soon. Some days my fat is low (not mine personally ) so I can make a good excuse for some moderate skordalia! (like how I excused the pizza yesterday and the chocolate cream pie lined up for this afternoon). Sunday will be a bit leaner of a day. Promise. That was quite the "feast" you had yesterday!3

Laurie, if you chop that garlic and brown it in 1 tsp of oil, you'll only add 45 calories to your potatoes but they will be delicious and garlicky.
Tonight Martha Stewart came to the rescue again. I had the Marley Spoon steak au poivre with caramelized carrots and spinach salad, very tasty, 660 kcal. Martha and MFP are a guy's best friends.4 -
Tonight will be spaghetti with a roasted red pepper sauce, chicken italian sausage, and roasted asparagus. I will have that for a couple days. May need to have broccoli instead of asparagus tomorrow night because I got a small bundle from the Farmer's Market.3

oh, on the above, you can do that and save some chump change by using non stick and spray. I've switched to avocado spray instead of olive oil due to the higher burn temperature. For me the benefit of the spray is that it spreads and coats more evenly.3

Chicken Katsu Curry - none of it homemade! Too hot to bother with that today!
Had busy evenings making cakes for others!2 -
What to make what to make what to make. On one hand I want to make something using the Frozen beat spirals. On the other I went to make some green beans with tomato sauce. Not sure I want to do a steak today... Maybe some of the frozen pacific white shrimp? Hmmmm .....2
-
For lunch we went to Bonefish Grill and had fresh baked bread dipped in warm olive oil and pesto....I had Imperial Cod with crab and shrimp stuffing (480c. ) with fresh broccoli and a few bites of Jasmine rice....it was all excellent....so for dinner we had a Paul Newman pizza with lots of extra vegetables on top of it....I am stuffed....all I get tonight is some popcorn!...and tomorrow I need to swim a few extra laps!....but I did ok!6

DANG! Got your suggestion right *AFTER* dinner! Considering it for... tomorrow!
The GOOD: nice, warm, plentiful, satisfying, (could have used some more heat, but not too bad), and oodles of bunnies (a bunny being 85g of fruits and veggies, there's more than 6 in the one dish once you consider the pasta sauce) --beet pasta with tomato shrimp sauce--
And the START of the day wasn't bad, right? I mean there's another two bunnies right there and then! And some protein too (though kiwi did NOT work well with the cherry yogurt)!
So, I know better, right? I mean I know where the refrigerated puddings are located AND I have dried prunes at the outside edge of the goodies drawer, right?
NO BUNNIES THERE! Even if they call themselves (lemon) "blueberry" soft cookies, and (merci dark chocolate with) "orange"!
Oh well. Calories are still not above maintenance. Protein is good. Fiber is good! And hopefully walkies by end of day will be more than enough for some more ZNACKS considering I've been home most of the day so far!

roasted white beans confuses me! Are we talking cannoli beans or something?!?!?2

I spent the day at my cousin's today while the husbands went out fireworks shopping. She and I relaxed on the couch and snacked (more than I intended), but when I added up my calories for the day, I was less than 100 over maintenance. Not bad for snacking - I had some....restraint? And self-control? Who am I???
Tomorrow I'll experiment with my eggless breakfast options, maybe make some overnight oats for the week, and grill up the tuna for supper.5 -
Tuna steaks are so lo cal and tasty and filling. Now if only tuna would behave and accumulate less mercury so I could eat them even more often!!!😹3

--beet pasta with tomato shrimp sauce--
Bought some of those beet spirals and they are just sitting in my freezer, waiting. I'm so hoping that they are as wonderful as they seem in my mind that I'm afraid to try them If I do, and they aren't so great, there is just no more hope, and there will be no more beet spiral pasta dinner fantasies.

Oh, no, too much pressure (and they were on sale tonight too at under $3)
You could do half and half. Put half a bag in the nuker per directions. Cook one portion pasta and drain. Combine in bowl. Prepare sauce. Poor bowl contents in sauce pan to warm up, coat, and finish all at same time. Return to bowl to eat!

I will probably skip the pasta - because - I just haven't been eating pasta in quite a while - but i remember you mentioned feta cheese? That sounds pretty fantastic.
Tomorrow! I'll try them tomorrow.
Hmmm...don't have a nuker either (I'm kinda low tech it seems) so I'll just put them out in a pan on the roof and that oughta take care of it tomorrow!2 -
Today's experiment in eggless breakfast was delicious! I did my usual avocado toast, topped with smoked tempeh bacon (a big fan of this!), and "Just Egg" - a mung-bean protein non-egg egg. It was all really good. Expensive enough I'm not going to use this stuff every day, but options I will definitely use and include going forward!3

I had a plain untoasted blueberry English muffin for breakfast !...dinner will be lean burgers and a huge salad with feta cheese.....I am sooooo creative lol......2
-
Breakfast? around noon... lean cuisine cannelloni and lots of coffee so far!
On the stove... 121g onion, 21g garlic, 9g so far avocado oil, 340g red and white baby potatoes, 500g green beans, 800g crushed tomatoes, water, 10g Knorr veggie stock... who knows how it will end... but tasty so far
Tried Laurie's cook on the roof-top idea... would have worked a couple of days ago; but not quite warm enough today!2 -
Hmm.... chicken sausage package and the left over beets from yesterday thrown in turning my 'stuff' into a single pot meal... I tend to like these for some reason!
Dang sodium! Sigh... should go to no sodium tomatoes and cut it off with the knorr cubes

Chilli con carne & rice tonight - made by me, firmly in control of the added spices!2

“What's wrong with added spices?!?!? 😇
I can’t do much heat!! 🤯

There once were a couple of friends eating Greek style calamari at a university residence. Oh, so well spiced with salt and pepper!
Shared some with a roommate. Who reciprocated the next day by making for them his own version of squid.
He was from Sri Lanka!🌶️🌶️🌶️ 😹
The beginning, or the end?!?!😂4 -
I had just a big helping of peanut butter yogurt dip and an apple for lunch. We did seared tuna steaks with supper on a spring greens salad, with a side of farro and lentils. We had some smores oreos (smoreos?) for dessert. And, I hit my crazy sat fat target for today!
I also made an eggless frittata to test out for breakfasts this week, using tofu and chickpea flour. I don't love it, but I'm willing to try a few more recipes and see if it gets better. I'll also do overnight oats a few days too.3
