I'm no doctor, but the literature appears to show that changing things up is good—it keeps your body guessing as a type of hormetic stress (stress that is good for you). From that perspective, you might get some benefit from changing one day to the next. However, if you're trying to keep insulin levels down, I'd say you should aim for at least 12 hours of fasting on the off days.1
