It has been a quiet day in here - I hope you're all doing well. I had a quiet day too. Got to hang out with my daughter, then had a wild cooking session to make two versions of Pad Thai for dinner with a lime-mango pie for dessert. Much food was had by all! It was my son's birthday a few days ago, and he requested this festival of deliciousness for today's celebration. Luckily there were a few people to attack the ridiculous pile of dishes, pots, and pans! I can't believe he is now 27...

Honestly, I thought it would be worse. I ate like crap this past week, plus I'm bloating from TOM. I really need to get back to plan. I aimed for a perfect day yesterday, which almost happened, and today is looking iffy with a work lunch meeting. Tomorrow, I am going to pre track and maybe make my lunch tonight instead of in the morning.5 -

I binged a little bit this past weekend with the hubby, but did my best to keep it in check. 75 hard(ish) started yesterday, so I know the next several weeks will be better (assuming I stick to the plan).3 -

We have been evacuated from our home since Friday due to fire. Our house is still there and things are improving. It was very close to us according to the thermal maps but looks much better today. We got rain today thanks to the tropical storms on the west coast of the US. We have lots of fire lines bulldozed in and our property is already well situated for fire prior to this. We are at my husband's aunts house which is huge. We are all comfortable and all the pets fit. My youngest thinks were on vacation and the older kids are hanging in there. My daughter is struggling as she has about 4 classmates who lost their homes.

@conleywoods stay safe!! what a scary thing to be dealing with, and to know so many people who have already lost their homes! I cannot imagine. Hoping more rains come your way (and to all the other places currently ablaze )
busy week for me at work, but I am really pleased with the vegetable forward dinner I made today, after 40 minutes of dance cardio. I was inspired by eggplant parmesan, ratatouille, and caponata so I made a dish that was 1 layer of sliced potatoes with eggplant, italian pepper, squash, zucchini, shallot, and garlic sauteed with my favorite red sauce all on top, and then a bit of parmesan cheese and fresh basil when it came out. delicious! felt healthy.
I am having some weird sleep patterns so hoping I get a good nights rest today, although it is already quite late and I still have to shower.3 -

What a lovely evening I just had - there is a river gorge near here that has built a nighttime lights and stories trail called Foresta Lumina. We all went this evening, and it was beautiful - the landscape there is already spectacular, but in the dark with the projections, it is really magical. I had been once before, but they keep making it better. It is about an hour of walking and is quite hilly in parts, so we got some good exercise while we were at it. On top of the lights in the forest, the stars were out in a crystal clear sky. My daughter loves going there, and I'm glad she talked us all into it.

I am having a very busy week at work, I was still online at about 10pm today, but I am finally getting some things done. Super proud of myself for getting some house chores done after I logged off and then doing a 17 min booty workout as well! I need to get a good stretch session in tomorrow, both because of the workout today and the fact that I will be hopping in the car to drive 5+ hours after work tomorrow to visit a friend in Pennsylvania for the weekend. super excited to meet her 6 month old daughter for the first time too.
And, that veggie dish I made reheats great in the microwave - an attribute I look for in all recipes as someone who always cooks for 1!1 -
