    @micaroo4 I'm doing terrible with the junk food. I had kind of gave up on everything and started eating everything.

    Such a crazy day! I wanted to make an exercise area in my office, so I was going to take down my mirror and move it - that's where it started. I took down the mirror, patched up and painted, but we painted like 5 years ago so it wasn't matching and ended up moving everything to paint the whole wall. With everything moved, I decided to reconfigure my layout and get even MORE workout space! (And better natural lighting for my zoom calls 😉)

    All this to say - I didn't get to tabbouleh today so I'll have the recipe tomorrow.

    Here's some before and afters!
    The workout area isn't finished, waiting on a purchase (last photo) to arrive so I know how high to hang the mirror that the bench/step/thing can tuck under neatly.

    @micaroo4 I've been doing the same watching added sugars as well as things sweetened with sugar substitutes, and it has made such a difference. Glad to see its doing the same for you! Good work cutting down, I think its one of the harder (food related) addictions to quit.

    @vegan4lyfe2012 ah, my tea choices! That’s a rabbit hole :) I have a slight obsession and usually have 40-70 varieties in the tea cupboard.

    At the moment I’m going for one that’s easy on the gut with high caffeine. It’s called Gyokuro Yamashiro and is a Japanese green. Super delicate, and my favourite green.

    I had a good week at work, meds seem to have kicked in and I’m doing pretty well but being extremely careful with diet.

    I have 25 pounds of tomatoes to process today. Made a lot of sauce last weekend so maybe going to try salsa, pick de gallo and soup today.

    I'm not doing well on the no junk food. Plan on working towards getting my act together over the weekend and be fully back on track Monday.

    @micaroo4 I'm so glad the challenge is going great for you! I can tell a big difference in cravings too when I abstain from sugar and simple carbs. I'm off the wagon until Monday as Sunday's my Dad's birthday and we're going to the Old Spaghetti Factory followed by cake and ice cream but I feel lousy from all the carbs so I'm going to eat a healthy dinner tonight. Keep up the great work!

    Hi friends, this place has been hoppin! I got one prescription straightened out, I'm not getting much sleep and am hoping that will change real soon. I don't feel too hot after eating bread and ice cream so I'm eating a healthy dinner and lunch tomorrow then will enjoy my Dad's birthday. I'm making my marijuana tea (it simmers for 45 minutes) and am having mad flashbacks to living in the UC Santa Cruz dorms right now, lol. Going to try a little stretching tonight, I'm super stiff and need to move a little without hurting myself. Have a great Saturday night and Sunday!

    Hey y'all,

    It's been a busy last couple of days. So tonight, I decided to go out for mexican (my favorite) I tried to stay on my plan, but it didn't work out that well. I didn't bomb it as bad as I could have though. Tomorrow, I'll be right back on track.

    I never got to make my bagels yesterday, so that is one of the things I'm planning on doing tomorrow. I cleaned out my spice cabinet and I now have some of my oils and vinegars still laying out. Tomorrow, my main goal is to clean out the pantry and get all my vinegars and oils in one spot so I don't have to be looking for them all over the place anymore, lol.... I'm really trying to be organized.

    Way to go Slims--on the amazing results for Week 1!

    Did a 5 mile hike this morning with the dog and husband. Then came home and promptly took a nap, lol. It's been a quiet semi-rainy Sunday, hope yours is going well.

    @micaroo4 : Way to turn it around, Mica! Love me some Chai, tho--it would be hard not to partake.

    @DrewsAnna : Nice job on getting out the clutter and getting organized. I cleaned out the spice rack a few months ago and found 3 bottles of thyme. The weird thing is neither of us remember buying or cooking anything with thyme. :D

    @DrewsAnna I think organizing your kitchen is a great idea, it makes cooking and shopping so much more time efficient and fun.

    @micaroo4 Oh yum I think having a better quality version of something you love every once and awhile is worth it and more satisfying. I'm glad it was something you enjoyed! I did that with pumpkin spice latte/cold brews last week, yum.

    @trooworld Hahaha I have a bad bunion too, I had to laugh at your shoe talk because I get it. San Diego zoo can be really exhausting, I went there right after my pelvic nerves were burned and was so exhausted! It IS great exercise though!

    I got four hours of sleep in a row, yay! I have a little relief from the steroids thank goodness. Getting the cans out for tomorrow morning wore me out but still it's promising even to feel 1% better. I did some stretching this morning then did some massage on my feet which hurt but felt good as they've been locked clenched under most the time. My Dad's 81 today, my Mom went out of town the week of his birthday with her friends and sisters so my brother's family and I are having his birthday dinner and cake (she told him she didn't care if he went out without her which probably hurt his feelings but kids, grandkids, and grandpets will cheer him up). I feel kind of bad for him, she's been ditching him a lot. I'd better get the garden squared away, I'm harvesting a bunch of rosemary and mint to make some hair products with and still need to finish the mint. Have a great Sunday night and here we come Monday, all of us getting back to it grab hands and virtually run into the ocean waves tomorrow!

    Woohoo! I needed a boost this morning. Yesterday was a bit of a mess, and the scale shows it. I didn't stick to my 8 hour window and had some poor food choices. For the most part they weren't even enjoyable poor choices, more or less just made out of convenience. BUT I did end doing my roast chicken with tzatziki and tabbouleh for dinner so I have my recipe!

    Quinoa Tabbouleh
    This makes enough for 1 person (more or less, depending on how much you eat), just multiply by as many people as you need to feed x
    • 30g quinoa (uncooked weight)
    • 50g roma tomato, chopped
    • 10g fresh parsley, finely chopped (more or less to your preference)
    • 1tsp fresh lemon juice
    • 1tsp extra virgin olive oil
    • salt to taste

    Cook the quinoa in water with a tiny sprinkle of salt, and allow to cool before mixing with all other ingredients. Can be prepared early and stored in the fridge if needed. Also with the parsley, I chop the whole sprig, stems and all. If you're doing just the leaves, I would likely reduce the weight by around half.
