I think boredom has definitely been creeping up, so excellent idea! I don't really care for any of the grocery store meat substitutes (and I'm really not looking to eat super processed foods anyway), so my diet is full of beans and nuts and veggies...it gets old. I love, love, love to cook, so recipes are always welcome!

I like scrambled eggs with green peppers, asparagus, mushrooms and cheese. Apples dipped in crunchy peanut butter. Smoothies (my favorite uses Greek yogurt, honey, spinach, strawberries, and a banana). I also love Greek yogurt with honey, chia seeds, and chopped up fruit.

You definitely can! I was lactose intolerant until I was about 3, then I was good for most of my life. About 5 years ago, it started to bother me again. It's mostly drinking milk that causes the issue for me (easy fix, stopped drinking dairy milk). Once in awhile, yogurt or cheese will cause some unwanted side effects, but…

I'm new to the vegetarian game, but I've learned that beans, nuts and dairy will play a huge part! Soy products seem to have a lot of protein as well (if you plan on eating them).
