I love roasting veggies. I'll toss asparagus in olive oil and then roast them at 450 with rosemary and sometimes a dash of salt and pepper. Also, grilling veggies is delicious. I love to cut up a sweet potato, some peppers, some zucchini, and a few others and stick 'em on my George Foreman (no grill at my place). Excited…

Tati, the idea was to stock up yesterday and start today, but you can do it however you'd like! Today, I'm having 1 1/2 cups of carrots for lunch and I'm going to make 1 cup of fajita veggies with my burritos this evening. Yum.

Yesterday was good--I drank my 8 glasses of water. Success! Today I want to commit to planning out my meals for next week! I might start Whole30 on Saturday, but I'm not sure... anyway, the thing I'm committing to is planning out my meals for next week.

I'm really excited! Day 0: I need 2 1/2 cups of veggies every day. I'm sorta bad at eating veggies... so I'd like to use this as a chance to diversify my veggie intake and learn to love some new great stuff.
