Once in a while I do pizza pitas... put sauce, lowfat cheese, turkey pepperoni in a half of a pita and shove them in the oven until they are crispy and the cheese melts. My teens love these....

By the way... I'm not bashing the LCHF diets... my friend lost a bunch of weight on it. It's different for everyone and it just didn't work out for me.

I am insulin resistant and the low carb/high fat diet didn't work for me, it made me feel ill and my sugar actually stayed high for a while on it. You can always cook something big on your day off... I do it sometimes on a Sunday. Soup's good... chicken noodle soup is easy to make. Then freeze it for the week.
