  • Wednesday's dinner, simple salmon and asparagus. My typical brekkie sam + coffee + fruit combo. Dinner last night. Kale, quinoa, hardboiled egg, beets, cherry tomatoes, and feta cheese with a squirt of lemon. The drink is diet cranberry juice mixed with beet juice.
  • Salt, pepper and paprika all over, then toss it skin side down in a hot pan with a little butter. Wait until the skin side is crispy, then flip and cook a little on the other side. Finish off with a little squirt of lemon on the plate! So good!

  • I go by the package and measure it dry. I think 1/2 a cup of dry oats is 180 cals and that’s a single serving, so two cups of cooked (=one cup dry) is just twice that.
