Fantastic, well done you! You've had a lot on your plate, give yourself some credit and definitely take this slow. I think your main aim should be to nurture yourself and get yourself healthy, in body and mind. Coincidentally (or not) healthier food will help you drop some pounds too. This year I want to learn more about macros (so far my only focus was calories) and I want to get rid of my sugar cravings - I reckon those two items are related anyway, but need to do more reading up on this. Oh and those last 5lbs will be gone, I don't care if it's slow.

Moooorning! Happy New Year to you all! I'm back in work today (meh) and Covid is the highest it has been here in Ireland, so no great start. Roll on the vaccinations...! I've indulgenced big time over Christmas, but feeling happy to pick up normal eating routine again and thankfully no gains, which is a first.

Urgh I'm so over this Monday already, still 3 hours to go in work but just cannot be bothered. Good news is that I'm finishing up for 2 weeks this Friday, bad news is that I'm still awaiting some very much overdue online shopping that's to be delivered here in work. Roast potatoes - quarter them, boil for 5 mins max, tiny bit of oil and seasoning and then 20 mins in the air fryer Halloumi - cut in fingersize strips, dips in egg and then seasoned breadcrumbs and then 8 mins in the fryer Chicken breast strips - same as the halloumi Kale chips - my teen's favourite, haven't tried myself…

We only added an air fryer a few monthys ago (Ninja) and I have to say, it's brilliant. We love our roast dinners in the weekend, and where roast potatoes took over an hour, they're done in 20 minutes now and beautifully crispy. It's not a need to have, but once you do....
