Rice, roasted corn, shredded chicken breast, and pinto beans I cooked in homemade stock with a ham hock. The goop is an avocado, plain Greek yogurt, lime juice and garlic. And pickled jalapeños.

I got my boyfriend sick so I made apology soup lol. Udon noodles, with chicken, carrots, mushrooms, spinach, garlic, ginger and green onions. I had some chili oil on mine. All the good stuff is hidden under the noodles 😅

Tofu and chicken fried rice with mushrooms, edamae and napa, with sweet and sour fried tofu, and soup dumplings. The tofu is air fried so it's not as bad as it could be lol

Savory oatmeal. Steel cut oats, cooked in beef broth with mushrooms and a shallot. Added chicken sausages and asparagus and parmesan cheese. It's more or less risotto with higher base protein and fiber.

My "health goop" brunch. Unsweetened Greek yogurt, chocolate chia seed pudding, Special K, an apple, and melted peanut butter. I'm trying to get more protein in while also maintaining large volume/fiber heavy meals and low red meat. It's a struggle lol.

One pot no oil fried rice with tofu, mushrooms, napa cabbage and broccoli. Had it with shrimp, pork and cabbage dumplings and leftover gochujang green beans.

Miso and seaweed soup, air fried tofu nuggies, and no-oil fried rice with tofu, mushrooms and broccoli. I made it in my rice cooker and it was so easy.

Not my prettiest effort lol. Salmon with home madd bacon jam, bagged salad and corn. It got a "damn babe" from the boyfriend so I'm happy lol.

I went slightly feral the last month lmao. But I'm back on track now. Mushrooms and brussels and shrimp with garlic butter. The salad is romaine, broccoli, and than smashed chickpea salad. Getting ready for my first hike in New Jersey tomorrow :)

Gnocchi with brown butter and sage, and chicken sausage. Never had gnocchi before but these were great.

St Pats dinner, a day late. We had the waffle iron out so I used that to fry my leftover mashed potatoes.

Awful photo so forgive me lol. I moved from Arkansas to New Jersey last week, and I've been taking advantage of all the fantastic Asian grocers up here. Garlic eggplant, seaweed salad, and very spicy tteokbokki and fried tofu.

This thing turned out to be a monster lol. It has... roasted chicken, brussel sprouts and sweet potato 'croutons', on spinach, broccoli, carrot, pepper jack cheese, a boiled egg, olives and probably some other stuff I'm forgetting.

The boyfriend and I did a hot pot at home. We had a mushroom base, and a fish one. Can't lie, I went hard on the crab and spicy little sausages lol.

Vegan peanut stew. It's sweet potatoes, chickpeas, peanuts and spinach, in a spicy sauce. Threw in tofu because I had it lol.

Vegan shepherds pie. The filling is lentils, mushrooms, carrots and peas. Really really nice... I'll be making something like this at home. But there will be normal dairy in the mash lmao

This is kinda silly, but I've wanted this sweater for YEARS. I decided once I could fit into a large, I'd order it. I fit! It'll fit a little better in a few pounds, and it'll be cute-oversized once I'm at my goal weight. Now to spend the rest of my life explaining to Americans what Vegemite is lol

😬 I eat very little red meat. But about twice I year, I get the need. Steak, fried onions, garlic and butter green beans, honey poached carrots and mash. This is my holiday dinner for the year, so I'm not going to worry about how much butter was used lol.
