Tofu is GREAT in stir-fry...just make sure you press it beforehand! http://vegetarian.about.com/od/newfoodssubstitutions/ht/presstofu.htm those are some directions ... Tofu is also delicious marinated and grilled, along with lots of other things...go to happyherbivore.com and vegweb.com for lots of splendid tofu recipes....

A new use: I mashed up half an avocado, a little lemon/lime juice, salt/pepper/spice...and added a dollop of plain greek yogurt. After mixing it all up, I was presented with the most creamy, delicious avocado spread/guac in recent memory.

I just tried this...used some leftover quinoa, two roma tomatoes, a wedge of laughing cow light original swiss and some chalula hot sauce....DELICIOUS. it was GREAT.

maybe draining the cottage cheese beforehand would help? then it wouldn't be watery when you put it on and it might melt better? tastes good in enchiladas, i'd try it with pizza

Betcha didn't know black beans could be brownies..... And these are DELICIOUS! Go to happyherbivore.com/recipes and click on Black Bean Brownies :) Happy Herbivore has about a gazillion chickpea/black bean based recipes that are low-cal and no fat! It's a great site.

- whole wheat mini bagels....with 2 tbsp of hummus they're less than 200 cals :) - cereal--like special k or multigrain cheerios - string/stick cheese - bars of any type...mmm!

The low-carb meals are all full of meat.... but the veggie plate does look promising! (Yum, fried okra ;) ) Thanks for your help...hopefully mother's day will work out fine.

It's not really a basic food, but I discovered Healthy Life bread this week...I usually never buy white bread, but this was only 35 cals and 8 carbs per slice! With lots of protein and fiber....couldn't resist. And it tastes good too. Now I can feel great about my pb&j :)
