I use diced chicken, red grapes, celery, onion, low fat diced cheese , bow tie low carb pasta , then I use low fat mayo or greek yogurt with garlic powder, pepper and lemon juice then at the end I add walnuts for crunch !

My favorite is. Cucumbers - diced Regular mixed lettuce kalamata olives grape tomatoes mini mozzerella pearles (balls) and lite balsamic vinigrette dressing. Simple and delicious.

Blend the frozen bananas and then top with small amount of chopped nuts and lite choc syrup. Just like ice cream. its delicious.

I take the chicken breasts and cut them into chicken finger strips. Then dunk them into egg substitute and then roll them in crushed up French Onion sun chips. Then bake them in the oven. Like 350 for 20-25 min until they are 165 degrees. YOu can choose whatever flavor of the sunchips you like the best.

I tend to work really odd early hours s well. I love making lettuce wraps. So I take the lettuce and put down my cheese, lunchmeat, tomatoes, onion, and w/e else i want and wrap it up in the lettuce...
