Greek yogurt would be delicious, I imagine, but it would be a very different kind of food... the tofu is what makes it set, and has no real flavor of its own, so takes on the other flavors more than I'd think tangy Greek yogurt would.

I love a cold quinoa salad with basil, goat cheese, walnuts, and dried cranberries, with grilled chicken. Add whatever vegetables you have/like and dress it with balsamic and spices. There are some great quinoa salad recipes out there. I also love to make it like I'd make pasta -- with tomato sauce and cheese! Delicious.

See if they have "fresh" or "summer" rolls -- like egg rolls, kind of, but wrapped in clear rice paper rather than fried. Absolutely delicious as an appetizer. Grate one cucumber into a cup of fat free Greek yogurt, and chop up some garlic and mint. Add a little lemon juice, salt, pepper. Delicious!

Thanks everyone for your ideas! And for all those of you telling me to eat them... well, considering I'm asking for recipes, clearly I'm planning to eat them in some form!
