One of my favorite things is Hellmans Parmesan chicken. I think tonight I'm going to substitute greek yogurt for the mayonnaise. Hopefully it turns out ok.

I've been making this one almost daily lately. 1 cup of coconut water 1/2 cup greek yogurt 1 cup of spinach 1 cup of frozen mixed berries 2 kiwis 1 tbsp of chia gel I split that between myself, and my 2 boys. They LOVE smoothies.

I eat healthily all day. Then have some sort of single serve dessert. For breakfast I have either a smoothie, or a high fiber cereal. I ended up sautéing some onion, and peppers in olive oil, and garlic. Then once they were nice, and browned I added the zucchini noodles. After about 5 minutes they were done, and delicious.

I just had Wendy's for dinner tonight. I got a 1/2 size apple pecan chicken salad (hold the blue cheese), a 4 piece nugget, and a value fries. My dinner came out to 600 calories. It was so good too.

I love the Fiber 1 80 calorie honey squares. I totally eat 2 servings. That's 1 1/2 cups for 160 calories. It keeps me nice, and full until lunch.

When I went on a cruise they had an omelette bar with some veggie choices. That would probably make a good breakfast. I'm not sure what semi healthy choices they would have for lunch though.

My husband cracked open a fresh coconut today. I just melted 1 tbsp of chocolate chips to dip it in. It was like a healthy mounds bar.

I made a butternut squash cake. It was pretty good. A little too sweet next time I would lower the amount of sugar I use.

It also works great in meatloaves, and burgers. The spinach basically turns into a powder. I bet I could add it to zucchini bread too. Now the wheels in my brain are spinning with new ideas.
