Eat what you want. Some days I wake up hungry and I do eat a pretty large breakfast, then downsize it for lunch and dinner. Most days I just have coffee and don't eat until lunch because I personally prefer large dinners. In the end, it's about whatever works for you.

When I was 216 (and I'm 5'7 also), my BMR was ~1750. I'm guessing 2500 is your TDEE not your BMR. Weight loss isn't linear, it comes and goes, and as you weigh less, 2lbs a week is harder to achieve. 1lb is more realistic and honestly less stressful (in my opinion). The main thing for me is if the food I eat is really greasy, it shows up on my face. I'll look like I took a bath in oil. And of course the subsequent acne breakout. Which is enough for me not to eat greasy food in excess.
