Its very good braised, saute, soups, stir fried, roasted, sliced fresh eaten raw, pickled and simply wilted into pasta! :) It can be used as a substitute for nearly any other green in many recipes.

My favorite is a mesclun mix with roquefort crumbled into it, crushed toasted walnuts and fresh strawberries with a sherry vinaigrette and fresh sliced shallots. I do like Francl27 salad, with goat cheese and smoked salmon always an awesome combo :)

They have not used Rendered Lard in some time but they do chemically inject it with a beef solution, it however is not fried in lard the chemically flavored / colored modern fry is to give it the taste it used to have.

what are you sweating your vegetables? unless your also making clarified ( ghee ) you cannot saute with butter its burning point is very low, in which case your not saute your steaming and do not need oil/butter for that anyways.. O.o
