Lavender Lemon Chicken

I made this with chicken breasts, and cut down some of the amounts because 1 - I was cooking 4 pieces of chicken not 8 and 2 - there was a lot of oil and honey in the original - so, my way, you marinade 4 breasts in - 2tbs runny honey, 1tbs of olive oil, 1tbs dried lavender flowers, 2 sprigs of thyme, 2tbs bottled lemon juice. marinate for 30mins-4hrs (I did mine from 10 this morning to around 5:30 because I gave them an early start). Then bung in a roasting tin with the marinade on 180 (that's centigrade :P) cook for around 30mins, basting once with the marinade.

I served it with new potatoes and broccoli - came out at roughly 508 calories for one portion. Obvs you can leave out the oil, use turkey etc, but I usually only have light breakfast and lunch, and have a slightly higher calorie dinner.

It was incredibly flavorful and juicy, perfect if you've gotten bored of chicken in other recipes.
