Neither cardio nor weight lifting is going to help you lose weight. A calorie deficit does that. Lifting while in a deficit helps your body resist its impulse to eat its own muscle instead of fat, however.

I don't know that I think it's true that gyros meat is just lamb. I mean, I think that the stuff you get from a restaurant is often a big processed hunk of meat that's largely lamb but also some other stuff mixed together. Maybe I'm wrong about that.

If anything I'd look into adding some bodyweight resistance training like a Convict Conditioning program, or you'll lose some muscle tone along with the flab you're trying to shred. Aside from that, keep doing what you're doing for aerobic activity and handle the rest in the kitchen.

No. Priority of fuel usage doesn't mean a thing in a consistent deficit. Adequate protein and protein-sparing stimulus do, but splitting hairs between different types of carbs is pointless if you are maintaining a consistent moderate deficit.
