I'm in the uk and I love the light mini baby bels. They are 40cals per 20g serving, and eat them as they are or you could grate one (or 2!) for pizza. I love to eat mine with a teaspoon of peanut butter on top!

I just boil up my cauliflower for 10-15 mins, drain the water away and mash it. I divide it into 100g portions and freeze, and take it out as needed.
