Well my father is currently suffering from liver failure, and in need of a transplant. The diet they have him on now is very interesting, but beneficial to his liver. He isn't eating meat anymore, but is eating plenty of soy protein (things like Boca burgers, tofu, tempeh). He's also stopped eating any type of wheat…

I *LOVE* pork rinds! There are tons of varieties too, if you have a problem with just plain. Some have 1 carb per half oz, but sometimes it's so worth it! I LOVE Quest Bars! I eat them any chance I can afford them. I heat mine in the microwave for 25 - 30 seconds (dental problems), and they become super soft and gooey like a big piece of cake. :) So wonderful!

Kiwi or Asian pears! It's sad that they're (pears) so carb-y, I could eat 3 of them in one day. Veggie-wise, I like buying bags of crinkle cut carrots and steaming them fresh. Makes them super sweet, almost dessert-like!
