Tomato Soup with Orzo and Basil
I made this for lunch this week and it's delicious! It kind of tastes like adult Spaghetti-O's. :-) I used a can of diced tomatoes - no salt added - instead of fresh and it was fine. Hello! I switched up my diet this week in an attempt to eat healthier. I eat around 1400 calories based on the Mayo Clinic book (4 servings of veggies, 3 fruits, 4 carbs, 3 protein/dairy, 3 healthy fats).
